Daniel welcomed me into the ‘red room' at Bang Bang's newest venue in St Kilda. Although it's only been open a few weeks, Bang Bang St Kilda already has a following. As executive chef and now a full partner in the Bang Bang group, Daniel oversees three restaurants and two additional kitchens across Melbourne's southeast. His chef career has come full circle, as he met his wife in St Kilda and they travelled to London to work for two years before coming back to Melbourne and moving to the Mornington Peninsula with their young family. Daniel still loves spending time in the kitchen, but his focus is now on maintaining consistency across the venues. Bang Bang's menu is Pan-Asian, drawing from Japan, Thailand, and India. Inspired by his travels, Daniel refines the menu while keeping beloved staples intact, striking a balance between authenticity and modern execution.

Growers are looking to new agricultural technologies, or agtech for short, to help them confront the pressure from climate change, labour shortages, rising input costs and changing market demands.The technologies being explored read like a list of TED Talks keywords; artificial intelligence, autonomous vehicles, drones, big data, the internet of things…Understanding, sourcing and trialling these new technologies can be time consuming and costly, however, so in 2024 Hort Innovation launched a $4.1 million levy-funded project to help Australian vegetable growers adopt advanced mechanisation technology.Run by the Queensland Department of Primary Industries over three years, the project will deliver field days, showcase events, demonstrations, international study tours, webinars and more to help growers engage directly with the latest equipment and manufacturers.In October 2024, the project took a group of 16 vegetable growers on a study tour to the US, where they attended the FIRA-USA International Forum for Agricultural Robotics in California.One of those growers was Dan Hodges from Peninsula Fresh Organics in Victoria. Max's Restaurant was the first winery restaurant on the Mornington Peninsula and was started by owner and chef, Max Paganoni in 1994. The views are spectacular. From the dining room, you look out over the vines to Western Port and across to Seal Rock. Max has always been passionate about using and promoting local produce and he has now very happily brought in two equally enthusiastic chefs, Michael Demagistris and Ryan James to work with him at Max's. Michael has worked at top-tier venues, including Jacques Reymond in Melbourne, Alinea and The Publican in Chicago, and Noma in Copenhagen. In 2013, he became a household name as a top four finalist on MasterChef Australia: The Professionals. Over the years, Demagistris has held executive chef roles at places like Sorrento Golf Club and Buckley's Chance and owned his own restaurant East Bar and Dining in Mount Martha. Most recently, he has worked at Polperro Winery and was executive chef with Searoad Ferries and Tarra. Best friend, Ryan considers Michael a mentor, having met him at East Bar and Dining before going on to some of the same venues. These two are absolutely the A team. They hold the same values for cooking and for connection with the community and they are both ecstatic to be cooking at Max's Restaurant. They've worked with farmer and chef, Karl Breese to harvest vegetables they are excited about and they are putting up a degustation menu full of imaginative and delicious twists and turns. I had such a lovely chat with Michael and Ryan and then was treated to some of the snacks and desserts they had told me about. I can't wait to go back to the lush and verdant setting that is Max's Restaurant to share it all with friends.

Rollo Crittenden is general manager, winemaker and vineyard manager of Crittenden Wines in Victoria's Mornington Peninsula region. Mornington Peninsula is synonymous with premium quality pinot noir and chardonnay, and Crittenden certainly excels at making wine from those varieties. But when it comes to differentiating the winery from its peers, Rollo has an ace up his sleeve. Since 2011, Crittenden has been making a rare Australian example of the white wines made from savagnin grapes that are unique to the Jura region of France. Known as ‘vin jaune' wines in Jura, they're aged for years in barrel under a layer of flor yeast, similar to how fino sherry wines are made in Spain. And the results are quite extraordinary, as I experienced myself late last year when Rollo presented a retrospective comprising six vintages of Crittenden's Cri De Couer savagnin wines. Coming up, you'll hear how this project has evolved from an accident into one of the most celebrated wines on the contemporary Australian scene. NB: This interview was recorded following the event late in 2023, right before I took an extended break from the podcast. Keep that in mind when we reference the upcoming pipeline of releases during this interview.

Chop the chicken into 2cm x 2cm pieces. Place the chicken in a bowl with the oyster and hoisin sauces and sesame oil; mix thoroughly. Thread the meat onto the skewers evenly; let sit at room temperature. To make the smashed cucumber salad, combine the chilli, garlic, fish sauce, palm sugar, juice and vinegar in a bowl. Mix well and add more to achieve a balance of salty, sweet, sour and hot. Add the lime leaves. Cut the cucumbers into 5cm lengths, then halve them length- ways and place them on a chopping board, cut-side down. Hit them with a mallet until they split and flatten. Place in a bowl and pour over the dressing. Let macerate. Now, grill the skewers (preferably over a charcoal grill) to your liking. Scatter the peanuts over the salad and serve immediately. Mandy and Kate chat with Brooke about her beautiful son Rye, who passed away a year ago at the age of twelve. Brooke shares Rye's story, from his birth following a stroke in utero, a diagnosis of cerebral palsy and unexplained medical conditions that led to a regression in his development over time.With Rye's birth occurring before the NDIS scheme began, Brooke was thrown into a new world of fundraising to pay for all of Rye's many therapy and equipment needs. Brooke talks about many of the positive aspects of Rye's life, from his supportive school environment, his troop of support workers, known as ‘Rye's Babes', who developed a close friendship group all thanks to Rye, his beautiful smile and his extended family who rallied around Brooke, Rye, her husband and two younger children to support them. Rye progressively became more unwell and spent most of the final year of his life in hospital, before passing away. Brooke shares about his funeral, which was like a beautiful party, and a family member's gift of a 12-year-old oak tree to plant in their garden in his memory. Brooke also speaks about the journey of finding her feet again following Rye's passing, and letting go of the life she built around his care, including all of the people who entered their life to help care for him. Brooke has now set up her own Pilates studio on the Mornington Peninsula as part of this new phase in her life. This week is a bit different. I am playing an episode which appeared on another podcast by The Mind Tradie :) I listened to this episode some time ago and it really moved me, it made me connect with Jamie and ask him to be a guest on the show. We have become great friends and talk often, and he has appeared on instagram lives with me and a few episodes of this podcast.What i loved about this episode is how raw Jamie is when he talks about his childhood. This was the first podcast i had heard that really made me feel sad but also inspired me. When you listen you will get a great understanding of Jamie and what he has been through because he is also losing his sight! Jamie is someone that I am really proud to know and call my friend and I hope his story moves and inspires you the way it did me :)The Mind Tradie was founded by Jamie Usher in 2013.Jamie is based on the Mornington Peninsula in Victoria and in 2010 Jamie was dealt with an unexpected eye condition causing him to lose 90% of his eyesight. Jamie has a love and passion for psychology and understanding the mind and human behaviour. Jamie has followed his passion for psychology and completed study in BPsychSc & Psych (Hons), with plans to complete further study in this area.
