Hey everyone, we had the pleasure of speaking with Paracaidista founder, Adrian, during his trip around Southeast Asia to spread the word about his fantastic beer all the way from Mexico City. We got to hang with Adrian the night before at a table of great beer heads and greater beer guts from the robust Saigon scene and get to know him before the interview. Welcome to the 7th installment of Sexy Meat Talks!This time on the podcast we have Tim Scott, co-founder of Quan Ut Ut and Bia Craft right here in Saigon. Knowing that we’d be interviewing Tim, Mark prepared for consumption what the Nisqually Native Americans call a geoduck (Pronounced: gooeyduck), which means “genitals”  in their language. Google it to find out why! It was a fun and informative episode that gets into Tim’s trajectory in Vietnam that led to the collaborative creation of Ut Ut, and would serve anyone well to listen to if they are thinking about doing business in Vietnam or Southeast Asia in general. For me, I learned early on that bears and deers go together like hops and malt, and that when I think just a little bit before I speak I can actually ask good questions. We liked this quote from Tim about his experiences working on grills:“Coming through the rush period and getting the last steak off the grill… it was kind of this euphoria that is hard to describe but it was so, so good.”Find out just what he means and check out more on our seventh episode!

Dave Byrn, Brewmaster and Beardman joins us this week for our fifth episode to talk about how he got started in beer and why all beer good and bad is an infection. For all you beer nerds out there, this one's for you! Dave's Bio: Like many that tire of fizzy lager, Dave was bitten by the homebrewing bug in 1999.  A wound from which he would never recover.  After nearly a decade in the automotive industry Dave left a successful but unfulfilling career with Jaguar/Land Rover in 2008, to take an 80% pay cut in order to clean kegs, fill bottles, and be genuinely happy again. After seven years of brewing up through the ranks of craft breweries such as Cigar City, Motorworks, and Highland Brewing Company, he was faced with a choice. Join in, and become one of the almost 6000 breweries in the US or move literally halfway around the world to be one of the first ones in Vietnam. Dave loaded his family and Basset Hound into a plane bound for Saigon in 2015 and has yet to look back.  He served as Brewmaster for Pasteur Street Brewing Company for nearly four years, leaving in May of 2019.  Mr. Byrn is currently pursuing new and exciting opportunities throughout South East Asia and abroad as the Managing Director of Crafted Beverage Consulting and, of course, starting another brewery as time allows.

On top of that, all of this was happening during a very big football match between Vietnam and Malaysia, so you’re going to hear quite a lot of background noise.
