Gus Clemens on Wine explores and explains the world of wine in simple, humorous, fun posts

Tannins are natural and essential to wine. They also are wine's most misunderstood element. Even wine scientists admit they do not fully understand tannins. One expert called tannins a “chemical train wreck.” Let's explore. What do we know? Tannins are natural organic and phenolic compounds found in almost all plants. They provide protection as a chemical deterrent against plant-eating animals and insects. Their bitter, astringent taste is unpalatable to herbivores. When consumed by insects and some herbivores, tannins interfere with digestion, negatively affecting growth and development.Wine toasting I created in AI to give you something to look atTannins are powerful antimicrobial agents, protecting plants against bacterial, fungal, and viral infections. Tannins disrupt microbial cell walls and interfere with cellular processes. This is particularly important in bark and roots, where tannins are the first line of defense against soil-borne pathogens.Tannins are potent antioxidants. They are important when plants produce elevated levels of potentially harmful free radicals as a result of drought and other environmental challenges.Tannins efficiently absorb UV light, protecting against harmful solar radiation. Particularly important in sensitive plant tissues. While tannins deter harmful organisms, they have a role in attracting beneficial insects, particularly pollinators. They also are involved in the activation of nodulation genes that favor nitrogen fixation in plants that have symbiotic relationships with nitrogen-fixing bacteria.Tannins aid reproduction by helping seeds maintain dormancy by creating barriers to water uptake and germination. Located in the seed coat, tannins allow seeds to survive unfavorable conditions, then to germinate when conditions are favorable.Tannins are among the most abundant secondary metabolites produced by plants. The multi-faceted success of the tannin-production strategy is proof of its efficacy. But, enough of the general science, you are reading this to learn something about tannin in wine.More AI art I created to keep you interestedWine tannins primarily come from grape skins, seeds, and stems. Oak barrels also contribute, although oak tannins are different from grape tannins.Tannins provide the body and a framework—structure—that supports other elements in wine, such as acidity, alcohol, and fruit flavors. Tannins also provide color (anthocyanins, a type of flavonoid, are responsible for red and purple hues in wine), astringency (puckering sensation inside your cheeks), and texture.Texture or “mouthfeel” is the physical sensation in your mouth most often associated with wine tannins. Common texture descriptors include:• Silky, velvety, fine. Smooth, refined tannins feel soft on the palate.• Chalky, dusty. Tannins feel gritty or powdery.• Grippy, astringent. Pronounced tannins create a drying sensation, think over-brewed tea.• Granular. Tannins have coarse, rough texture.Tannins can be a key component in food pairing. They particularly interact with proteins and fats on a molecular level. Lipids in fatty foods bind to tannin molecules, reducing tannic astringency, activate salivary glands to help break down meat protein, and enhance both the wine fruit flavors and the savory meat flavors. That is why rich, tannic red wines are classic pairings with a juicy steak. On the other hand, winemakers can deliberately reduce tannins by limiting by the amount of skin contact—often none or very little in white wines, minimal in rosé—which allows the acidity and fruit to play center stage. Avoiding oak reduces tannins, but some whites are aged in oak to gain oak tannins, which mainly influences mouthfeel and texture rather than astringency. Oak-aged whites usually fall into the silky, velvety, rounder, creamier category. With enough oak, there can be subtle drying and fine-grain elements, which adds complexity, enhances food compatibility, and boosts aging potential. But winemakers walk a tight rope here. Too much oak flavors and oak tannins in white wines creates a lurid, blowsy cartoon wine.Tannins are a natural preservative. Tannins from tree bark are used to “tan” leather to preserve it. Tannins particularly serve the preservative role in red wine. Their critical function is as an antioxidant. Tannins serve as sacrificial molecules that bind with oxygen molecules before the oxygen can downgrade fruit flavor, mute colors, or create offensive odors and flavors. Tannins capture free radicals and oxidation, allowing other components to develop complexity and depth. The antioxidant capacity of tannins reduces the need for sulfur dioxide in wine and permits a more natural preservation strategy.Tannin evolution