Join us on our latest episode where we talk all things Bourbon County. Not about the actual county in Kentucky, but about the glorious liquid produced once a year from Goose Island Brewery in the form of their Bourbon County Brand Stout. In this episode we talk about the upcoming releases from the Bourbon County Brand portfolio and we also revisit a past botte, 2015 Rare. From the Bourbon County website, Back in 1979 the folks at Heaven Hill Distilleries filled a handful of new freshly charred American white oak barrels with some of their finest whiskey. It is rare for Bourbon to age in barrels for more than twenty-three years. But these barrels patiently sat for over thirty years. The extra years developed a distinct and complex character that makes them truly one-of-a kind. We filled those barrels with Bourbon County Brand Stout, and then stored them away in our Chicago Barrel House to age for two more years. With these rare barrels from our friends at Heaven Hill we believe this is one of the finest beers we have ever produced. This is Goose Island Rare Bourbon County Brand Stout for 2015Is 2015 Rare still holding up? it worth it? What are our thoughts on the newest releases coming Black Friday? We love the fall. The leaves change colors. The temperature gets colder. Stouts and Barleywines appear on the shelves. Autum brings so many wonderful changes. Evil Twin has brewed over a 1000 beers in their NYC brewery. How do we know? They released a beer called Batch No 1000 Brewed in NYC. This is an old ale made with maple syrup. While it's not a stout or a barleywine, it is a 13% ABV big boy. Danish brewers Bad Seed don't show up on shelves in Sweden very often. It's no surprise that Stefan found this in Copenhagen. Bourbon Barrel Aged Colossus 2023 is a English barleywine aged in Heaven Hill bourbon barrels. It's keeping us warm for sure. #beer #craftbeer #drinks #barleywine #oldale #barrelaged

As a trained food scientist with 20 years of experience in the field, Eric Tennant entered the brewing world with a bit more background than most. And that background has served him well, as he considers both ingredients and processes required to achieve the beer flavors he envisions. Over the past few years, he's focused Benchtop (https://benchtopbrewing.com) around foeder-aged lagers, but the constraints of the small brewery have led to a number of innovative process solutions. The techniques that he applies are making award-winning beer, too—Benchtop just recently took home a silver medal in Zwickelbier or Kellerbier at GABF, and their barrel-aged barleywine, Old Wooden Ship, was one of Craft Beer & Brewing's 20 best beers of 2023. In this episode, Tennant discusses: crafting a hybrid approach to lager that's part Czech, and part German decocting in a brewhouse not designed for it polishing beer through lagering without head pressure in oak foeders increasing IBUs in lager recipes to offset the mellowing effect of foeder aging double batching with different recipes optimized for two different mash processes checking COAs and manipulating mashes to fit the malt protecting foam potential when wood aging brewing barrel-aged English barleywine And more. Yet, Alcatraz is rumored to be the site of multiple ghost who are said to haunt the island. There are reports of the ghost of former inmates, the presence of spirits, the glowing eyes and more. Alcatraz also has a history of being a prison island long before it became a federal penitentiary. Is Alcatraz Island the site of ghosts, hauntings and the gateway to the spirt world or is it all a legend? I'll be discussing this here on Brewstilled with a Barrel Aged Abbey-style Golden Ale from River North Brewing as the beer pairing. It's all here on Brewstilled. Tune in and get spooked!
It's getting colder now but that doesn't mean we don't want to put away the summer quite yet. We get fruity this episode with two very different types of fruit foward beers. La Calavera Jungle Boogie is a mixed fermented sour ale aged in oak barrels. It's an aggressive sour ale that reminds us of our favorite flemmish ales. Arpus Cherry Red Currant Apricot Vanilla Sour Ale is all those things. Arpus puts out great fruited beers that go more towards the pastry style. It's an intense fruit experience that goes down really smooth. #beer #craftbeer #drinks #fruitbeer #wildale #barrelaged

Send us a textFor this edition of the Brewstilled, it's a return of Barrel Aged Ghost Stories. With Spooky Season now upon us and the arrival of October looming, it's time to tell a barrel aged ghost story over a barrel aged beer. In this first edition of Barrel Aged Ghost Stories for 2024, we're exploring the Bell Witch. The Bell Witch or also known as the Bell Witch Haunting is a legend from Southern United States folklore, focused on the 19th-century Bell family who lived in northwest Robertson County, Tennessee. Some accounts say the Bell Witch was also clairvoyant who was also capable of crossing long distances with superhuman speed with the ability to Bilocate. According to the story, the Bell Witch wreaked havoc on the Bell Family and on those who crossed her path. It's said to be folklore, but many do believe the Bell Witch Story actually occurred. So let's explore the Bell Witch story here on Brewstilled as we kick off Barrel Aged Ghost Stories for 2024. A potent Barrel Aged Barleywine from River North Brewing in Denver Colorado is on tap for the beer pairing.
Learn how Revolution Brewing grew from a small brewery to Illinois' largest independently-owned brewery — and what makes their beer so special. 03:51 Beer Myth: Do all yeasts ferment the same way? Katherine challenges the idea that top fermenting and bottom fermenting yeasts function in the same way. Learn what yeasts actually do and the role they play in the fermentation process. 09:03 Revolution Brewing Interview: David Blackford, Lead Brewer at Revolution Brewing, explains the difference between a head brewer and a lead brewer, reminisces about his first impressions of Revolution Brewing and the first beer he ever got to work on, and discusses the development of signature beers like Eugene Porter and Anti-Hero, his journey from a packaging specialist to lead brewer, and what it was like for the brewery to transition from a small brewery to a large-scale operation, including the use of new technology like centrifuges to increase production capacity. Then, David talks about Revolution's latest favorite, the Cold Time Lager, and explores the growing trend of lighter, less complicated beers making a comeback, emphasizing the appreciation for quality brewing with fewer ingredients. David and Katherine discuss the difficulty (and fun!) of naming beers before Cody jumps in with questions about Revolution's Deep Wood Series of barrel-aged beers, including what inspired Revolution to release such high ABV beers year-round. The discussion also touches on memorable yet discontinued brews, such as the Bottom Up Wit, discussing its unique qualities and why it's no longer a staple despite its popularity. David also clarifies the differences between Wit wheat beers and Hefeweizens, focusing on yeast's role in defining their distinct flavors. 53:56 Beer Behavior: What's up with hop waters? David discusses the intricacies and challenges of making hop water, a non-alcoholic beverage gaining popularity among beer enthusiasts, including insights into their process for creating Super Zero. He discusses the benefits of hop water as a non-alcoholic alternative that allows breweries to showcase their craftsmanship, its role as an excellent palate cleanser at beer festivals like FOBAB, and its versatile suitability for various settings, from work lunches to outdoor activities. 1:00:12 Today's Featured Merchandise: “Drink a Stout” tee (if you can drink coffee, then you can drink a stout!), available in multiple colors! Michael Tonsmeire from Sapwood Cellars joins me this week to talk about very high gravity barrel aged stouts. You can find show notes and additional episodes on my blog here.
Will and Joe Quinlan, brothers and cofounders of The Big Friendly, just make beer. Will loves saison so they make a few saisons every year. Joe loves barrel-aged stout so they make a few of those every year. Their distribution is minuscule so their production is very small, but they do take a meticulous approach to beer making despite their small size. In this episode, the brothers each recount their approach to the beers they make, and in the process they discuss: building mixed fermentation cultures out of separate stock strains resting and conditioning saison using flavor- and aroma-forward New Zealand hops in saison tuning sourdough yeast for beer fermentation barrel-conditioning saison editing malts in barrel-aged stouts And more.
