Good Morning Shelbyville - by Jeremy Provost 1.5 oz Uncle Nearest 1884 Small Batch Whiskey .75 oz Coffee Liqueur, Jeremy recommends St. George’s NOLA. .75 oz Demerara syrup (equal parts Demerara sugar & water) 1.0 oz Espresso Coffee Shake well, if you have a basket strainer you can double strain (or just use a typical hawthorne strainer) into a martini or cocktail glass. It's another Uncle Nearest Happy Hour, this week we invited LA Chef Moses Ponce to show us how to make Uncle Nearest maple glazed donuts. You do not want to miss this... yum! To see the video version of this show, visit the Uncle Nearest facebook page. ____________________________________________________ Recipe: Uncle Nearest 1856 Maple Glazed Doughnuts Ingredients: 2 Cups Powdered Sugar 1 Cup Maple Syrup 2 Tsp Uncle Nearest 1 Pinch of Salt 1 Biscuit Tube (any brand will do) 1 Gallon of Canola or Vegetable oil 3/4 Cup Flour Equipment: 1 Lrg Pot 1 cooling rack or cookie sheet 1 kitchen tongs or butter knife 1 Thermometer (if you don't have one that's fine) 2 Medium Sized Bowls Measuring Spoons/Cups Whisk Procedure: 1. Fill the pot up to 3/4 of the way and set the flame to medium heat you want the oil between 340-350 Fahrenheit. If you don't have a thermometer don't worry, to test the oil simply cut a piece of the dough off and gently place it in the oil, if it starts to fry and the color changes to a dark brown color to quick your oil is too hot, if your oil is smoking your oil is too hot, you want the dough to nicely fry turning golden brown with some bubbles on the side. 2. While the Oil is getting hot, In a medium sized bowl add the 2 cups of powdered sugar, 1 cup of maple syrup, 2 tsp of uncle nearest, and a pinch of salt. Mix it with a whisk until the sugar has dissolved and all the ingredients are combined 3. Remove the dough from the tube and lay them on a cutting board, gently press them down and form a doughnut hole in the center of the dough and lay them on a floured surface, its important to lay them on a floured surface because the dough does get sticky after proofing 4. Let the dough proof for 5 minutes 5. Check the temperature of the oil, if the oil is good to go gently place your dough into the oil, it should float up and begin to fry. While the dough is frying gently baste it with the oil, this will help you reach maximum fluffiness in your doughnut making journey. You're going to fry each side of the doughnut for 1:30 min. 6. Let your doughnuts cool down for about 3-4 min if your doughnuts are too hot the glaze will melt off too quickly 7. Once your doughnuts have cooled down gently grab them and dip the top piece into the Uncle Nearest Maple Glaze and give it a nice twist to evenly coat the doughnut, and place it back on the rack to let the glaze set it just takes a few seconds. 8.
