Foundry Chocolate in New Zealand release only a single inclusion bar each year, but this annual release has become one of the hottest tickets in craft chocolate. Each fall (for the Northern Hemisphere—spring for NZ), they release a bar infused with a different whisky from artisan New Zealand distillery Thomson Whisky. Each year's release is a unique flavor concept, and co-founder David Herrick and his team spend time throughout the year perfecting each annual batch. In this nerdy, deep-dive conversation, David Herrick and host David Nilsen discuss the planning stages for each bar, walk through each annual release since 2021, and talk about the details of Foundry's process for infusing whisky into these bars. The Davids also talk about Foundry's origin story, the meaning behind their name, the thoughtful of their packaging, and what keeps them excited and curious. You can learn more about Foundry on their website, or follow them on Instagram. You can listen to episodes with New Zealander Luke Owen Smith here and here.1:00 - Introduction3:40 - Start of Interview: Foundry's backstory13:35 - The meaning of the name “Foundry”17:30 - Whisky and the Thompson Distillery21:50 - Whisky bar releases 2021-202542:45 - Whisky infusion process53:40 - Release events and enthusiasm54:55 - 2026 R&D57:50- What he's currently excited about1:06:55 - Packaging and the story Foundry is telling1:13:55 - End of interview1:20:40 - End of episodeGuest:David Herrick, along with his wife Janelle, are co-founders of Foundry Chocolate, a New Zealand-based bean-to-bar craft chocolate maker whose globally award-winning single origin, two ingredient bars make the flavor possible from single origins their absolute focus. Foundry only add a third ingredient to their chocolate once a year, and rather than more conventional approaches to flavored bars, they use liquid whisky to make an annual special release series of Thomson Whisky-infused bars, that have now gained such a following that they sell out in days and are sought the world over. This week on the Domestic Draft Podcast, Evan and Dan crack open a couple of pilsners and try to make sense of a brutal Cubs slide that has quickly turned optimism into full-on fan anxiety. After a season that already featured a 10-game winning streak, the Cubs have now answered with a 10-game losing streak, silent bats, ugly losses, and the kind of baseball that makes you question why you signed up for this in the first place. Is it time to panic? The guys also check in on the latest Bears stadium drama, with Arlington Heights still hanging around while Hammond, Indiana enters the picture, plus early OTA storylines around Caleb Williams and Ben Johnson. Then they wrap with a Bulls refresh, including the end of AKME, the new front office hires, and the coaching names starting to surface as Chicago finally tries to build something different.

When you look at the top restaurants around the world, no matter what cuisine they may focus on, there's one commonality they all share, and that's deep relationships with those who grow and raise the very best ingredients. It's the same in beer—you can't be the best at what you do without the meaningful, personal, financial, and long-standing relationships that ensure the brewery has access to the very best quality ingredients. These relationships don't materialize overnight, but for Firestone Walker, they're the product of 30 years of work. In this series, we highlight a number of these crucial growers, brokers, and processors who have played a role in the world-class beer that Firestone Walker makes. Episode 4: The Science & the Art The fourth and final episode of the Source Material series features a panel discussion recorded at the 2025 Craft Beer & Brewing Brewers Retreat, with Firestone Walker Brewmaster Matthew Brynildson, Russian River Cofounder Vinnie Cilurzo, and Mike Roy of hop grower Roy Farms. Through the conversation, the two remarkable brewers and multigenerational hop farmer walk through sensory evaluation of a selection of hops to give listeners a glimpse into the way these hop savants think as they rub and evaluate both classic and contemporary hops. Along the way, these influential brewers address dynamics in the 2025 harvest, mitigating the impact of smoke on hops, new public hop varieties, and much, much more. Celebrating the English Mild

Drink Beer, Think Beer With John Holl

