He leapt at the chance and soon found his way as a pot-wash with one of Britain's most influential chefs – Rick Stein. He rose the ranks, began to carve an incredible career but wanted more. 'Een Australische fles heeft een kleinere ecologische voetafdruk dan een uit de Elzas' Eind jaren '90 in Londen wordt Johan Monard verliefd op een Chardonnay van Leeuwin Estate. Na één slok weet hij: deze Australische parel moet ik binnenhalen bij ad Bibendum. Na een beleefde njet van het wijnhuis per fax reist hij dan maar zelf naar het ruige westen van Australië, naar Margaret River. Een koel surfparadijs Down Under op maar liefst 3000 kilometer van de zwoele Barossa Valley. "We zouden beter over de regio's spreken en niet over Australische wijn als eenheidsworst," vindt Johan. Leeuwin Estate wordt binnengehaald en twintig jaar later heeft ad Bibendum een Australische portefeuille uniek in de Benelux. En daar blijft het niet bij (meer onder de foto's).In dezelfde periode trekt Johan Monard naar het koelere Nieuw-Zeeland. 'Mijn boekhouder werd gek want ik maakte zo'n dure reis voor amper 40 flessen.' Maar het persoonlijke contact met de wijnbouwers van de wereldvermaarde Sauvignon Blanc werpt vandaag nog steeds zijn vruchten af. Ad Bibendum is zeker van zijn lot van de gegeerde topwijnen uit Marlborough. 'Nu is heel die streek aangeplant met Sauvignon Blanc en Pinot Noir,' zegt Johan. 'Maar toen ik er twintig jaar geleden kwam had je slechts een paar kleine wijnhuizen.'  Geniet van deze wijncast over de andere kant van de wijnwereldbol en kom eindelijk te weten hoe dat zit met die ecologische voetafdruk bovenaan dit artikel.
