It is rare for Bourbon to age in barrels for more than twenty-three years. But these barrels patiently sat for over thirty years. The extra years developed a distinct and complex character that makes them truly one-of-a kind. We filled those barrels with Bourbon County Brand Stout, and then stored them away in our Chicago Barrel House to age for two more years. We love the fall. The leaves change colors. The temperature gets colder. Stouts and Barleywines appear on the shelves. Autum brings so many wonderful changes. Evil Twin has brewed over a 1000 beers in their NYC brewery. How do we know? They released a beer called Batch No 1000 Brewed in NYC. This is an old ale made with maple syrup. While it's not a stout or a barleywine, it is a 13% ABV big boy. Danish brewers Bad Seed don't show up on shelves in Sweden very often. It's no surprise that Stefan found this in Copenhagen. As a trained food scientist with 20 years of experience in the field, Eric Tennant entered the brewing world with a bit more background than most. And that background has served him well, as he considers both ingredients and processes required to achieve the beer flavors he envisions. Over the past few years, he's focused Benchtop (https://benchtopbrewing.com) around foeder-aged lagers, but the constraints of the small brewery have led to a number of innovative process solutions. The techniques that he applies are making award-winning beer, too—Benchtop just recently took home a silver medal in Zwickelbier or Kellerbier at GABF, and their barrel-aged barleywine, Old Wooden Ship, was one of Craft Beer & Brewing's 20 best beers of 2023. In this episode, Tennant discusses: crafting a hybrid approach to lager that's part Czech, and part German decocting in a brewhouse not designed for it polishing beer through lagering without head pressure in oak foeders increasing IBUs in lager recipes to offset the mellowing effect of foeder aging double batching with different recipes optimized for two different mash processes checking COAs and manipulating mashes to fit the malt protecting foam potential when wood aging brewing barrel-aged English barleywine And more. Alcatraz also has a history of being a prison island long before it became a federal penitentiary. Is Alcatraz Island the site of ghosts, hauntings and the gateway to the spirt world or is it all a legend? With Spooky Season now upon us and the arrival of October looming, it's time to tell a barrel aged ghost story over a barrel aged beer. In this first edition of Barrel Aged Ghost Stories for 2024, we're exploring the Bell Witch. The Bell Witch or also known as the Bell Witch Haunting is a legend from Southern United States folklore, focused on the 19th-century Bell family who lived in northwest Robertson County, Tennessee. Some accounts say the Bell Witch was also clairvoyant who was also capable of crossing long distances with superhuman speed with the ability to Bilocate. According to the story, the Bell Witch wreaked havoc on the Bell Family and on those who crossed her path. It's said to be folklore, but many do believe the Bell Witch Story actually occurred. So let's explore the Bell Witch story here on Brewstilled as we kick off Barrel Aged Ghost Stories for 2024. In today's episode, I had the pleasure of sitting down with Wylie DiaMond, a passionate distiller and recent graduate, to discuss his journey through the world of spirits, including single malt, gin, and whiskey. Wylie shared the exciting news about his company's expansion in their whiskey program, including a new barrel selection initiative that allows consumers to indulge in custom flavor profiles. We also touched on Wylie's impressive background, from salmon fishing in Alaska to completing his captain's license program, as well as his plans for the future and his burgeoning interest in coaching football. Wylie DiaMond is a recent graduate as of May 2024, with a strong interest in distillation. During his education, he interned at a local distillery called the Chemist and pursued a captain's licensing program. Before diving into the distillation world, Wylie worked as a salmon fisherman in Alaska for five years. His journey through the AB Tech brewing, distillation, and fermentation program has been marked by dedication and a passion for the craft. Martin took a little trip to Breda, Netherlands. He was able to collect a few beers while he was there to bring back with him. Breda is a small little down just north of the Belgian boarder and has a suprising number of quality beer bars. The first beer we get to try is from Brouwerij de Manskerel Manskerel Quad Barrel Aged. This barrel aged Belgian quadrupel was aged in rum barrels for 12 months. Sadly, it's really missing the big rum punch we were expecting. Big Belly Brewery Liquid Desserts 30 is a 2 year barrel blend sticky Mexican coffee cake stout with nuts. It's the last in the series for the brewery but not their last beer. Poppels is one of the larger independent breweries in Sweden. They have released some special barrel aged beers. Barrel Aged Barley Wine - Cognac, Rhum and Port is a 13.5% ABV barrel aged monster. It really packs a mouthful of flavor. Rhum Bourbon Rum Stout contains rhum, rum and bourbon. What's the difference between rhum and rum? You'll have to listen to find out.
