Breweries making barrel-aged beer tend to lean heavily on romance. From name-checking the origins of their barrels to weaving stories of long, laborious boils and careful searches for the perfect ingredients, there's no story today's brewers can't embellish. But for Shaun Berns and Phase Three Brewing (https://www.phasethreebrewing.com) in Lake Zurich, Illinois, it's the quality of the end-product—and not the romanticized mysteries of barrel-aged beer production—that matter. In this episode, Berns walks us through their barrel-aged stout process, from base malt through barrel selection. Along the way, he touches on contrarian choices such as using dried malt extract in lieu of long boils, fermenting with dried yeast, weaning off higher finishing gravities, and not overthinking barrel selection. He discusses the challenge of forecasting consumer trends several years out, the benefit of debittered malts such as Carafa Special II, using malted oats more than flaked oats, selecting lighter crystal malts to control the expression of dark fruit flavors, the challenge of scaling when using low-efficiency ingredients, and more. “It's not romantic, it's the truth,” Berns says, while behind the curtain of a market niche full of fancy beers. These stouts don't need fantastic tales to sell. The proof is in the glass. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): Like your flagship beer you can rely on G&D Chillers for the same quality and consistency. Shaun Berns drops by the maltiest AirBnB in Chicago's Ukrainian Village to talk about helicopters, barrel-aged beers, ridiculous burgers, leaving More Brewing, and starting Phase Three Brewing. Feeling lucky to have Shaun Berns and Evan Morris share their huge news on my little podcast. They are finally stepping out on their own. They sent out some cryptic social media the day before recording and then share all the dirty little details with me! Days like this are why I started this podcast in the first place. Can not wait to watch them grow. Website Facebook Instagram Twitter
During FOBAB week I got a chance to do an episode with Bottle Logic while they did a collaboration beer at More Brewing. Well, while doing that, Mike Pallen from Mikerphone happen to walk into the More taproom, so I asked for a minute of his time as well. What happened was an awesome 1 hour conversation between Shaun Berns (More Brewing), Mike Pallen (Mikerphone Brewing), and Brandon Buckner (Bottle Logic Brewing).
On a fateful, beautiful sunny thursday in April, I got the long awaited email from Shaun Berns that he would indeed be up for the podcast that same day. We walked through the brewery then sat down with his assistant Brewer John and GM of More Brewing Evan and had a short 3 hour conversation on everything from beer to food, to mustaches, and winning some pretty impressive Hardware from Stout Fest. They could not have been cooler, and lucky me, they had tapped a Henna varient that day. And they were selling cans of Azzaca DH Dusty. Big win for me! We had a blast, but we also got some honest insight and a little breaking news on expansion and canning for More Brewing! And also we hit 10,000 download today.... AWESOME! And thank you all for listening! More Social Media: Website Facebook Instagram Twitter
