About Evan Schiff: https://www.francisfordcoppolawinery.com Evan Schiff was born in Northern California, yet raised in the Southern California community of Orange County by his wine-savvy parents who were members of several prestigious wine clubs. After overhearing his parents’ casual conversations about wine, he decided to make his own special bottle of juice at the ripe old age of 7 years old. With a plastic jug, a few grape juices, soda and strawberries, he managed to ferment his first medley. Much to his surprise the lid shot off the bottle and left a huge mess to clean up before his parents could notice. One could say this early determination was foreshadowing for his flourishing wine career. Schiff’s fascination and determination to be part of the wine industry never faltered. As he puts it, “Winemaking has many facets: economics, history, science, engineering, personality, agriculture -- and it’s quite astounding.” With that philosophy in mind, he moved back to Northern California in 1997 to attend the University of California, Davis, known as having one of the best winemaking and viticulture programs in the nation. In 2005, Schiff started his winemaking career in Napa Valley with the Coppola family. He started as a laboratory technician at what was then called Niebaum-Coppola Winery (what would become known in later years as Rubicon Estate, followed by the current name Inglenook). Just a few months into his role, he was presented with the opportunity to visit the Argentine winemaking province of Mendoza to participate in the harvest season at the reputable and award-winning Dominio del Plata Winery. Working alongside renowned winemaker Susana Balbo on her signature wines as well as the winery’s popular Crios brand, Schiff gained valuable insight into the inner workings and craftsmanship of fine wines. It was there that he met and fell in love with Argentine local Virginia, who would eventually become his wife after a three-year, long-distance relationship. Upon returning to the Coppola family’s winemaking business, he was promoted to enologist of Rubicon Estate where he spearheaded winemaking efforts for some of the company’s sizable brands. In 2006, during Schiff’s time as enologist, winery owner Francis Ford Coppola started his eponymous Sonoma County winery in Geyserville, providing a distinct home for some of the popular, flourishing brands, such as Diamond Collection and Rosso & Bianco. As Francis Ford Coppola Winery continued to evolve and expand efforts in Sonoma County, Schiff was promoted and relocated to Geyserville to become associate winemaker, where he continues to oversee daily winemaking, crush facilities and wine business operations, focusing primarily on the winery’s red wines of the Diamond Collection. His expertise working with more than 200 grape growers in eight counties throughout California provides him with a well-rounded perspective for creating distinct wines showcasing a variety of diverse appellations. When asked about his proudest accomplishment, he says, “The team’s success story of the Diamond Collection Claret. There’s so much that goes into it. Everyone has a role and everyone is invested at every level. That blend is the flagship and it’s a model of the classic Coppola story.” Schiff lives in Sonoma County with his wife Virginia and their son. I’m rooted firmly in my hometown of Nashville, TN, and in my opinion, this is the best city on earth. 10 years ago, I couldn’t have dreamed that those sentences might apply to me. Food had always been a joyous, comforting and steadfast part of my life. My mother is a fabulous cook and I grew up with family dinner over cozy from-scratch meals. In my NYC loneliness, cooking felt like the perfect way to fill the void. On a tight budget and surrounded by gorgeous farmers’ markets, I started making vegetables the main attraction in my meals. Proteins and healthy fats were essential elements, but they often took the form of beans, whole grains, nuts and seeds. Over time, I began to notice my emotional and physical health improving. I had more energy, a clearer head, and my anxiety had reduced dramatically. Though I wasn’t (and am not) vegetarian, I was fascinated by the far-reaching, holistic benefits of plant-based food. After an article on the event appeared in Sports Illustrated in the spring of 1979, the number of entries ballooned up to 108 in 1980, which would be the last year the event was held on Oahu. Dave Scott was an unknown that day in February of 1980, but after ABC’s Wide World of Sports showcased Dave’s journey around the island of Oahu where he led the entire day and broke the existing course record by nearly two hours, that changed pretty quickly. In many sports, the winners from the early years quickly become yesterday’s news as faster athletes bypass the trailblazers. Not Dave Scott. He was the Roger Bannister of triathlon. Over the next 16 years he won five more Ironman World Championship titles, became the first athlete to go under 3:00 hours for the Ironman marathon, then the first to go under 2:55 and the first to go under 2:50. He was also the first person to go under 10 hours, 9 hours and 