Hey this is Michael 'Medium Rare' O'Donnell with Cave Tools and in this video we're going to talk about cleaning infrared and rotisserie burners on your grill. Typically the infrared or rotisserie burners are going to be placed towards the back of the grill which tries to prevent the flare ups a little from trickling meat juices that fall down over the heat. Bigger chunks of meat like chicken, beef roast, lamb legs, they're going to get added taste when they're roasted gradually on a rotisserie style burner. When you want to clean the burners the most effective way to do it is just to burn off the excess grease and debris, after you've done grilling, just turn on to high for about 5-10 minutes. Then using a stainless steel wire grill brush or some other way to clean off those grates, make sure they're clean. If you've got a larger mess or some real build up of gunk on those grill grates make sure to mix some water with some lemon juice and spray it on the grill grates. There's also a cool way which we shot another video on, on how to use coffee grinds to clean your grill grates. So that's another good one, so make sure you check it out. You can also go deeper if you wanted to really remove the burner and then use a needle to unblock all the different holes, that's a great way as well for getting a deep clean on your burners. You also want to make sure you clean all the inside walls and elements. Scrub them down. There's normally going to be a residue that builds up. That's just an accumalation of carbon that builds up from the grease and smoke. Not really a big deal, but make sure to clean it with a moist paper towel and get rid of it. Next, you don't want to wait until the next time you grill, or even the next grilling season to clean up your grill. want to make sure that nothing gets a chance to sit there and solidify. So make sure to clean your grill right away. If you guys are interested in a rotisserie grill, I know we've shown a couple of models on this slideshow, but we've actually created our own portable verticle rotisserie grill. I know that's a mouthful! The big thing is that this is a portable grill that you can take tailgating, camping with you and the charcoal try actually flips up vertical so we talked about earlier when the grease drips and you get flare ups, with a vertical rotisserie grill, you don't get any flare ups. It's perfectly cooked food every single time.
Hey this is Michael 'Medium Rare' O'Donnell with Cave Tools and in this video wer're just going to talk a little bit about how to grill with herbs. Grilling with herbs is really a good way to really infuse those flavors into your food. Normally when we grill with herbs we mix it with some different types of wood for smoking the meat as well. You really want to try out various different kinds of herbs as well because each one is going to give a different type of flavor to your food, and it just adds a nice twist, something different. You can grill with herbs whether you're using a charcoal grill or a propane gas grill. So you want to make sure that your grill is clean and that once the charcoal is hot enough, you can toss the herbs right on top of the charcoal or you can put them in a pan on top of some wood if you're smoking on a gas grill. A quick tip is to always make sure that the herbs are wet and that they've been soaked in water. It's just going to help them burn a little bit longer and add a little more flavor to that smoke as it comes up. Then the last tip here is really just don't be afraid to experiment. Mix and match a whole bunch of herbs together and you're going to get a very unique flavor to your food. Hey this is Michael 'Medium Rare' O'Donnell with Cave Tools and in this video we're going to talk about how to clean your grill using coffee grinds. Most people begin their day with a cup of coffee, but rarely do you hear of people actually cleaning their grill with their cup of coffee. It may sound a bit ridiculous but it's actually a very good strategy for getting a nice deep clean on your grill grates. The way it works is that coffee is very acidic and it's great at cleaning away grease and it's actually a very easy process to use when you want to clean your grill grates. All you need to do is just prepare your coffee like you normally would and then you put your grill grates into a basin with that coffee and let it sit for about 45 minutes to an hour. Go over and scrub the grill grates with a little warm water and you're done. You get an incredibly deep clean of the grill grates with coffee. It's a little more intense and a little more time consuming than a normal clean when you would use a stainless steel grill brush, but that's the technique. If you're interested in the quick and easy way then definitely use a stainless steel grill brush. Hey this is Michael 'Medium Rare' O'Donnell and toay we're going to talk about an important topic and that is how to prevent flare ups from happening while you're grilling. Flare ups can be just absolutely dreadful, and they happen when the oils and fats from your food, drip on to the heat source which ultimately burns your food and just ruins the taste. One of the great ways to prevent flare ups is using the two-zone cooking method. This is especially important if you're cooking on a charcoal grill, move all the charcoal to one side, that way you hae one side with direct heat and another side with indirect heat. That