is a sophisticated process of molecular transformation. In the beginning, tannin molecules are small and can create bitter, harsh sensations—qualities of their defense properties. That's why young tannic wines can be almost undrinkable. Over time, tannic molecules undergo polymerization where individual molecules link together to form complex chains that interact differently on your palate. Complex chain tannins taste softer and less astringent. Bottle aging is a real thing.Tannins also stabilize color, or subtly modify it. Young red wines get their color primarily through unstable free anthocyanins which would fade without tannins. During fermentation and early aging, anthocyanins bind with tannin molecules to form polymeric pigments, which tend to stabilize the color. As wine ages, however, there is a slow change to brick-red hues. Brick red hues often are a marker for quality, aged red wines.Tannins are a core element of the world's great wines built for aging. But that comes at a cost. Such wines can be undrinkable in their youth, requiring years in oak and then in bottle to evolve into the pinnacle pours treasured by wine connoisseurs. That process adds costs. The winery most hold the wine for years before they can get return on their investment. The customer must do the same, which means a dedicated place like a temperature-controlled cellar before they can enjoy.Such patience is hard to find in today's world of social media, cell phones, and on-demand streaming content. The large majority of wines are made to be enjoyed when you get home from the store. Even winemakers capable of making age-worthy wines now reduce tannins with techniques like holding back on lengthy maceration (time on skins, a major source of tannins), or employing strategies such as cold soaking, gentle cap management, micro-oxygenation, sur lie élevage, fermentation in concrete eggs and other methods. There is a possible trade-off: reducing the ageability of the wine.Red wines are wines with the most tannins and wines most-associated with aging—although there are white and sparkling wines that are aged—in those cases, acidity is the main preservative, not tannins. Here are some of the most tannic wines and the length of aging time for them to achieve their peaks:• Nebbiolo. Used to make Barolo and Barbaresco in northern Italy, nebbiolo wines—by DOCG regulations—must be aged a minimum of 38 months from November 1 of the harvest year. Top-tier Barolo Riserva must age a minimum of 18 months in barrel and cannot be released until January 1 of the sixth year after harvest. Barolo and Barbaresco easily can age 25 years before reaching their peak.• Cabernet Sauvignon. While winemakers make plenty of drink-now cabs, classic, age-worthy cabs from Bordeaux, Napa, and Coonawarra need 10-20 years to approach their best drinking stage.• Monastrell (aka Mourvèdre). When made in southern France's Bandol, the wine needs 8-15 years to achieve its potential.• Sangiovese. Brunello di Montalcino and top-level Chianti need to age 10-20 years to taste their best.• Other wines that need 10-20 years include Gran Reserva Rioja, Ribera del Duero (made with Tempranillo), Hermitage, Côte-Rôtie, some Australian Shiraz (made with Syrah/Shiraz).Many of us will never taste such wines. We don't have the money, time, and patience. But if you do get the opportunity, you will experience extraordinary flavor complexity, sophisticated textures, and the emotional-intellectual pleasure of tasting what soil and human toil gave birth to decades in the past, thanks in large part to tannins.Tasting notes• Portlandia Pinot Noir Oregon 2022: Admirable nuance, refinement for value pinot noir; example of how well Oregon—and Portlandia—does PN. The sentence will be pronounced. Christ will say to the wicked on the left hand, "Depart, ye cursed, into everlasting fire, prepared for the devil and his angels." How dreadful will these words of the judge be to the poor, miserable, despairing wretches on the left hand! How amazing will every syllable of them be! How will they pierce them to the soul! These words show the greatest wrath and abhorrence. Christ will bid them depart. He will send them away from his presence, will remove them forever far out of his sight, into an everlasting separation from God, as being most loathsome, and unfit to dwell in his presence, and enjoy communion with him. Christ will call them cursed. Depart, ye cursed, to whom everlasting wrath and ruin belong, who are by your own wickedness prepared for nothing else, but to be firebrands of hell, who are the fit objects and vessels of the vengeance and fury of the Almighty. Into fire. He will not send them away merely into a loathsome prison, the receptacle of the filth and rubbish of the universe. But into a furnace of fire.