8:30 in Kona. Dave continued to push the limits of what the human body could do at the Ironman when he and Mark Allen, on October 14, 1989, had a race for the ages where they were never more than a few feet apart from each other for over 138 miles. That race is known simply as IRONWAR, a term I coined after having the privilege of watching Dave Scott and Mark Allen simply destroy Dave’s course record, which he’d set in 1986. Dave went 8:10:13 that day and broke his course record by over 18 minutes. He ran a 2:41:03 marathon, which was over eight minutes faster that his run course record. Mark Allen earned his first Ironman victory the hard way: He beat Dave Scott on the greatest day Dave ever had on the Big Island. Then, after taking five years off from Ironman because of injuries and attending to the needs of his new family, Dave Scott changed perceptions again by coming back in 1994 at the age of 40 and finished second overall. Two years later, at the age of 42, he added to his legacy by posting a 2:45:20 marathon and running himself into an amazing fifth place overall. Over a span of 16 years and ten Hawaii Ironman races, he won six times, placed second on three occasions and—at the age of 42—crossed the line in fifth place. Dave Scott’s personal triathlon journey paralleled the early history of the Ironman Triathlon. His accomplishments on the Big Island of Hawaii led to Dave Scott becoming the very first inductee into the Ironman Triathlon Hall of Fame. About Tiffany: I’m a former Chemist (with a degree in Biology) in my mid 30’s. I live in Northern Utah with my husband, Justin and our three spunky kids. I think it’s pretty obvious that I love food, (yeah, I created an entire blog, Whole Fork, dedicated to it). I spent most of my career running around the globe teaching people how to use portable Mass Spectrometry to analyze all sorts of chemicals. It was fun, and the travel was amazing (hello Cairo, Moscow, Warsaw and more), but my true passion is food and more importantly health. And maybe even more important than that, what motivates us to eat what we eat. I spent most of my life not really worrying about what I ate. I was a really active kid and played any sport I could fit in my schedule. Food had very little effect on my body. I ate when I was hungry, and that basically summed it up. That is until I hit college. I won’t lie, I was still pretty fit in college, but my diet was terrible. A lot of fast food, anything I could eat on the go, and many late night burrito runs with my roommates. Like most college freshman I gained a little weight which made me feel self-conscious. Since my early 20’s my weight and health have fluctuated due to stress, school, marriage, pregnancy etc. Finally, I decided I was going to shed any of those extra pounds once and for all, and feel comfortable taking my kids to the swimming pool. I spent that first summer counting calories, eating fat-free Frankin’ foods, processed stuff that came in boxes, bars, and shakes that came in powder form. And, I spent hours riding my bike. I tracked macros, points, calories in, calories burned, weighed and measured all my food, and I was a slave to the scale. It was exhausting. I was hungry, cranky, tired and I had a lot of headaches. Worst of all, my body wasn’t really changing. While surfing the interwebs and Instagram I kept coming across clean eating. It made sense to me to eat foods that come from nature…fresh vegetables, fruit, meat, nuts, seeds, whole grains and healthy oils. At first I thought it sounded crazy restrictive and I couldn’t imagine losing weight while welcoming healthy fats. I was a child of the 80’s raised on skim milk, margarine and fat free cottage cheese. Eating an entire avocado was a completely foreign idea that seemed scary. But, people kept posting their results, and I couldn’t ignore them. So I did my homework, read several books and scientific articles and I couldn’t argue the research. The science is solid, and it’s exactly what I learned in all my human biology classes while studying in college. So I decided to jump in, face first, by going 30 days without any processed foods. Seriously none. Not even a bite, or a lick. The results were nothing short of life changing. No, really, life changing. My results: I lost 6 lbs, headaches gone, stiff joints gone, asthma and seasonal allergies gone. My skin completely cleared up, skin tone evened out, redness gone, and I started to have a healthy glow. My energy shot through the roof. I no longer had the 3pm drag and I stopped taking naps on the weekends. I fell asleep faster and slept throughout the night. My tastes had changed, and sugar no longer had a hold on me. And all my digestive issues (bloating, cramping, constipation) all completely went away. Since our initial dive into clean eating we still try to find that balance between eating mostly all whole food meals, while allowing for a few treats every now and then. I feel like I’m in better shape and have a younger body than when I was in high school. My love of food has made it fun to create tasty and exciting dishes, so my family doesn’t feel deprived while still eating wholesome meals.
