Chef Edgar Pendley of Nashville's Urban Grill joins host Eli Sussman for a chat around the Springer Mountain Farm campfire at Charleston Wine + Food. Urban Grub is a casual fine dining spot located in a renovated carwash in Nashville’s booming 12 South district. The indoor-outdoor restaurant-bar opened as a signature landmark on 12th Avenue South in the Spring of 2012, as a project led by seasoned restaurateur Jay Pennington and Chef Edgar Pendley. Chef Edgar Pendley has created a diverse menu featuring everything from fresh seafood and house-made pasta to tender chops and prime in-house dry-aged steaks. In the back-of-house at Urban Grub, you’ll find more than your typical commercial kitchen. Pastas are made in house in a vintage pasta machine, the meat pantry is well stocked with freshly butchered pigs, goats, lambs and cows, and the meat curing room has slabs of bacon, prosciutto and culatello aging and curing in preparation for its debut on The Grub’s world-class charcuterie boards. We hear from Ron Finley, the "Gangsta Gardener" about his mission to ignite a horticulture revolution in South Central LA. Currently, he is fighting to save his HQ – the very same location where Finley took back city land and planted the seeds to cultivate happy and healthy communities. After numerous attempts by the property owner for a loan modification with no avail, the land was sold to Strategic Acquisitions Inc in a foreclosure. To learn why it's having such a renaissance in the US right now, we speak to Francois Veccio, one of the fathers of charcuteire with over 60 years of experience. Then, we hear from Lorenza Passeti, the CEO of Volpi Foods. Lorenza's great-uncle, John Volpi immigrated from Milan in 1900 and brought with him the ancient European art of dry curing. Now, as president of Volpi Foods, Lorenza continues to refine her great-uncle’s craft – while adhering to the techniques he brought with him to America more than a century ago. Chef Edgar Pendley has his own charcuterie program at Urban Grub in Nashville. He shares some of the challenges involved with setting up a space to cure and age meats in Tennessee – where the food inspection process hasn't quite caught up with the new techniques being used. Last, we chat more with Edgar about his upcoming James Beard House dinner titled "Southern Hangout." He's using familiar flavors from his youth to create a menu boasting mouth-watering ingredients like strawberry preserves, black truffle mole, pork jerky, and sorghum syrup. They discuss a couple shows, former Titan RB Chris Johnson getting shot in a drive by and 12th South restaurant Urban Grub catching on fire while Matt was there (just a little... it's fine). But then, they were back at The Sound Shelter for much better audio and the beautiful LIVE music of Callaghan!When Callaghan moved from London to Atlanta during the summer of 2010, she was still a relatively unknown name in the States. A singer/songwriter whose music blurred the edges between pop, adult contemporary and Americana, she had been drawn to Atlanta by one of her biggest influences - Shawn Mullins - after he had agreed to produce her first album. Just a few years later, Callaghan’s writing a new chapter of that success story. On her second album, A History of Now, she draws upon four years of touring, recording and growing appreciation in the U.S. She's transformed herself from a burgeoning indie songwriter to a full-fledged headliner who's toured across 46 states, performed at packed venues around the country and logged more than 50,000 highway miles per year.