Vanessa Cominsky joins Case and Sam to RAGE against this awkward historical epic! Overview Podcast hosts Case Aiken and Sam Alicea provide a framework for discussing the 2004 film Troy, highlighting its connection to early 2000s epic films like Gladiator and 300. Vanessa Cominsky, a guest and classics major, notes a 4-year professional bond with Case stemming from shared academic interests. David Benioff, the film's screenwriter, is discussed in relation to his later work on Game of Thrones and identified issues in narrative depth. Whitewashing criticism surfaces regarding the film's predominantly white cast, despite its story set in a historically diverse region. Analysis reveals a lack of clear passage of time, compressing the depicted 10-year Trojan War into a brief narrative span. Costume design receives praise for historical accuracy while the film's runtime discrepancies are critiqued, with the director's cut deemed excessive. Thematic exploration includes Agamemnon's characterization as a villain symbolizing US imperialism, contrasting with sympathetic portrayals of the Trojans. Sean Bean's potential as Odysseus is noted but criticized for underutilization, while Peter O'Toole's Priam provides limited but impactful performance. Improvement suggestions include altering the title to better reflect Achilles' journey and revising the narrative structure to enhance character development. Upcoming initiatives include a scholarship program for women in wine, launched by Vanessa Cominsky's nonprofit Vin Vitalite in 2025. @vminsky @womenofwinedc Www.vinVitalité.org (Pronounced vinn vitahlihtay) Notes ️ Podcast Introduction & Setup (00:00 - 02:45) Hosts Case Aiken and Sam Alicea introduce the 'Another Pass' podcast, discussing movie analysis and improvements. Guest Vanessa Cominsky introduced as Case's coworker from wine/spirits industry and fellow classics major. Discussion of 4-year professional relationship and bonding over classics background. Movie Context & Background (02:45 - 09:38) Analysis of 2004 film Troy as adaptation loosely based on oral tradition. Discussion of movie within context of early 2000s epic films including Gladiator, 300, and Lord of the Rings trilogy. David Benioff identified as screenwriter, connecting to later Game of Thrones writing style issues. Observation that Odysseus character tells audience he's clever but never demonstrates intelligence in actual scenes. Political interpretation: movie reflects 2004 centrist liberal perspective on Middle Eastern conflicts with 'support the troops' messaging. Film Production & Casting Analysis (09:38 - 19:22) Vanessa's personal connection: used movie for high school Latin convention project and senior thesis. Whitewashing criticism - movie depicts conflict between Greece and Middle East with entirely white cast. Brad Pitt as main marketing draw playing Achilles in peak popularity period. Case's viewing experience in Rome during classics trip, creating nostalgic connection to material. Story Structure & Adaptation Choices (19:22 - 28:32) Movie covers broader Trojan War story rather than just Iliad, including Trojan Horse sequence not in original epic. Brian Cox as Agamemnon praised as perfect casting choice despite whitewashing issues. Discussion of movie's approach to gods - humans take credit for actions rather than divine intervention. ️ Character Analysis - Heroes and Villains (28:32 - 38:14) Agamemnon positioned as main villain representing US imperialism, while Trojans portrayed sympathetically. Hector vs Achilles juxtaposition works well as respective champions of each side. Orlando Bloom as Paris criticized as too whiny and lacking roguish charm needed for character. Eric Bana as Hector praised as everyone's 'big brother' figure and moral center. Production Design & Technical Elements (38:14 - 47:42) Costume design highly praised for historical accuracy and visual distinction between Greeks and Trojans. Director's cut vs theatrical cut - director's cut too long at 3 hours 16 minutes with unnecessary gore. Runtime issues - theatrical cut feels rushed while director's cut is excessive. War Portrayal & Geographic Issues (47:43 - 56:37) Time compression problem - 10-year war feels like weeks or