At the begining of the week Mo from Deft Brewing said they focused on three regions of beer styles: British, Germanic and Belgian. Up to this point we've yet to see a Belgian, so Mo is making up for lost time with a 10% ABV monster Belgian Quad called DeftCon 4.

Red Bus Brewing owner Erik Schmid is candid about what changed his mind about adding hard slushies to the Folsom, California-based craft brewery's summer menu: “bottom line.” In Episode 2 of the Brewbound Podcast's Learning Lounge: Taproom Tactics series, Schmid shares that since Red Bus purchased a slushie machine, the fruity drinks have become 10% of Red Bus' beverage sales and 5% of its overall business. In this episode of the Pizza Marketplace Podcast, host Mandy Detwiler, editor of Pizza Marketplace, chats with Tory Williams, general manager of Bright Penny Brewing Co. in Mebane, North Carolina.The brand has three locations, all of which operate differently. The main restaurant and brewery is in downtown Mebane where the brand does all its beer manufacturing.Neapolitan pizza is the brand's biggest food seller, with favorites like cheese and pepperoni the favorites. There's a pizza called Family Friendly which has cheese, pepperoni and a local sausage. The 412 is a barbecue chicken, bacon, local hot honey and jalapeno, and the Sweet and Salty features prosciutto, sliced figs, goat cheese, arugula, and a balsamic glaze."We make our dough," Williams said in the podcast. "We make our sauce. We typically buy in a lot of shredded cheese, but we do slice our provolone and slice our Swiss cheese as well. When Death of the Fox Brewing Company opened eight years ago, co-founder Chuck Garrity wanted to make sure its Clarksboro, New Jersey-based taproom stayed busy day and night. So to “maximize” Death of the Fox's taproom investment and utility, the company launched by also offering coffee service, Garrity shared during the first edition of the Brewbound Podcast's Learning Lounge: Taproom Tactics series. Offering coffee was part of a total beverage mindset that covered an overlap between beer drinkers and coffee connoisseurs, while adding a revenue stream in one of the strictest operating environments for craft brewery taprooms. “My goal was to always have an on-site coffee roastery,” Garrity explained. “So to be able to produce and roast the coffee in the same way that we produce fresh beer for the brewery. In the same respect, we're doing that with the coffee. To me it just made sense in terms of a business model.” Building an on-site roastery during the COVID-19 pandemic was “a game changer” for the business due to taproom shutdowns. It's now become the dominant portion of the brewery's business. “When we first opened, beer was about 75%, 80% of our sales,” he said. “Now, flash forward eight years later, coffee, in terms of the total company, is about 70% of our sales. Beer is about 20% to 25%.” Garrity added that the brewery's beer sales are still strong, and he's confident that “beer's not going anywhere.” But his philosophy is to “follow where the river takes you, don't fight against the current,” and Death of the Fox's customers were telling him that while they liked the combination of beer and coffee, they really loved the coffee. Should we scrap the pint measure? Or is the very notion of doing so rooted in prejudices like classism?These were the questions I asked following the September 2024 publication of a study led by researchers at the University of Cambridge. Back then my focus was singular: why indeed did such a study focus specifically not just on beer, but on pubs? Its focus was to look at alcohol consumption rates, and investigate if reducing the size of the available measures would in turn reduce the rate of alcohol consumed. Following the study's publication, I contemplated why it focused on the pub, when around 60% of alcohol is now consumed in the home. It eventually led to bigger questions, such as where the pint measure fits within the fabric of British culture itself. This, I felt, was the perfect subject for an old-fashioned debate.Once again, this summer we headed up to FyneFest to host our Meet the Brewer tastings and panel discussions, and we decided to kick off Friday evening with this very topic of conversation. I was pleased to welcome back two previous Pellicle podcast guests, in the form of Rooster's Ol Fozard and Lost Cause Brewing's Vik Kastenbauer Stronge. It was also a pleasure to welcome Chris Shepherd from Cambridge-based Pastore brewing, for what I hope won't be his only appearance on this podcast.While the festival got underway around us, we kicked our debate into action. You might say that being members of the beer industry, this is a side of the discussion loaded with some bias.
