Worlds of Flavor is a 3-day International Conference and Festival that includes culinary demonstrations, presentations, panels, and workshops, plus, its famed world marketplace tastings and live fire and teaching kitchens at its beautiful campus. Today's show includes two guest interviews from the conference: first, Pierre Thiam, Chef and Owner of Teranga and Yolélé with locations of NY and El Cerrito, CA, who is a celebrated chef, restaurateur, award-winning cookbook author, entrepreneur, and environmental activist. Born and raised in Senegal, Pierre is known for his innovative cooking style; at once modern and eclectic yet rooted in the rich culinary traditions of West Africa. Pierre is the founder of Yolélé, which distributes African food products around the world, including fonio, a climate-friendly and nutritious ancient grain from the Sahel region of West Africa. His critically acclaimed restaurant Teranga, located in Harlem, NY, serves fast-casual West African fare directly sourced from farmers in the region. Pierre is the author of three cookbooks including, The Fonio Cookbook, released in October 2019 and will add a fourth with the release of Simply West African (Penguin Random House; 2023). Shari's second guest is Zoe Adjonyoh, a chef, writer, entrepreneur, and founder of Zoe's Ghana Kitchen Ltd. Zoe has been pioneering modern West African food in the form of supper clubs (London, Berlin, New York, Accra, Wales, Russia), her own restaurant in Brixton, pop-ups, street food, and events since 2010. In 2017 she released her debut cookbook Zoe's Ghana Kitchen, which was republished and released nationwide in the US in 2021 and landed her a spot on the New York Times Best Cookbooks of 2021 List. Zoe's mission has always been to bring the great flavors of West Africa to a wider audience, and her work has been acknowledged through positive press and publicity including being named one of London's hottest chefs by Time Out and one of “The 44 Best Female Chefs” by Hachette Cuisine France. Mr. Keen, Tracer of Lost Persons was a long-running radio detective series broadcast on NBC Blue from 1937 to 1955. This week, Beer Sessions Radio welcomes two homeschooled brewers — Jeff Lyons from Endless Life Brewing in Brooklyn, and Jaega Wise from Wild Card Brewery in East London, who also happens to be the author of “Wild Brews.” The gang will bang out lessons on homebrewing and sour beers, before revealing the secrets to the water section of Jaega's latest book. The episode starts with Jaega's and Jeff's introduction to the homebrewing world as well as their backgrounds outside of the beer industry. While Jaega grew up in the Midland region in UK, noted for Burton-on-Trent, with a CAMRA beer festival as her first, Jeff hung out with the Beer Judge Certification Program gang in the back room of Jimmy's No. 43. Jaega also shared her unexpectedly perfect journey to beerdom, studying chemical engineering and going to water school for her previous job in water treatment. She went on to explain the keys to controlling what she considers the most underappreciated ingredient in brewing — water. The gang then goes deeper into sour beer and the history of homebrewing, with Jimmy admitting to only being able to make “the no hygiene beer” inspired by the Victorian era's Tudor. Anne Saxelby was a champion of American farmstead and artisanal cheeses and was beloved by cheesemakers and chefs alike. The founder of Saxelby Cheesemongers (now at NYC's Chelsea Market and online), Anne passed away unexpectedly last October, devastating her family and leaving a big hole in the hearts of many in the food world. In response, Anne's husband, Patrick Martins, who helped found Heritage Foods, Heritage Radio, and Slow Food USA, started the Anne Saxelby Legacy Fund to keep her spirit alive through paid apprenticeships at farms across the country. Patrick joins host Kerry Diamond to talk about the legacy fund, and later in the show, Anna Harrington of the Rounds cookie company and the ASLF Fundraiser Benefit Committee joins to talk about the legacy fund's first event, taking place Sept. 14th at Chelsea Market.