months with no passage of time indicated. Troy's geography poorly established - unclear city layout and siege logistics. Siege warfare portrayed as single-direction battle rather than comprehensive blockade. Thematic Elements & Religious Context (56:38 - 01:05:46) Gods' role minimized to hint at divine influence without direct intervention. Moral philosophy embedded in Achilles-Briseis conversations about mortality and divinity. Historical accuracy questioned regarding Bronze Age vs Classical Greek terminology and social structures. Casting and Performance Critique (01:05:46 - 01:15:32) Sean Bean as Odysseus underutilized despite perfect casting choice. Peter O'Toole as Priam noted as big casting choice but limited screen time. James Cosmo casting questioned as underused Trojan general. Improvement Proposals - Sam's Pitch (01:15:32 - 01:26:16) Title change to 'The Wrath of Achilles' to better reflect actual story focus. Sean Bean expansion - more scenes showing passage of time and war strategy. Runtime reduction - cut Trojan perspective to focus on Greek side and Achilles' journey. Narrative structure - use Odysseus as storyteller/narrator rather than voiceover. Improvement Proposals - Vanessa's Pitch (01:26:16 - 01:36:20) Scope change to focus on Achilles from moment Odysseus recruits him. Character development - establish Greek power structure and vassal relationships. Agamemnon characterization - emphasize him as villain representing imperialism more clearly. Improvement Proposals - Casey's Pitch (01:36:20 - 01:45:13) Geographic clarity - establish Troy's layout and siege positioning with additional CG shots. Time passage - visual indicators and dialogue establishing years-long conflict. Battle variety - different environments including sea battles and raids on surrounding areas. Violence balance - between theatrical cut's sanitization and director's cut's excess. Final Discussion & Wrap-up (01:45:13 - 02:05:58) David Benioff background revealed as Goldman Sachs executive's son, explaining Hollywood access. Vanessa's organization - Vin Vitalite, DC women in wine industry nonprofit with 501(c)(3) status. Scholarship program launching 2025 for women in wine industry. This week, the Bandwagon is stripped down again as the dynamic duo of Dave and Tunney guide you through the week around the Nerdosphere. Netflix had its annual fan event and mega-preview party, Tudum. The event has become notorious for dumping a slew of trailers for almost all of Netflix's upcoming projects for the next 9-12 months. This year was no exception, and we received trailers for eagerly anticipated projects like Frankenstein, Squid Game Season 3, Happy Gilmore 2, and the long-awaited announcement about Stranger Things Season 5, along with the release dates for the separate volumes of the final season. Amazon Prime, not wanting to be left out, dropped a trailer for Season 2 of Gen V. The guys then examine the significant drop in viewers for the season finale of The Last of Us and question whether the series could be at risk of cancellation. This fate befell another popular franchise as The Wheel of Time was canceled by Prime. Are there hidden similarities between the two shows that should concern fans of HBO Max's most popular series of all time? As if HBO Max didn't have enough problems, we've been informed that the three lead roles for the Harry Potter reboot have been cast. Do these kids stand a chance, or will they be crushed by the inevitable comparison to the original three actors from the movie franchise? In much better news, though, DC and Marvel Comics are on the verge of releasing the first crossover event in over 20 years. With the two comics' super-powers working together, Dave and Tunney ponder what other crossovers they might want to see. @AttitudeAgg@WrestlngRealist@itsReyCash@PCTunney@itsmedpp@ViolentAesop@TheMindlessPod@therealcplatt@ChairshotMedia@BandwagonNerdsPROWRESTLINGTEES.COM/TheChairshot - Makes a GREAT GIFT!!!About Bandwagon NerdsJoin Patrick O'Dowd, David Ungar, PC Tunney, Rey Cash, and DPP as they keep everyone up on all things nerd and maybe add some new nerds along the way. Things Discussed: Bryce Spring Review: Underwood actually made some JJ throws. Players who stood