#95: Fat is good. Say it again, fat is good. Empty carbs, bad. If you lived through the 80s as I did, they vilified fat and we pounded ourselves full of low and no fat carbs. The result this? I'll read it to you as quoted by the NCBI: The prevalence of obesity changed relatively little during the 1960s and 1970s, but it increased sharply over the ensuing decades—from 13.4% in 1980 to 34.3% in 2008 among adults and from 5% to 17% among children during the same period. Then...the national adult obesity rate has increased by 26 percent since 2008 and today the U.S. adult obesity rate stands at 42.4 percent, the first time the national rate has passed the 40 percent mark. No fat has made us fat. Now let me clarify; a pint of Ben & Jerry's is 16 oz, and if I have it, I eat it all. The whole pint. A pint of Chubby Hubby has 1,320 calories and 80g of fat. A 16 oz slab of salmon has 944 calories and 59g of fat. However that Ben & Jerry's Chubby Hubby also packs in 140g of sugar and the salmon has zero. This body fat hormone guide explains what your body fat tells you about your hormone levels. Have fat in your upper arms? It could be from your estrogen and progesterone. Have fat in your bell? That's cortisol. The list goes on. Your hormones give you a LOT of information about what is happening inside of your body. The food that you eat is important in determining body fat accumulation but your hormones tell that fat WHERE to go. Let me rephrase: Eating a lot of extra food WILL cause weight gain but where that body fat accumulates depends on what is happening with your hormones. You can use this information to get valuable information about your hormones and which hormones you may have a problem with. Why is this important? Because it's often hard to pinpoint hormone problems and it's even more difficult to understand hormone lab tests. Many doctors do not specialize in this area so they are also less than helpful. This body fat guide is NOT a perfect science, however. Often times you may suffer from a combination of hormone imbalances which overlap with one another. But, in my experience, this information is usually very helpful. Body fat hormone guide: Fat on your upper arms/lower legs is usually caused by imbalances in estrogen, progesterone, and testosterone. Body fat in your belly or abdominal body fat is usually caused by insulin resistance and problems with cortisol. Body fat in the trunk or neck area is usually caused by excess cortisol (this is when your cortisol actually starts to increase). The inability to build muscle mass or decreased muscle mass is usually caused by decreased testosterone. Body fat which is evenly distributed over your entire body is usually caused by thyroid problems and/or leptin problems. Fat in the thighs, butt, and breast area is usually caused by high estrogen. Weight fluctuations of 5-10 pounds that occur monthly are usually caused by progesterone problems (usually a high progesterone). Once you identify which problem you have you can then start to treat it with supplements, hormones, lifestyle, and so on! MARINADE SECHE A dry rub for pork, adapted from Julia Child's Mastering the Art of French Cooking, Vol. 1 Enough for 8 pounds of pork – chops, tenderloin, ribs 2 teaspoons dried thyme or sage 3 tablespoons salt 1 teaspoon freshly ground pepper 1 teaspoon ground allspice 1 teaspoon ground bay leaf (see note) (optional) Rub the thyme or sage between the palm and heel of your hands, to make it powdery. Combine with the other ingredients and mix well. Use a rounded teaspoon of mixture for every pound of pork. Rub it in and let stand at room temperature – no more than 2 hours -- until you are ready to cook the meat. Or, wrap in plastic and refrigerate up to 48 hours. Note: I use a small Krups coffee grinder (very inexpensive and mine is now 30 years old) to grind spices – put bay leaves in and pulse then let run until leaves are powdered.

(24:00) Repeated cycle of Fasting and then eating. (24:45) Repeated cycles of fasting and feeding. (25:00) Autophagy — Self consumption. (28:06) What is the optimal hormetic stress? (28:41) Intermittent fasting. (31:21) Fasting for longer than 2 days is referred to as periodic fasting. (32:50) Autophagy does not begin until you have entered into the periodic fasting phase. (33:24) In the 5 day mimicking fast, Dr. Hsu, how did you select the types of foods involved in this fast? (33:55) Dr. Hsu, defines the 3 types of fasting, behavioral, ketogenic and molecular. (34:44) The Fasting Mimicking Diet or fast addresses the molecular or cellular fast. (35:10) Each cell has a receptor or ears and eyes that are referred to as “nutrient sensors.” (36:43) Being on and off the gas in order to activate longevity mechanisms. (37:28) Human physiology is all about cycling. (39:07) After that period of fasting, what should you do to regain those nutrients? (40:45) A low calorie diet will cause an individual to lose muscle mass. Fasting changes body, emotion, and behavior. (42:12) x1 a month for the first 3 months and then quarterly afterward (43:22) Would you want to fast when utilizing hormones? (44:40) The importance of cycling with growth hormone and recuperation. (47:45) A lot of people feel better when they are fasting. Mental clarity, more energy and more active. That being said, it will not be the time you get the most gains.
