Jack has cooked in top restaurants worldwide, including La Régalade in Paris and Tetsuya's in Sydney, gaining inspiration from global cuisines. Since becoming Chef Director in 2017, he has launched his own cookery course at Rick Stein's Cookery School. A familiar face on TV, he has hosted shows like Born to Cook and Wine, Dine and Stein, and was voted Best Chef at the 2023 Food Magazine Reader Awards. His cookbook, World on a Plate, was published by Bloomsbury. Charlie Stein is passionate about creating exceptional dining experiences with outstanding wine, personally selecting every bottle in our business. Born in Padstow, the youngest of the three Stein brothers, he grew up immersed in food and drink, often sneaking into The Seafood Restaurant kitchen for a taste of the action. Early family travels exposed him to diverse cuisines and cultures, shaping his deep appreciation for food and wine. After earning his Wine & Spirit qualifications, Charlie worked at London wine merchant The Vintner before moving into sales. My guest today is Rick Stein. A highly requested guest, I hope you all enjoy this as much as I did recording it. Rick is, of course, a chef, restaurateur, cook book author and television presenter. He has written over 25 cookery books, a memoir and made over 30 television programmes. His latest cookbook, Simple Suppers is out now. It has been nearly 50 years since he first opened The Fish Restaurant in Padstow, an area of Cornwall he fell in love with at a young age and has made his home. Despite his successes, Rick describes himself as an accidental restaurateur – who never planned on a career in food. And yet how lucky we are that his dreams of running a nightclub were quashed by the local authorities and led instead to the Stein restaurant empire we know today. He is the man who could pretty much entirely be credited with bringing an appreciation of fish to the UK masses, something he says he didn't set out to do intentionally, it just made sense at the time. Despite his obvious success, Rick has said, “I've definitely got a sense of not being very good at stuff. It's sort of absurd because, you know, I've done really quite well for myself, but I still really doubt myself. It's just the way I am.”Simple Suppers is out now, available at all good bookstores. Today I speak with writer and editor Rebecca May Johnson, author of the book, Small Fires: An Epic in the Kitchen (Pushkin Press, 2022). Small Fires blew me away when I first read it. It's unlike any other food book I've ever read—part memoir, part manifesto, part poetry, and It was such a pleasure to speak with Rebecca in person, exploring what it means to cook, and why we cook. We discuss gender roles in the kitchen, and how women especially are pressured into a "performance of joy." Rebecca also describes how recipes can be valuable forms of information and knowledge. In her book she “elevates the domestic to the level of an epic,” as she says, which I love. The fish dish uses madras curry flavours of tamarind and green chillies.Ingredients60mlvegetable oil1 tbspyellow mustard seeds1large onion, finely chopped15g / 3 clovesgarlic, finely crushed30fresh curry leaves2 tspKashmiri chilli powder2 tspground coriander2 tspturmeric400g canof chopped tomatoes100mlTamarind liquid (see ingredients and method below)2green chillies, each sliced lengthways into 6 pieces, with seeds1 tspsalt700gsnapper fillets, cut into 5cm chunksBoiled basmati rice, to serveFor the tamarind liquid:60gtamarind pulp120mljust-boiled waterMethodFirst, make the tamarind liquid. Take the tamarind pulp and put it in a bowl with the water. Leave to soak for 15 minutes, then work the paste with your fingers until it has broken down and the seeds have been released. Strain the slightly syrupy mixture through a fine sieve, rubbing it well against the sides of the sieve to extract as much of the liquid as possible. Discard the fibrous material and seeds left behind.Heat the oil in a heavy-based saucepan or karahi over a medium heat. When hot, add the mustard seeds and fry for 30 seconds, then stir in the onion and garlic and fry gently for about 10 minutes until softened and lightly golden. Add the curry leaves, chilli powder, coriander and turmeric and fry for 2 minutes, then stir in the tomatoes, tamarind liquid, green chillies and salt and simmer for about 10 minutes until rich and reduced. Add the fish, cook for a further 5 minutes or until just cooked through, and serve with plain rice.