out on film review: Deyvid Palepale, more impressed with Jalen Hoffman, Avery Gach (pronounced "Gatch") had lots of +2s and –2s, Jordan Young is always around the ball, made the 4th & 1 stuff. OL thoughts by position: RT & RG: Sprague and Efobi were moving people—impressive when they do it Benny, not so much Bobby Kanka. Efobi is the high ceiling/high floor option, could be Hattar or Link. Gach was getting shoved backwards by Chibi Anwunah, who might be good. Think the battle in fall is Efobi the ceiling, Hattar the floor, Link the wild card. LT: ew. When Sam said Michigan should go in the portal for a tackle in spring that wasn't a hopeful statement, and that's how it worked out. Link is a D+, Babalola needs a redshirt, Brady Norton isn't going to happen, period. Ty Haywood, Blake Frazier might compete. Frazier was supposed to a 2-year build and it's been one year, so not expecting that yet. The way Gentry played out last year might have cost them their best option. C: Crippen has the job. Guarnera looked good but had some –2s in there. Strayhorn looked big and athletic but completely lost—at one point he stops mid-pull. WR: McCulley looked good on his one catch, a lot of opportunities to turn around and make a play when they didn't, think Goodwin is a fine 4th or 5th receiver. Semaj has been open, needs QBs to hit him. Haven't seen these guys with good quarterbacking yet so who knows: Bell, Moore, Morgan, Marsh—they could all be good and we wouldn't know yet. QB: We want to get Underwood running more—that 3rd read should be running not throwing a contested ball. RPOs: We're gonna see a lot more of them this year under Chip Lindsey, which means we'll see more man coverage, which then gets back to the receivers and who can win 1-on-1. CB: The flipside is JoJo Edmond was the guy in coverage on a lot of those passes, looks hard to beat, gave up the edge on the big Haynes run. Sug Hill? Sam says without saying that they want to keep him motivated to do things that aren't just his talent. DT and LB are STACKED. Will be very deep and strong this year and are set next year with Palepale and maybe Anwunah. Yaxel: Don't get your hopes up; pretty much every mock draft has him 35-38 and those are guaranteed contract positions so we think there's going to be an NBA team willing to put them on their roster next year. Hockey: Fascinating offseason as Michigan is trying to poach a goalie and most of their new top-six, including the #1 overall pick next year, from Canadian Juniors. Won't know until their playoff ends.

I just read an article in Wine Enthusiast that Riesling is one of the fastest-growing wine varieties on the market. According to the article, people are looking for crisp-bright wines; of course, Riesling fits that bill. Our first wine says it pairs well with chicken, fish, and spicy cuisines. Nero D'Avola is known for its dark fruit-driven flavors, full-bodied, and medium to medium-high tannins. In addition to the dark fruit, may get flavors of licorice, tobacco, and pepper.Meritage is a wine blended with the Bordeaux grape varieties, typically from outside of Bordeaux. The five Bordeaux grapes are Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, and Petite Verdot. Pronounced like “heritage”. Tonight, we try these three wines from Trader Joe's.2023 Emma Reichart Dry Riesling, purchased for $5.99. Aromas of apricot, honeysuckle, citrus, minerality, and green apple. This wine comes from Germany with 11.5% alcohol.2022 Epicuro Nero D'Avola is from Sicilia DOP. Trader Joe's had this wine for $5.99. Fermented and aged in stainless steel. It has 13.7 g/L of residual sugar making this an off-dry wine. Reverse Wine Snob says aromas of red berry and cherry cough drop fruit, with touches of licorice and spice. Less complex but still a very affordable example of Nero d'Avola. It has 12.5% alcohol.2022 Roustabout Meritage from Paso Robles, California. Purchased for $7.99. Aromas of dark fruit with cola, tobacco, and pepper. Many reviews mention a jammy or over ripe fruit taste. 13.6% alcohol. This wine has 44% Merlot, 39% Cabernet Sauvignon, 15% Malbec and 2% Cabernet Franc. Next week we are learning more about blind tasting. We are also going to reminisce about the 70's.

