I wish you and I could have been there, sailing the Straits of Florida toward Cuba, when the idea came to my next guest. An idea that serves a niche, solves a problem, and promotes better living. My next guest tells the origin story of the raddest fast-growing lifestyle beer brand today. Beer is like a tool. And there's the right tool for every job. Sometimes we need a high-gravity Barrel Aged blah-de-blah. And sometimes we need something lighter and more refreshing to get the job done. But, if beer is a tool, doesn't it depend on the knowledge and talent of the user to construct a great experience? Over the past couple of decades barrel aged beers have become increasingly popular among craft beer enthusiasts. From intensely flavourful spirit barrel aged strong stouts, to more nuanced and complex sour and wild ales matured in former wine casks, the range of barrel aged beers is as breathtaking as some of the beers which eventually emerge from the barrels themselves. But as the market has become saturated with these often costly beers, and the post-pandemic, cost of living crisis driven drinker looks towards simpler, less wallet-intensive beverages, what does the future look like for this subgenre within the beer category? Who's actually buying them? And perhaps more importantly: how are breweries making any profit from a project that takes an immense amount of time and space to produce, and is largely driven by passion? For this panel we put together a group of brewers making (in our opinion) some of the best barrel aged beers in the UK: Toby McKenzie of Macclesfield's RedWillow Brewery, Dave McHardy of Fierce Beer in Aberdeen, and Lee Grabham of York's appropriately named Brew York. The trio discuss everything from the processes behind their barrel aged beers, to what they think the future of the market looks like for them.

Jon Shari of Little Cottage, (https://www.littlecottagebrewery.com) just east of Atlanta, was an avoid homebrewer who built a reputation for his big dessert-focused imperial stouts, and built on that momentum to launch the small, taproom-focused brewery in 2021. But brewing for the taproom is still a small affair, with a very manual 3.5 bbl brewhouse that makes some difficult-to-brew beers even harder. In this episode, he discusses the process behind his stouts, from recipe to adjunct ingredient additions, including: dealing with difficult high gravity fermentations selecting flavorful base malts and specialty malts dialing in finishing gravity to accentuate ingredient flavors taking an ingredient-specific approach to additions And more. The diversity of Irish whiskey today is in a new league compared to just 20 years ago when a few big brands dominated the market. One of the things that defines a modern Irish whiskey is the story behind it, and few have as compelling a story as Slane Irish Whiskey. Distilled on the grounds of Slane Castle—a site famous in part for hosting huge outdoor rock concerts since the 1980s—the brand uses water from the mythologically important River Boyne and homegrown grain, prioritizes measurable sustainability practices, and weaves the legacy of its rock-n-roll history into their finished products. We are thrilled to be joined this week by Slane Irish Whiskey co-founder and global brand ambassador Alex Conyngham. We speak with Alex about growing up at Slane Castle, his family's environmental legacy, and what it was like to build a competitive global brand in a competitive spirits marketplace. We also discuss what it means to be truly sustainable in the distilling world, as well as how artisan food and drink producers collaborate to support one another in the Boyne Valley.Dyed Green is a project of Bog & Thunder, whose mission is to highlight the best of Irish food and culture, through food tours, events, and media. Coffee, coconut and caramel macaroons give this a sweet, delicious imperial stout incredible flavor and keep it from being way too sweet. Lervig Off the Rack is their premium stout series and they rarely disappoint. Anchorage Brewing's (https://anchoragebrewing.company) Gabe Fletcher has been turning heads with barleywine since he brewed his first one 24 years ago, but that long-standing respect hasn't dulled his sense of exploration. Today, he's pushing limits with barrel aging by double- and triple-casking beers over long conditioning times. It takes a hardy beer to stand up to that much age, and Fletcher builds his barleywine to last. In this episode, taken from an interview earlier this year for a story in Craft Beer & Brewing Magazine, Fletcher outlines the various problems in brewing high-ABV beers, and shares the creative solutions he's developed. Along the way, he discusses: Fermentation strategy via overpitching and aggressive step-up batching Embracing simple but flavorful malt Using decoction to build flavor in more basic malts Building a high-gravity wort Selecting hops for flavor and not just bitterness Utilizing multi-stage barrel aging for more depth of character Finishing and packaging barleywine for maximum effect And more. For Austin Jevne, cofounder of Forager (https://foragerbrewery.com) and now owner and head brewer of the Humble Forager (https://www.humbleforagerbrewery.com) brand, creative flavors are crux to brewing. While the brewpub that he founded with life and business partner Annie Henderson continues with their mission to provide compelling beer and food for the Rochester, Minnesota community, the Humble Forager brand has set more wide-ranging goals to bring their authentic and grounded approach to flavorful beer to a wider national market. Forager produces beers on a 7bbl system for their local fans. Humble Forager works through 100bbl batches produced at partners like Octopi in Madison, Wisconsin or Fair State Collective in Minneapolis, Minnesota. But a through line that spans all of their production is a focus on real ingredients and real fruit, used in thoughtful and expressive ways, no matter what the style. Whether quick sour, hard seltzer, or stout, the approach is the same—no extracts, high quality ingredients, and a progressive approach to technique to drive the best possible expression from the chosen ingredients. In this episode of the podcast, Jevne discusses their approach to recipes and process, including: Creating real fruit hard seltzers that are shelf stable for up to 18 months Using a three-stage pasteurization process to temper and stabilize fruit in quick sours and hard seltzer Layering fruit flavor with other herbal and tea notes to create flavors that evolve through the sip Searching for the best quality fruits from a variety of sources Finding the best sources for flavorful vanilla Working with high pectic fruits Accounting for expression of acidity in both fruited hard seltzers and quick soured beers Building a library of stout recipes and barrel types to create options when blending Employing an ingredient-by-ingredient method of concentrated infusion to carefully add flavor to stouts Deploying blended methods of coffee infusion using both whole bean and ground coffee for different flavor contributions And more. “A lot of people are assuming that fruited sours have a shelf life similar to hazy IPAs,” says Jevne. “And absolutely they do, from certain breweries. But if you have a process that changes that—we have a shelf life of 18 months with flavor stability in our fruited sours and people look at our shelf life on the bottom of the cans and get a little worried sometimes. But we've done multiple tests about the longevity of where that flavor's stable, and because of that [multi-step pasteurization] process, our beers are great and can sit in the back of your trunk on a hot Texas summer day, and they're not going to explode.” This episode is brought to you by: G&D Chillers (https://gdchillers.com): What if you could chill your beer with a more efficient chiller?
