Du Panama à Paris, en passant par l'Arizona (où Harry...) ; 3 artistes, un solo guitare-voix et un duo accordéon/sax-clarinette, grand choix ! Notre 1ère invitée est Michelle Blades pour Where To ? Artiste aux multiples facettes, Michelle Blades revient avec 'You're The Mother, You're The Man', morceau d'ouverture et premier extrait de son nouvel album Where To? à paraitre l'année prochaine. À la fois intime et universelle, cette chanson compte parmi les plus anciennes du disque. Elle a été écrite en 2018 à Mexico, bien avant que le reste de l'album ne prenne forme en 2023. Née d'un souvenir d'enfance et d'une réflexion sur le rôle de parent solitaire, 'You're The Mother, You're The Man' s'est d'abord imposée comme un mantra poétique adressé à la mère de l'artiste, elle aussi née au Mexique. Musicalement, l'écriture s'est nourrie de deux influences majeures : l'expérimentation des silences comme éléments rythmiques mais aussi l'inspiration de Book of Days de Meredith Monk, dont l'approche vocale et spatiale a profondément marqué Michelle Blades depuis son arrivée en Arizona en 2010. Réinterprétée au moment de l'enregistrement de Where To?, la chanson a pris corps à La Bergerie, dans le sud de la France, au cours de neuf jours d'hiver. Entourée d'Emmanuel Mario (alias Astrobal), Nina Savary, Gaétan Nonchalant et Vincent Guyot, Michelle Blades a enregistré guitare et voix. Gaétan Nonchalant y a ajouté des touches de Rhodes, brisant le caractère répétitif du mantra pour y glisser des éclats de mémoire. Des couches vocales sont ensuite venues s'entrelacer, créant un équilibre subtil entre densité et dépouillement. Le clip, réalisé par Ilan Zerrouki, accompagne ce morceau fondateur. Née au Panama dans une famille de musiciens, Michelle Blades a grandi aux États-Unis avant de développer une esthétique unique, entre expérimentation et sensibilité pop. Après ses débuts DIY en Arizona, elle s'installe à Paris et collabore durant dix ans avec Midnight Special Records, publiant notamment les albums Ataraxia (2015), Premature Love Songs (2017) et Visitor (2019) et l'EP Nombrar las cosas (2020). Exploratrice musicale, elle multiplie aussi les collaborations : bassiste aux côtés de Pomme en tournée, arrangeuse sur le dernier album de Flavien Berger (Plouf!), membre du groupe éphémère La Brume, ou encore chanteuse au sein de La Femme, avec qui elle a parcouru le monde. Pierrot eut vaguement l'impression d'avoir déjà rencontré ce type-là quelque part. » Raymond Queneau, Pierrot, 1942 Face à face intime et interpellant, Vison Visu réunit l'accordéoniste breton Janick Martin, figure d'une génération de musiciens issus des musiques traditionnelles dont ils réécrivent sans cesse les contours et le saxophoniste et clarinettiste Robin Fincker évoluant depuis une vingtaine d'années sur les scènes de jazz contemporain et musiques improvisées européennes. Musiciens avides de mélodies, fascinés par la formule magique qu'elles peuvent contenir, Vison Visu aspire les airs en profondeur, qu'ils soient d'aujourd'hui ou d'un autre âge, et en déjoue les phrasés conventionnels. Jouant de fractures et de mélismes, de danses et d'improvisations, le duo aux timbres sonnants échange avec passion et intensité. Les deux musiciens se sont rencontrés au sein du quintet Finis Terrae du violoncelliste Vincent Courtois avec lequel Robin Fincker collabore depuis de nombreuses années et ont très rapidement noué une complicité évidente. Suite à une invitation du festival de Jazz à Dissay ils ont élaboré un répertoire faisant cohabiter les compositions originales du duo avec des mélodies venues de Bretagne, d'Ecosse ou du pays Cajun. Véritable croisement des langages traditionnels et contemporains, le duo tisse ainsi un récit où le jeu et la spontanéité se nourrissent de ces mélodies simples au fort pouvoir évocateur. Grâce au soutien du producteur de musique contemporaine Marc Thouvenot (fondateur du label Quicatl), du collectif Le Grand Pas et du studio La Buissonne, le duo s'est vu proposer l'opportunité d'enregistrer son répertoire de manière directe et sans artifices. Installés dans la grande salle du studio, les pièces ont été enregistrées sans coupures, d'un seul jet et en quelques prises seulement permettant au duo de laisser libre cours à son goût de l'imprévu et de la recherche sonore. Mixé par Gérard de Haro et masterisé par Nicolas Baillard à la Buissonne, Vison Visu laisse entendre dans sa musique une expression non-linéaire du passage du temps, faite d'allers-retours de cycles et de jeux de mémoires où le plaisir du jeu et de la narration prévaut sur tout plan préétabli. Buttermilk breadrolls 450g bread flour 7g dried yeast 190ml buttermilk 60ml local rapeseed oil 1 heaped tablespoon castor sugar 1/4 teaspoon baking powder Egg yolk for brushing Stir yeast and 35ml of lukewarm water in a large bowl and leave for 10 minutes. Warm the buttermilk to blood temperature gently and add to the yeast mixture with the oil and sugar. Mix in the flour