Men, day 32 of our Lenten journey with St. Joseph is here, and it's a powerful one. As Holy Week nears, this episode dives into why St. Joseph, a humble layman, strikes terror into the devil's heart. I'm reading straight from Father Calloway's Consecration to St. Joseph, sharing the gripping story of Blessed Bartolo Longo, a former satanic priest turned Dominican who found redemption through St. Joseph's intercession. From occult darkness to building the Basilica of Our Lady of the Rosary in Pompeii, his life proves St. Joseph's title: Terror of Demons.  Here's your challenge, men: reflect on St. Joseph's virtues and ask, How can I make the devil fear me? Focus on one area to improve today. Want to protect your family and lead them to heaven? Become an apparition of St. Joseph. His fatherhood is our model; his power, our weapon. As we head into Holy Week, let's step up and make demons flee.  Hit play for a reflection that'll strengthen your resolve. Subscribe on Buzzsprout, YouTube, or wherever you listen, and email us at themanlycatholic@gmail.com with your thoughts. Tomorrow, we keep pushing to be saints.  Products/References Mentioned:  Consecration to St. Joseph by Father Donald Calloway  Basilica of Our Lady of the Rosary, Pompeii  Blessed Bartolo Longo's book of meditations and prayers to St. JosephPowerful Quotes:  “The fatherhood of Saint Joseph terrorizes the devil. The humility of Saint Joseph terrorizes the devil. The charity of Saint Joseph terrorizes the devil.”  “Pronounced often and with great confidence the name of Jesus, Mary and Joseph. Their names bring peace, love, health, blessings… and a terror to demons.”  “If a man allows himself to be an apparition of St. Joseph, imitating the virtues of St. Joseph, Satan becomes powerless in his attacks against the family.”Key Takeaway:Pray to St. Joseph daily, invoking his name with confidence, to protect your family and grow in the fatherhood that terrifies Satan. It has grip a texture - more so than white wine.”Gros Manseng Orange Wine £7.50 @asda ASDANicola paired: @millerharris Tea Tonique @dior Thé CachemireHelena chose: Amarone: “A brooding and powerful (Italian) red wine style that's full-bodied and rich. Pronounced notes of dark, ripe cherry and milk chocolate on the nose. On the palate, it's velvety with darker, bitter chocolate notes, a hint of rose and an incense-like spiciness.”Masi 'Costasera' Amarone della Valpolicella Classico DOCG, £33.74 (‘mix 6' price) @majesticwineMajesticSuzy paired: @bdkparfumsparis Tabac RoseHelena chose: Sauternes: “A lusciously sweet wine with an upfront nose of candied lemon peel, marmalade and lemon sherbet. On the palate, marzipan notes with more tropical notes of mango and honeyed apricots. There's a refreshing, zingy acidity though so it's not cloying.”L'Or Du Ciron Sauternes, £13 half bottle, @marksandspencerfood & @ocadouk OcadoSuzy Paired:@kushbuperfumery MausamHelena chose: Morgon - Beaujolais 'Cru': “A lighter red wine style (perfect for turkey) that's famously tangy, bright and fresh with notes of ripe strawberry and raspberry leaf on the nose. The palate is more about ripe raspberry fruit with subtle cinnamon and clove spice from a touch of oak. There's a slick of alinity throughout that helps with its freshness.”Morgon - Beaujolais 'Cru': Morgon La Chanaise, £13.99 WaitroseNicola paired: @millerharris Myrica Muse This is our last episode of the main pod for 2024 - we can't wait for the fragrant adventures of next year (SO many plans already!)
