Phandemic Cover Photo Cred: Nicole Price from 12/30/18 Words from Dawn Jenkins re: Eyes Of The World Nature Immersion:"In 2019, I took the next step in my journey and career of spreading my passion for educating children outdoors by starting Eyes Of The World Nature Immersion. In 1998 I graduated college with my degree in Elementary Education and stated that some day I will open a school named Eyes Of The World.  For over 20 years I have been integrating nature into every aspect of my interactions with children. Founding Eyes Of The World Discovery Center gifted me 7 years of hands on work with preschoolers in the forest as well expanding my network of colleagues, professional development trainings, building/maintaining a beautiful outdoor classroom and most importantly instilling a deep rooted love for the outdoors for so many children and families. Being recognized as Conservationist of the Year by the Kittery Land Trust was an amazing honor and so validating of my work.Eyes Of The World Nature Immersion, LLC is fully insured through Eastern Insurance and offers preschool & elementary school outdoor nature programs as well as teacher trainings, school consulting, outdoor classroom development & EOTWNI curriculum integration.  I have been told by many, "If you build it they will come". We're so grateful for your ideas & enthusiastic energy, Dawn! Thanks for sharing your voice and your stories! Dawn has plenty of ideas to keep your kids engaged during the pandemic and beyond. She has generously offered her contact info if you're seeking ideas/inspiration for homeschooling, homesteading, artwork, mask-making, gardening, etc. You can find her at: info@eotwni.com, on Instagram, or through her FB group. Also! Check out Dawn’s Phemale Centrics podcast. Congrats to her 2-yr podcast anniversary; cheers to 52 awesome episodes!

Slowly warm olive oil in the pan. Add chopped onion, sauté for a few minutes until the onion begins to soften. Add garlic and continue to sauté till mixture is fragrant.Add the diced bell pepper, sauté for 5-7 minutes over medium until softened.Add tomatoes and tomato paste to pan, stir until blended. Add spices and sugar, stir, and allow mixture to simmer over medium heat for 5-7 minutes until it starts to reduce. At this point, you can taste the mixture and spice it according to your preferences. Add salt and pepper to taste, more sugar for a sweeter sauce, or more cayenne pepper for a spicier shakshuka (be careful with the cayenne... it is extremely spicy!).Crack the eggs, one at a time, directly over the tomato mixture, making sure to space them evenly over the sauce. I usually place 5 eggs around the outer edge and 1 in the center. The eggs will cook "over easy" style on top of the tomato sauce.Cover the pan. Allow mixture to simmer for 10-15 minutes, or until the eggs are cooked and the sauce has slightly reduced. Keep an eye on the skillet to make sure that the sauce doesn't reduce too much, which can lead to burning. Some people prefer their shakshuka eggs more runny. If this is your preference, let the sauce reduce for a few minutes before cracking the eggs on top-- then, cover the pan and cook the eggs to taste. Garnish with the chopped parsley, if desired.