way you can put the food over the indirect heat so that when the grease drops you're not heating the charcoals and causing flare ups. Another way to prevent flare ups, not as good as the two-zone method is just covering up and waiting.The fire needs oxygen flare up so if you just cover the food, close the grill top and that way you can suffocate it, and get those flare ups to go down. When you talk about making smart choices and planning in advance for flare ups, one of the best ways to do that is just cut of the fattier pieces of the meat and that way you're just cooking the leaner pieces of the meat. Fat is one of the most flammable elements and that's what's going to cause a lot of the flare ups. Personally I love the fat, and so I just use the two-zone method but if you're really trying to avoid some flare ups then it's not a bad idea to just cut off the fat and just cook a leaner piece of meat. Another way to steer clear of flare ups is to avoid basting your food in excessive amounts of vegetable oil or marinades prior to grilling. That oil when it drips down is going to cause a lot of flare ups. So if you wait til later on to do your oils and marinades that can also help in avoiding flare ups. Whenever you're grilling, it's important to stay focused, alert and attentive of what's on the grill. If you just look away for a couple of minutes and you get a giant flare up you could risk burning all the food. So always remain alert, and that way when a flare up does occur you can react and save your meal before burns. And just as a regular safety precaution it's always good to have on hand that way you can squirt out the fire if anything happens, it's just safe grilling. Hey this is Michael ‘Medium Rare’ O’Donnell with http://cavetools.com. In this video we’re going to be teaching you how to tenderize a steak with a meat mallet. So we have our steak and we put it down on a cutting board and we’re going to cover it with a piece of wax paper. Some people use saran wrap, but wax paper works as well. Using the pyramid side of the hammer, we’re going to start hammering out the meat. Now the way we do this, is we start in the middle of the steak and we work our way out in a circle flick of the wrist there. Every time we hit it, you have to just whip it out a little bit and that’s flattening the steak and it’s also breaking down all the connective tissues in the meat. This makes it so much more tender and actually reduce the cooking time of the steak significantly. So that’s all there really is to it. Just work your way around in a circle, break down those connective tissues and your steak is going to be tender. And here you go, here is just a quick picture of the finished product right before we cooked the steak. And as you can see the meat mallet is really the perfect tool to break down connective tissues if you’re trying to flatten out a piece of steak, or to flatten a piece of chicken. Hey this is Michael ‘Medium Rare’ O’Donnell with http://cavetools.com. In this quick tutorial, we’re going to teach you how to tenderize and flatten a chicken cutlet with a meat mallet. So the first thing you want to do is put the chicken down on a cutting board. In this video, we’re using wax paper, some people to use saran wrap to cover the chicken. Either way works, you’re just making sure that you’re not getting meat splattering all over the place. So you start with the flat side of your meat mallet, and you want to start in the middle of the chicken, where the thickest part is. And as you’re hitting it, you can see we’re doing short strokes that are going from the middle and pointing out, and we’re starting to work in this circular fashion. And as you go around, it’s spreading that thick piece of chicken out more and more. The circular motion just helps to move it all out towards the outside of the chicken. You can continue to go until the chicken is as flat as you’d like, there really isn’t any “perfect” flatness of the chicken. Just do it until the chicken feels right, and after that you’re good to go. And as you can see the meat mallet is really the perfect tool to break down connective tissues if you’re trying to flatten out a piece of steak, or to flatten a piece of chicken. Hey This is Michael 'Medium Rare' O'Donnell with http://cavetools.com and in this tutorial video we're going to teach you how to crack open walnuts with a meat tenderizer mallet. So what you need to do is put the walnut down, preferably on a cutting board with the seam where the shell meets facing up. Just take one quick shot, right at the seam. If you do it right, the shell is just going to fall perfectly apart and you're going to have a perfect walnut. Now you really don't need to hit it that hard every single time. You'll see that this time we hit it a little bit too hard and the shell cracked and mixed in with the walnut. This isn't too bigger deal because we can just separate the walnuts from the shell, but if you're doing a lot of walnuts at once, you want to get good at it. So just hit it enough so that just the shell cracks and you get all your walnut perfect every time. And as you saw, the meat tenderizing mallet isn't just for tenderizing meat. There's a tonne of other awesome uses for it in the kitchen. Whether you need to use it for crushing nuts, garlic, hard candy, ice- pretty much anything else, it's just incredibly easy and useful tool to have around the kitchen. Hey this is