About Simone: Simone Miller first set foot on the culinary scene two decades ago but her passion for extraordinary food stems back to early childhood, where she began to learn from one of the best kitchens in America – her mother’s.  Miller pursued her passion and began to fine tune her skills working in top New York and Connecticut area-restaurants.  In 2007, Miller relocated to San Francisco, where she continued to develop her distinct style and build her career as a personal chef while simultaneously launching a catering company (Zenbelly).  Upon the success of Zenbelly, Miller soon developed a reputation as an elite gourmet chef. After having battled with a variety of health problems following the launch of Zenbelly, Miller discovered she had food allergies, specifically a very serious sensitivity to gluten. Ethically, Miller would not serve food – without first being a test subject-  and at that point, Zenbelly transformed into one of the most respected gluten-free, paleo-style catering company in the Bay Area.  Miller’s mission was simple: to offer healthy alternatives without sacrifice to quality and flavor.  Miller diligently worked on adapting her gourmet recipes and much to her delight – she found great success and her palate-pleasing recipes soon impressed the most discriminating of tastes. Miller also augmented her website offering chef’s perspective to paleo recipes on her blog. There, she shares her grain-free recipes that have made believers out of some of the most die-hard gluten eaters, and has encouraged countless people to roll up their sleeves and have fun creating simple, delicious, healthy food. I can’t thank these two enough for joining me on the show, and I’m excited for you guys to hear all about their stories in this awesome new collaboration. Welcome to the show, ladies! 1. Introducing our guests, Simone Miller and Jennifer Robbins [1:10] Simone Miller: Thanks for having us! Jennifer Robbins: Thank you! Cassy Joy: Oh my gosh, so much fun. I’ve been looking forward to it all morning. {laughs} Jennifer Robbins: Us too. Cassy Joy: Oh good! And we finally sorted out our technical difficulties so I feel like we’re ready to take on the world. Simone Miller: Absolutely. Cassy Joy: Totally. So I know each of you have your own story and journey that’s lead you to paleo, because I stalked you thoroughly before the call {laughs}. I’ve read all the details, so if you leave anything out, don’t worry I can fill it in. Everybody: {laughs} Cassy Joy: But to start off, I would love if you would share a little bit about your story with today’s listeners. Simone Miller: Sure. Well, this is Simone, and my story really began in food more than in the health side of things, and I’ve just been in the food business a really long time, cooking in kitchens since I was in college, and always sort of resisted cooking for a living, mostly because my family is in the food business and always told me how hard it was. {laughs} Mostly my uncle; “never go into the food business,” he said, and of course I’m such a good listener. Cassy Joy: {laughs} Simone Miller: So I resisted it but always loved it, and worked in restaurants. Long story short, once I wound up out in California after moving here from the East Coast, I wanted to get back into food, but I didn’t want to work in a restaurant anymore. So I started doing personal chefing, and that turned into catering, and basically as soon as I said; ok, this is it, I’m doing it, I’m starting a catering business, I got a food allergy test done to try to get to the bottom of my ongoing sort of chronic health issues, and found out that I was allergic to gluten, among a bunch of other sensitivities. That sort of threw a wrench in things, because it’s really hard to cater a party without gluten; or, at least it was at the time.

We hadn’t met before, and I was like, who is this hilarious beautiful woman that is just {laughs} and we had the best time. I didn’t want lunch to end. Amy Densmore: Yeah, that was so much fun. So much fun. I do remember that, yes. That was our first time for meeting! That was quite the lunch. I think everyone around us was not as impressed. Cassy Joy: {laughs} Amy Densmore: Because we were just; everybody at that table was just laughing the entire time, we were having so much fun. Cassy Joy: We were, I remember. I remember what Mary ordered; we were all ordering food, and Mary ordered herself a scotch {laughs} Amy Densmore: She did. She said she was going to fast, and I thought; oh, she’s not going to have anything. But she had a scotch, and I said, I like this chick. She’s cool. Cassy Joy: Exactly! Simone Shifnadel is a self-taught chef in the food industry. She has seventeen years working in the food industry. She is an executive chef and founder of Zenbelly catering. In 2007 she moved to San Francisco, California. Once in the bay area she worked as a personal chef and later started Zenbelly Catering. Simone will release her new book titled "The Zenbelly Cookbook" in August 2014.The zenbelly cookbook bridges the gap between Paleo template and gourmet cuisine.
