The Beer Culture Center was founded by Liz Garabay, a long-time museum professional. When she sketched it out in 2013 she wanted it to be a place that would look at history and society through the lens of drinking. The idea came to life and has now presented hundreds exhibits and events around the country. It's important and necessary work, one everyone in the industry should be supporting. Lagers have been having a moment for a long time now. In this current age of brewing, there are many small breweries that are giving the time and attention to making lagers of note. We have two guests here that will explain how to best approach the style, and bring great pints to your patrons.Andreas Miller has over 20 years of experience in the brewing industry, and has been an adjunct instructor, consultant, and one of the brewers for the Siebel Institute's pilot and research brewing department since 2023. A graduate of Doemens Akademie in Munich, Andreas has worked as a brewmaster for a number of breweries large and small internationally, and provided consulting services for many breweries worldwide. His expertise covers practically every phase of brewing, packaging, and engineering operations, along with troubleshooting.Daren Orr and business partner Matt Bartle decided that the town of South Hero, Vermont, would benefit from a public house with community (and great beer) at the forefront. Less has been more with BrewDog's U.S. business over the last year and a half. On the latest episode of the Brewbound Podcast, BrewDog USA chief sales and marketing officer Eric Teodoro Franco explains how the business has “done fewer things better,” leading with a focus on its core brands, which helped the brand increase volume 26% last year, to 89,084 barrels of beer, according to data from the Brewers Association (BA). “We were very, very famous and very willing to be famous for throwing a lot against the wall and seeing what would stick for many, many years,” Franco shared. “We can do that in the U.K. where you have a 50-plus share and you can develop a lot of things and trial and try new things. “In this market, we did that and it didn't work. We've really taken our range plan, we've taken our focuses down to really doing fewer and better things.” That's led to improved wholesaler partnerships and led to a redeployment of BrewDog's teams to better support its core markets, Franco said. Additionally, BrewDog USA has been given the opportunity to run its operations with some autonomy from its homebase in Scotland as its U.S. leadership team has earned the trust of the global team. “We're running things the way we need to run them,” Franco said. “Same on the food side and on the retail side of our business. “For many years, we were very much driven by what the U.K. or international bars looked like, and we would apply that narrative, if you will, or business plan to the U.S. bars. That's gone away as well.” Franco also discusses how the exits of founders James Watt and Martin Dickie have affected the U.S. business, how the company is approaching innovation and how the company has rethought both its distribution footprint and its taproom strategy. Cacao agronomist Sarah Bharath has become one of my closest friends in the craft chocolate world, and she's been on Bean to Barstool a couple times before. (You can listen to those conversations here and here.) Today I'm sharing the first of a two part conversation Sarah and I had recently about cacao farming and fermentation. Rather than getting technical (though there is certainly a lot of science here), the conversation was more philosophical, as we discuss the challenges and opportunities offered by small-holder farms in the cacao space. Farmers need to make money to live, and that means efficiency and predictability are easy to prioritize. But those goals might be at odds with soil health, long-term plant health, and the ultimately goals of cacao production: flavor and complexity. How do we reconcile these? Traquair 900 (2007) is an English barleywine. Barleywines are great to age...for a little while. After awhile it comes oddly minty. Not sure why it does but it's an instant clue your barleywine has past it's prime. Brooklyn Black Chocolate Stout used to a sought after stout, back in 2006. Nine years later, it's not as trendy or hyped and shouldn't be aged this long. Let's begin the description of this episode with a mea culpa. In February 2025 I visited the Trading Route, a new venue from the people behind Manchester Union Brewery, and Manchester restaurants Trof, and Stow. One of the main reasons I was excited to go was because Manchester Union co-founder Will Evans had appeared in an Instagram video advertising slow poured versions of their lager, complete with voluminous creamy heads. Slow poured lager—like that offered at Denver's Bierstadt Lagerhaus—is something I love. This method of pouring the beer in stages, letting the beer rest for anywhere between three to seven minutes between each stage of a three or four part pour has this magical effect of bringing out malt sweetness. This works particularly well in bitter lager beers, such as Bierstadt's eponymous Slow Pour Pils. Manchester Union's own lager is a 12º Czech-style, decoction mashed pilsner, with a bitterness of around 35IBU (International Bitterness Units) which brings it close the the 39 possessed by perhaps the most famous Czech lager in the world: Pilsner Urquell.Only, that's not quite what happened. The food was fantastic, the lager itself tasted great. But when it came to the slow pour, I found the experience to be lacklustre, so I decided to use the experience to practise my critical writing skills over at my personal blog, Total Ales. Here's the thing though. Trading Route, sidled right up to the brand new Aviva Studios (or Factory International or whatever you want to call it) is a lone independent in a sea of transplanted London-chains, from Hawksmoor to Dishoom, and even a brand new Caravan Coffee right next door. Good ideas often take time to perfect, especially without the same level of resources of those chains I've just mentioned. Was zooming in for a hot take three months into Trading Route existence the right thing to do? Maybe, just maybe, I jumped the gun a little with my review.Regardless, I've now been back to the Trading Route—in a way, Manchester Union's de facto taproom—several times, and on my last two visits the Slow Pour was served as advertised. I also took this opportunity to catch up with Will on record, and have an important conversation about the brewery he helped to establish in 2018, because it's a brewery worth knowing about. Manchester Union is the city's only dedicated lager brewery, and the fact that they're concentrating on Czech style lagers (including a fantastic dark lager) is an important point of difference to me. How do you stand out when lager is still the most visible product on any given bar? Kevin McGee used his law degree more than he expected when his family took over legacy California craft brewery Anderson Valley Brewing Company (AVBC), including in legal battles over distribution rights. Now that the family has sold the brewery, a move announced in March, McGee is putting his degree to use full time. On the latest edition of the Brewbound Podcast, McGee recounts recent franchise law cases and victories in the Golden State and shares his expectations for more challenges to craft brewers' ability to switch distributors in the future. McGee, who acted as AVBC's president and CEO, also shares when he and his family knew it was the right time to sell the brewery.
