I hosted a panel talk — one of the most interesting ones I've been involved with — for Proof & Company during Sydney Bar Week, called Casa de Agave and I've got the recording of that talk for you on this episode of Drinks At Work. we had some big agave brains on the panel — founder of Agave Cartel and the group bars guy for Sydney hospitality group, Solotel, Reece Griffiths; co-founder of the Mucho Group and its bars including the agave-focused Cantina OK! and Tio's, Jeremy Blackmore; and a special international guest, Jay Khan, the owner and bartender of the Mexico-inspired cocktail bar Coa in Hong Kong, a bar that has been named Asia's best bar three years running. We talked about the current agave boom, where it goes next, who the winners and losers are in the world of agave spirits, and loads more — it's a really spirited discussion, with a range of views, and well worth a listen.
Today it's my great pleasure to introduce one of Australia's leading and most respected wine professionals. Annette Lacey is Group Beverage Manager for Solotel, overseeing a large and diverse range of hospitality venues in Sydney, which includes Matt Moran's multi award-winning restaurants. She completed the rigorous Master of Wine program in 2020 and is a certified WSET educator focusing on developing the next generation of wine professionals. Annette was also selected for the highly prized Len Evans tutorial and was winner of the prestigious 2014 Vin de Champagne Award (professional category) which is where I got know first know her. She has been an associate wine judge at numerous wine shows around Australia and participates in trade and educational tastings, presentations and masterclasses. Over the years, I have gotten to know Annette as co-presenter at one of my events in Sydney but also as a contributor to VINE & BUBBLE where her knowledge and passion for champagne has clearly shined through.

This week we speak to Elliot Solomon, CEO of one of Sydney's finest pub groups, Solotel. Elliot discusses his family's 100-year history within the Australian Pub industry and how their migrant story has influenced the diversity we see in the business today. He also examines the intricacies of behaving like a corporate company whilst "not being too corporate that we lose sight of what we are; a family business.' Elliot tells us of the non-linear process of launching a new venue and the many inspirations and extensive research it takes. We’re back with Part 2 of the Shared Care Special, where we’re following Sarah and Peter on the journey of their parental leave. Sarah Maxwell, People & Performance Director at Solotel, and husband, Peter, are sharing the parental leave with their newborn baby girl. The couple are alternating their blocks of leave, with Sarah having just returned to work after her first block of leave, handing over to Peter for his first block. In this Episode, Sarah shares why she found her transition back to work relatively smooth, and she is excited and looking forward to second next block of parental leave which is only a few weeks away now. What makes this series so unique is that we're following Sarah & Peter over a number of months, and hearing first-hand about how they're finding the experience. It's fantastic to see parental leave equality in action from the parent point of view.
In this Shared Care Special, Sarah Maxwell, People & Performance Director at Solotel, opens up to us about how she and her husband plan to take their parental leave with their baby on the way. Their plan is to alternate in taking blocks of time off, with Sarah taking a block of 6-8 weeks off, then Peter taking 6-8 weeks, then Sarah will take a second block, then Peter will take a second block – up until 6-8 months when they will put their baby in care and both return to work. They both love their work, and are both passionate about being fully committed, hands-on parents, sharing the care for their child. What makes this series so unique is that we'll be able to follow Sarah & Peter over the coming months, and hear first-hand about how they're finding the experience. How effective can hospitality be in shaping the social conscience and creating positive change? Sydney’s out going deputy lord mayor Jess Miller talks to us about her award winning campaign Sydney Doesn’t Suck, a plastic straw eliminating initiative that co-opted in small bars like This Must be the Place, through to larger groups like Solotel, as well as hospitality publishers including Time Out and Intermedia. Jess explains how her hospitality training gave her a foundation for a career, taking her from a cellar door on the Mornington Peninsula, to a high profile public office with the City of Sydney. We learn how she has used the “helicopter view” afforded her by her position, to create social change and action.
