In this episode of the podcast we jump right into eating and providing tasting notes on one of my favorite tacos to date. I decided that combining my two favorite foods, Japanese and Mexican, give it a little twist and make some Chashu & Chorizo tacos. Chashu is pork belly by the way, braised in a combination of Sake/mirin/Water/Soy Sauce, and it turned out amazing. We then go on to talk about Chelcey's limited movie watching history, going over Twister/Speed and GOT.
A quick test kitchen covering my first time making fresh chorizo from scratch. I usually have this with some eggs, so thats what I did this time around, but this can also be eaten stand alone or as a topping.
Welcome to May, we are going to do another month of pork tacos. Due to some awesome circumstances, and a slight computer malfunction, we have plenty of pork to work with and lots of room for tacos. In this episode I briefly go over another version of the shrimp recipe, which I think I am on version number 5 of. But after that brief rambling, I share a little bit of how my brain can take one seemingly innocent interaction and turn it into an entire episode. From what started as cool interaction with a sprouts cashier, turns into research for a few days and me asking myself the following questions. What is the difference in California and Texas Tacos? Who is really pushing the envelope in both traditional and fusion tacos? Finally, with the taco love affair seemingly pushing evelopes, does this open the door for different mexican dishes to become popular? My second test kitchen episode, and I tackle the amazing Shrimp Taco. I love shrimp, i love it boiled, baked, grilled, smoked, sautéed, in ceviche, and...dipped in butter. But...it is not the best to keep cooking for various reasons that I go over. I hope yall like this one as much as I enjoyed recording it.

Tacos and some random conversation with my friend Vy, and we are just getting things started in part 1 In this episode I do a roast version of the salpicon recipe that I was making during the month of December. I switched this recipe to a roast version just due to the fact that it was possible to impart a lot of the flavors during the cooking process rather then after. I would offer the recipe, but the liquid was not measured since I went off of smell.
