If you are concerned about food shortages and supply chain issues, if you have an overabundant harvest in the garden, or if you just want to lock in your food costs at today's prices or take advantage of a great sale, you will want to take some steps toward preserving your bounty. You could can or freeze your surplus, but sometimes space is an issue, and freezing isn't the best option in the event of power outages resulting from rolling blackouts, hurricanes, or snow storms. Dehydration is an excellent alternative that preserves the harvest, saves space, and generally lasts longer than many of the other options.