and baking powder to a soft dough and transfer to a floured surface. Knead for 10 minutes and place in a clean bowl rubbed with oil. Cover with cling or a damp tea towel and leave at room temperature for an hour. Knock back and divide dough into 4 equal pieces. Roll into balls and place on baking trays lined with baking paper - don't have them too close together as they'll rise. Leave for 30 minutes. Set oven to 200°c. Brush rolls with egg yolk and then bake for about 20 minutes or until the bottom sounds hollow when tapped. Cook on a wire rack. 500g rump steak 1 tablespoon oil for rubbing Seasalt Freshly ground black pepper 150g mayonnaise 2 teaspoons wholegrain mustard 1 tablespoon finely chopped gherkin 200g raclette slices or thin slices of cheddarRub the oil all over the rump and season with salt. Heat a pan until smoking and seal on both sides for two minutes. Lower the heat and cook to desired temperature. Season with pepper and rest for 5 minutes and slice thinly. Mix the mayonnaise with the mustard and gherkins Split the rolls and spread the mayo on to the surface.Arrange the beef over the top and then cheese. Bake in a 180oc oven until cheese has melted – about 10 minutes. Serve hot.

This segment is titled "How to Make Spanakopita." A Love Letter to Greece's Flakiest PieClose your eyes and imagine this: you're sitting at a tiny marble table in a narrow Plaka alleyway. The sun is warming the back of your neck, a cat is napping lazily at your feet, and someone across the street is playing a bouzouki. Then, the waiter places a plate in front of you. It's golden. It's shattering into a thousand buttery leaves as you look at it. Steam rises from a blanket of spinach and feta, carrying the scent of fresh dill.That, my friends, is spanakopita. And I am about to show you how to capture that exact moment in your own kitchen.Spanakopita literally translates to "spinach pie," but that's like calling the Mona Lisa a painting of a woman. It is the iconic pie of Greece, a dish that bridges the ancient and the modern.Long before phyllo existed, the Greeks were making "pites"—rustic pies filled with wild greens foraged from the hillsides. They called these greens chorta, and they have been a staple of the Greek diet for thousands of years. It was peasant food, yes, but it was also genius: a way to take the earth's free bounty and turn it into a hearty meal.The game-changer came later, during the years of the Ottoman Empire, when the art of stretching dough until it was as thin as a "leaf" (phyllo in Greek) was perfected. When that tissue-thin dough met the ancient filling of greens and cheese, spanakopita as we know it was born. It became the food of celebration, of fasting during Lent (using olive oil instead of butter), and of every family gathering where Yiayia would roll up her sleeves and work her magic.Every Greek grandmother has a secret. Some add a splash of sparkling water to the filling to keep it light. Others swear by a tiny grating of nutmeg—just a whisper—because nutmeg has a bizarre and wonderful ability to make spinach taste more like itself . And then there is the ultimate debate: butter or olive oil for the phyllo? Butter gives you that rich, diner-diner golden crisp. Olive oil gives you a more rustic, savory, and traditional "Lenten" version.But the one rule everyone agrees on? Squeeze your spinach. If you don't wring every drop of water out of the cooked greens, you will end up with a soggy bottom, and in the world of pie, that is the only unforgivable sin. Here is a tested recipe for you to attempt in the privacy of your kitchen.Alright, enough talk. Let's cook. We are going to make a big, glorious, pan-sized spanakopita that feeds a crowd and makes you look like a hero. Don't be scared of the phyllo. It's easier to tame than you think.Part 1: The Green Gold (The Filling)We start with the heart of the dish. Grab your largest skillet and set it over medium heat. Glug in about ¼ cup of good olive oil. Toss in one large chopped onion and let it sweat until it's soft and see-through.Now, the main event. You need two pounds of fresh spinach. Wash it well—spinach is sandy, and nobody wants a gritty pie. Pile it into the pan. It will look like an impossible mountain. Don't panic. Grab your tongs and start turning it. Within minutes, that mountain will collapse into a vibrant, dark green valley of goodness.Here is where you have to be ruthless. Dump the spinach into a colander and press down with a spoon. Press hard. Let it sit and cool while you prepare the rest. The liquid you discard is the only thing standing between you and crispy phyllo glory.In a big bowl, crumble 8 ounces of feta cheese. Use the good stuff—the briny, creamy blocks from Greece. Crack 2 eggs, chop a big handful of fresh dill and parsley, and add a pinch of nutmeg (if you're feeling like a Yiayia). Now, grab that cooled spinach, squeeze it again (yes, again), roughly chop it, and throw it into the bowl. Mix it all up. Taste it.
