Besides having a new baby, two restaurants and two cookbooks @chefsuzannevizethann made time to chat with me on the podcast about her beautiful brunch cookbook.Stephanie Hansen:Hello, everybody. Welcome to the Dishing with Stephanie's Dish podcast. We are here today with Chef Suzanne VizethannChef Suzanne has written a book called Brunch Season, and the subtitle is A Year of Delicious Mornings from the Buttermilk Kitchen. And I love a book that takes, like, a single subject but really, like, elaborates on it, because I think when you think of brunch dishes, you have, like, you know, the top five in your mind, and you really have done a comprehensive guide here of how to explore brunch from not just like, egg dishes, but all the way through seasonality. So for me, I love books that either give you seasonal guidance because, like, I'm in summer right now, so how do I make a brunch for friends and what ingredients do I use? I love the way you organize this book. Did you. Is this your first book?Suzanne Vizethann :It's our second book. You know, the first book, “Welcome to Buttermilk Kitchen” Was more of a restaurant focused book, like 100 recipes from the restaurant. So this. This book is, you know, more of a standalone book. It's definitely recipes that you would find maybe as specials in the restaurant, but more as me as a chef, like, my voice as a chef.“Welcome to Buttermilk Kitchen” Stephanie Hansen:So let's talk about that for just a second, because I think a friend of mine, Gavin Kaysen from the Twin Cities, he has, like, a book called At Home that's more of his, like, personality and style. And then he has the restaurant books, which are highly stylized. Obviously, it's a beautiful restaurant. What, after writing the restaurant book, made you want to kind of bring that home into your point of view?Suzanne Vizethann :I think that I love. Well, first of all, I love cooking, and I love sharing recipes with people. And, you know, like you said kind of, you brought up a really good point that chef recipes and restaurant recipes are just that. They're restaurant recipes, and they're sometimes really difficult to pare down to something small and make them accessible in the home kitchen. And so while we attempted to do that in the first book, I think that this was more of an opportunity to say, okay, hey, this is something that I might cook at home, or, you know, this is something that I like to cook in the summer or in the fall, and kind of really bringing that, like, you in my home with me.Stephanie Hansen:So can you tell me a little bit more about your restaurant?Suzanne Vizethann :Sure, yeah. So we actually have two the original restaurants in Atlanta, Georgia. It's been open almost 13 years. You know, brunch focused restaurant, open in the morning, you know, breakfast and lunch primarily. And then I actually just opened a restaurant up in Maine. I live here full time up on the mid coast in a town called Camden. And we have, we took over an 81 year old diner and opened another Buttermilk Kitchen here. And that one's called Buttermilk Kitchen at Mariners to honor the old name.Suzanne Vizethann :So, yeah, same, same style, you know, still a breast brunch driven restaurant, but a little bit more of a coastal flair since we are right on the water.Stephanie Hansen:And did you have a, did you have a move that precipitated opening in another location? Because I'm fascinated by how people can run restaurants. A one and then two, like in two different states. I just don't.

Pecan (Petersfield Climate Action Network), Hampshire Swifts and Petersfield EcoChurch set up together on Saturday at St Peter's Churchyard for the first day of Swift Action Week. They were asking people to put up a nesting box for swifts, needed as declining eves space reduces swift numbers. There were children's activities and plenty of information. Melanie Oxley and Liz Vickers from Pecan spoke to Mike Waddington and Catherine Dale, from Hampshire Swifts, explained how successful the boxes have been, based on almost a decade's data collected in Winchester. Pecan have a talk about Swift's Migratory patterns on Monday 30 June at 7pm at the United Reform Church. The Benefits of Recycling Wind TurbinesWhile wind energy is renewable and non-polluting, the wind turbines themselves can create pollution problems. Now, scientists are creating wind turbines that can be made with less energy, but also create less waste because they can be recycled. This, of course, reduces impacts on the waste stream and provides a sustainable alternative to current wind turbines that are often extremely hard to recycle. Moreover, the new material requires less energy to create and mold into the desired output, subsequently reducing associated greenhouse gas emissions.Making Wind Turbines with Recyclable ResinNot surprisingly, even renewable energy resources also have environmental costs. For instance, when the life of a wind turbine ends (after about 20 years), it ends up in landfills. Moreover, as more wind farms are built and older turbines are taken out of usage, the waste burden is significant. Most resins also used in wind turbines require many nonrenewable resources and a lot of energy to produce. In addition, they do not easily degrade.This is why researchers at the National Renewable Energy Laboratory (NREL) started developing turbines from recyclable resin. They call the resin PECAN, and it is created with “bio-derivable resources” like sugars as opposed to the type of resin that has traditionally been used, which is not bio-derived and extremely hard to upcycle. Specifically, when the wind blades are unusable they are shredded to be used as “concrete filling”, which never biodegrades, while turbines made of recyclable resin can chemically break down within 6 hours.Benefits of Recyclable Resin Not only can PECAN withstand harsh weather, but it does not deform over time. Additionally, once the resin undergoes a chemical process called “methanolysis” it only takes 6 hours for the original carbon and glass to be recovered to be recycled. Moreover, the catalyst to harden the resin is also recovered and this means that it is possible for it to be used again (creating a circular waste stream). Moreover, PECAN produces “40% less greenhouse gas emissions and 30% less energy to make”.Challenges of Implementation There is a general lack of awareness of solutions like PECAN which strive to make our waste stream more circular, and without that awareness, it would not be able to make the large positive impact that it is capable of making. This is also one of the reasons why right now, wind turbines made out of recyclable resin proves to be more expensive, as there is not enough of a demand for it yet.Ryan Clarke believes that creating wind turbines from naturally occurring resources like sugars can be extremely helpful in waste reduction. Additionally, he emphasizes that larger deployment of this technology and increased awareness can lead to major cost savings in the long run. About Our GuestRyan Clarke studied materials science and became a postdoctoral researcher for the National Renewable Energy Laboratory, where he was the study's lead author. From the 1800s to yesterday afternoon, women and girls across the United States have led historic organizing campaigns, and today we're honoring one of these powerful yet lesser known activists whose story deserves to be told. Emma Tenayuca was only 18 when she began organizing workers for the first time in San Antonio, Texas, in the 1930s, but even then she understood what a good wage could mean to the thousands of Mexican women keeping the city's pecan shelling thriving while they themselves lived in slums. Her story shows that anyone, no matter your age or gender, can lead a mass movement for economic justice and gain the trust of workers when sticking to your principles and keeping their fight at the center of your heart.