Michael 'Medium Rare' O'Donnell with http://cavetools.com. In this quick tutorial video we're gonna teach you how to crack open pecans with your meat tenderizer mallet. What we're going to do is place the peacan down on its side so that the seam is up. news for take a quick shot at it just enough to crack the shell. You don't want to hit it too hard. So once you get that opening in the shell you can peel the rest apart and if you do it right gonna get a perfect peacan out every single time. Now, on the other hand if you hit it too hard or too many times might end up cracking the shell and that's what we did here on this try here you can see I shattered the shell and what happens is there's just this mix of pecan and shell and you have to sort it all out. Not the end of the world, but ideally you want to try and do it on your first try with just one simple hit with the mallet. And as you just saw, the meat mallet is not just for tenderizing meat, there's a ton of other awesome uses for it in the kitchen. So what you want to do is place the almonds down on a cutting board vertically, and take just one or two quick little hits out and going to pop open the shell and it's going to separate it. From there you can peel off the rest of the shell and you can get your almond. So let's try this one more time, this time we're going to be using the pyramid side of the mallet. We're just going to do a down and outward motion so that it just pops off that top. You can then just peel the rest apart, and then once again you've got your almond and it's incredibly easy. And as you just saw the meat mallet is not just for tenderizing meat, there's a ton of awesome uses for it in the kitchen. Whether you need it for crushing nuts, garlic, hard candy, ice. Pretty much anything else, it's just an incredibly useful to have around the kitchen.
Hey it's Michael 'Medium Rare' O'Donnell with http://cavetools.com and in this video we're going to go over some of the pros and cons of gas grills verses charcoal grills. Now we've got a lot of on information on these slides, so there is going to be a link below the video if you want to get all the slides in full detail for yourself. But when it comes to charcoal grills, you know there's a big wide range of prices, and some are very low-end cheap charcoal grills, there are also some more expensive, high-end ones. So when it comes to the grilling temperature, you're going to reach very high grilling temperatures with when you use a lot of charcoal. The biggest plus really comes down to the smoky flavor. In which a lot of people prefer, and it's also a lot more fun In which a lot of people prefer, and it's also a lot more fun. Now on the negative side, it can take up to 20 minutes sometimes just to prepare the charcoal and get everything ready. So there is extra prep- time. Cleaning your charcoal grill's going to be a little more time consuming with all the ashes. But if you use the tin foil technique that we recommend, it makes cleanup much much easier! Some people complain about the temperature consistency, because you are using charcoals. It's not as much of a consistent heat source as a gas grill. Gas grills on the other hand have consistent grilling temperatures, much easier to clean and there really isn't as much prep time. Besides just preheating the grill grates, you pretty much turn on the knob and you are ready to go. On the other hand, prices can be very high on some gas grills as there's a lot more moving parts as well in a gas grill compared to a charcoal grill. So you have to factor that in terms of what's gonna break. And you know, what are my repair and maintenance costs. When it comes down to it, some people grill because they just want to eat real quickly and others grow because they really enjoy it. So gas grills aren't really as much fun because you just turn on the gas to light the flame. Hey this is Michael 'Medium Rare' O'Donnell with http://cavetools.com. In this quick video and teach you some quick tips on how to clean your grill. Whether it's a propane, charcoal, smoker or pellet grill, we're going to have some tips for you. Don't worry if we move a little bit fast, we'll leave a link to the slides below this video. So that way you can go back to you a little bit more information. But the first thing here, if you have a charcoal grill the biggest thing you want to clean is to make sure that all the moving parts are free from obstruction, and that's normally just your vents. Make sure that they're free so they can move and you'll be good to go with the charcoal grill. Now with gas grills you want to make sure you've removed all the electronic components, especially if you use a water to clean it and make sure to remove the burner covers, and all the other easy to remove parts so that you can get a nice deep clean on each individual part. So when you take the burners out, what I normally like to do is I like to take a paperclip and remove any obstructions in the burner. Just go through each little opening in the gas jet and you should be good to go there. When it comes to offset smokers, the biggest thing I like to do is more preventative. It's really just lining the chamber with tinfoil at the end. Pellet grills, they have a lot of electronic parts to them, so you want to make sure that you don't get water all over the place. When it comes to pellet grills the best way to clean them is to just use a store vac.