Mild is one of the oldest continuous beer styles in the English speaking world, it was the working class pint, the beer that fueled industrial England, pulled from cask and corner pubs, consumed in volume by people who needed something honest, drinkable and affordable at the end of a long shift. At its peak in the early 20th century, mild accounted for the majority of beer sold in Britain. It wasn't a specialty, it wasn't a conversation piece, it was just beer and then almost disappeared entirely post World War II. By the 1980s mild had been reduced to a footnote. CAMRA waged a decades long campaign just to keep it on life support. So why are we here on a stage or in the grass at Little Beer festival in 2026 treating it like it matters?  Because, the market is quietly telling us something. We're in a moment defined by low and no alcohol growth, a consumer exhaustion with extreme beers, and real hunger for what you can call intentionally simple beers that reward attention rather than demand tolerance.  Mild, a style built on nuance at low ABV, is almost perfectly positioned for this cultural moment. Whether the industry is ready to actually embrace that is another question, and that's what we're here to explore today. This episode is hosted by Blake Tyres of Creature Comforts Brewing Co. He is joined by some of the most thoughtful professionals driving success in this space right now. If you stop into most breweries and nearly any bar or restaurant in New England today, you're going to see an IPA on the menu, and it will almost certainly be hazy. New England has one of the most distinctive beer cultures in the US. It wasn't always like this, however. In fact, until about fifteen years ago, most New Englanders had never really encountered a hop.The Alchemist's Heady Topper, the subject of today's episode of One Iconic Beer. John Kimmich started The Alchemist in 2003 with his wife Jen, and within months was making a beer that many people credit as the first hazy New England IPA. It's a funny thing about firsts, though. As we'll hear in the interview, Kimmich is uneasy with this description. Heady Topper may have sparked a region-wide culture shift, but it doesn't really resemble the beers that follow. Today we'll hear the story of Heady Topper, why its fans think it's so good, why it was the right beer at the right time, and how serendipity played a starring role in the form of a hurricane, a flood, and a new canning line. In addition to John Kimmich, we'll hear from Jason Alstrom, one of the co-founders of Boston-based BeerAdvocate. In the early days of the internet, the site became a nexus of discussion and organization and helped create the excitement that led to, among other things, the haze craze that would engulf New England. We'll also hear from Andy Crouch, publisher of All About Beer magazine, and a writer who has covered the New England beer scene since moving there in the early 2000s.Visit AllAboutBeer.com for more podcasts, to read original articles, and to get info on upcoming events. For San Diego's AleSmith, funky Belgian-style mixed-culture beers aged on whole fruit may not be impactful to the bottom line. As brewers, however, they love the process challenge of these multi-phase beers as well as the unique flavors made possible by complex fermentations and highest-quality fruit. Late last year, our blind panel at Craft Beer & Brewing Magazine® rated their Handgeplukt Kriek a 98, and our editors we selected it as one of our Best 20 Beers in 2025. Then, at the 2026 World Beer Cup, the beer further cemented its elite status by taking home a gold medal. In this episode, AleSmith head brewer Anthony Chen walks us through the brewing and maturation process, from ideation and ingredients to step-mash, barrel-aging, maceration, and more. Along the way, he discusses: why commercial pitches work better for them then culturing dregs for mixed-culture beer how malted and flaked wheat produce more “chunkies” using a pre-acidification process to protect the beer in the early stage of fermentation avoiding Pediococcus in mixed fermentation cherry processing and maceration And more. If you've read any mainstream news coverage of craft beer over the past year, it's likely you've seen something about the “death” of craft beer. The apocalyptic tones and pearl-clutching over the industry's recent economic woes mostly lack context, often painting a complex and diverse industry with a single brush—yet the stories continue. In his recent State of the Industry presentation at the Craft Brewers Conference in Philadelphia, Brewers Association president and CEO Bart Watson made an effort to acknowledge the real challenges facing the industry while also dispelling some of the more hyperbolic assertions often seen in popular media. In this episode, we unpack the data and arguments for a more nuanced and accurate understanding of the current state of craft beer. Through the episode, Watson discusses: the question of how many breweries the market can sustain how the long tail of breweries creates noisy data often not captured by industry analytics sectors where craft beer is growing the importance of investing in experience changing the narrative and capturing the breadth of craft beer today understanding who your customer is and what your value proposition should be the seemingly contradictory trends driving the top and value tiers in the industry And more. A lot of brewers love the clean passion fruit you get from Tropics, but they don't want every IPA to be a tropical-fruit bomb. At the dry yeast price point, you can pitch and ditch without breaking the bank. Or, you can co-pitch with your house strain to adjust the intensity of the notes. And with nationwide free shipping, there's never been a better time to try Dry Tropics. Order now at berkeleyyeast.com and experience the ease and impact of Dry Tropics London Yeast. From side pull to beer engine, the perfect pour makes all the difference to how you enjoy a beer.  The pub isn't just the place you drink the beer.  Great pubs know that pouring a perfect pint is the final step in the beer making process. The right glass, clean and kept at the right temperature, combined with the right faucet in skilled hands is the difference between a good beer and the perfect beer.  Find out how great publicans ensure customers get a perfect pour on this special episode of Drink Beer, Think Beer, with special guest host--arguably the greatest broadcaster since Larry King--Don Tse.Visit AllAboutBeer.com for more podcasts, to read original articles, and to get info on upcoming events.Click here to support independent journalism covering the beer industry. This Episode is Sponsored by:Berkeley YeastOur Tropics yeast is based on a London Ale strain, but we added a new gene to its genome that codes for a unique thiol-releasing enzyme. The enzyme converts the precursors in barley to free thiols that smell and taste like passionfruit and grapefruit. It's super clean. No off-flavors like burnt rubber or other sulfurous notes. Just tropical aromatics. You don't have to do anything unusual either, like mash hopping. Just pitch dry Tropics and supercharge your hazy IPA.Long Trail BreweryLong Trail Brewing has been living the trail life for over 3 decades and continues to keep it fresh and celebrate the great outdoors - best enjoyed with a cold beer at the end of the day.  This year, Long Trail is upping its commitment to trails by dedicating $15,000 to Vermont trail non-profits as part of its Ales For Trails Programs.  So, one could say that drinking Long Trail beer is a form of community service - and we thank you for that. We recently wrapped up our four-episode series called Collaboration for Chocolate Makers, which looked at different collaboration ideas for craft chocolate companies. Today, we're looking at a case study of a specific kind of creative collaboration within the industry to pick apart how it worked, and how you can apply it at your own chocolate operation.Estelle Tracy of 37 Chocolates is a chocolate educator whose has been a guest on Bean to Barstool numerous times (you can find links to those episodes below). She reached out to me a few weeks back to let me know about a unique collaboration she was involved in in 2025. Estelle worked with Castronovo, a popular craft chocolate maker, to release a limited chocolate bar, and then led a virtual event to tell the story of the bar. In our conversation today, Estelle talks about how she approached the pairing, how it worked, what the advantages were on both sides, and what you need to know if you want to pursue a similar collab as either a craft chocolate maker or an educator or enthusiast.Episode timeline:1:00 - Narrated introduction3:35 - Beginning of interview6:50 - Summary of Estelle's collab with Castronovo12:05 - How she pitched the collab idea14:10 - Exclusivity of collab bar19:55- Business advantage for the maker21:35 - Developing the collab bar25:00 - Collaborations between enthusiasts and makers25:55 - Unique things to consider with collabs of this type30:55 - Things she's do differently next time35:35 - End of interview, closing thoughts on conversation39:35 - Recent beer and chocolate news48:30 - End of episodeMentioned in this episode:Moka OriginsAmazon Conservation TeamJ.Street ChocolateWorld Beer Cup 2026 winnersCraft Chocolat Challenge 2026 winnersRhyme & Reason ChocolateIndulgence ChocolatiersBeato ChocolatesDC Chocolate Society's Ultimate Chocolate Festival Survival GuideLucid ChocolatierPast episodes mentioned:Brewing Pastry Stouts Thoughtfully with Wandering Monsters BrewingHi Wire Brewing's 10W-40 Chocolate Imperial StoutsWolves, Sons, and Ethereal ConfectionsBrad Kintzer of TCHO Chocolate Check out David's book Pairing Beer & Chocolate: A Guide to Bringing the Flavors of Craft Beer and Craft Chocolate Together.Follow Bean to Barstool on social media!InstagramFacebookPinterestSign up for host David Nilsen's beer newsletter for regular beer musings, and the Bean to Barstool newsletter for pairings, collaborations, and maker profiles.
