Craft breweries selling out to "big beer" has been happening for almost as long as long as craft beer has been a thing (check out a timeline here), and Stone Brewing is just the latest in a long line of favorites that did just that. Stone Brewing was sold to Japanese brewer Sapporo for $165 million just a few weeks ago, and many in craft beer are still digesting the sale. On this week's episode of Brewery Adventures, Joel Geier joins me to discuss Stone Brewing and breweries that sold out. We talk a little about the history of Stone, from their beginnings in the 1990s as a fiercely loyal independent brewery to their multiple lawsuits protecting their brand in recent years. Along the way they built some incredible and memorable taprooms, including their locations in Escondido, San Diego, and Richmond. We discuss the locations that we've visited. We also discuss the beer of course - Stone was a pioneer in bringing the West Coast style IPA to the masses across the country, and their "Arrogant Bastard" was the rude introduction to craft beer for a lot of young, brash drinkers. We also discuss other craft breweries that "sold out" to the big boys, including breweries like Leinenkugel's dating all the way back to the 1980s. Of course Anheuser-Busch has been a big buyer of craft breweries, including their Goose Island purchase that sent shockwaves through the industry. A few recent sellouts seem to have gotten passes as drinkers are less harsh on them than the others - we're talking about brands like Bell's, New Belgium, and Lagunitas among others. We discuss why we think some of these brands are still highly regarded while others seem to be put on the back burner. We also discuss how we handle visiting these non-craft breweries when we plan trips for Brewery Adventures and Brewery Travels across the country. Welcome, welcome to The Best Five Minute Wine Podcast, I'm your host, Forrest Kelly, from the seed to the glass wine has a past. Our aim at The Best Five Minute Wine Podcast is to look for adventure at wineries around the globe. After all, grape minds think alike. Let's start the adventure. Our featured winery is in our last conversation, Doug. We ran out of time, so you couldn't explain Cocktail Lounge. What's that about it at IG Winery? The history on that was that we have a lot of locals who come in and do tastings, and they began coming in and saying, Look, you know, I've done plenty of tastings. Can I just have a glass of wine and sit and enjoy the tasting room and hang out with my friends? And of course, under Utah law, we can't just pour a glass of wine as a winery. However, if we acquired a bar license, we could pour you a glass of our wine and let you sit and enjoy it. So we did that. We went out and got the bar license. And but under Utah law, if you have a bar license, you have to also pour some cocktails under that license agreement. So we made up a few cocktails. And so from five p.m. to 10 p.m., you can come in if you don't want to do a tasting, you can come in and have a nice handcrafted cocktail or a glass of wine and enjoy the winery that way. Yes, looking at your menu, I see your handcrafted cocktails, your Maple Manhattan, The Arrogant Bastard, The Starter Wife, Caitie's Hard Iced Tea, Sweet Apple Spice, the IG-Tini, the wine tasting experience. Can you explain that? Well, we will do a tasting. We typically do five different wines as part of your tasting. If you're the type that likes to sit and have an explanation, we like to walk everyone through an explanation of each wine where it's from, how we made it, what the unique taste you know, components are of that particular wine and just, you know, take our time. So a tasting could take about an hour. On the other hand, if you're the kind of person that really just wants to have your wine and be left alone, it can go a lot quicker than that. So you moved into your new facility and you've got the cocktail lounge. And who's designing that you? I did. Yes, you did. All right. Yeah, yeah, it's been good. We used a lot of the old building materials that were there before we remodeled the building, so we gave it kind of a rustic-chic feel. It's a very inviting place and people enjoy the vibe a lot. I can tell just from our short conversation that you're very ambitious. You've started this winery with no previous winery experience and now you've moved into a brand new, beautiful facility. You've designed this cocktail lounge. I've got a feeling that you've got your fingers in something else as well. And then we just recently created the Utah Wine Trail, which will open in the spring of this year. And that'll be you've seen. I know these trails around, you know, different states where you, you follow the map and go to each one and get your card punched or something like that. And when you visited all the wineries, you get a little gift, and it's obviously designed to encourage everybody to get out, hit all the different wineries. And so we're starting that this year as well. So we're excited to see the growth and what the future has. Quite a little wine legacy here in Utah. Well, we're trying. That was our goal when we started out and think, thank heaven. We've seen some success with that, you know, to that point when we started. As I told you, we were the only ones in town as of today. Now there are six wineries in southern Utah that have grown up since we started this 10 years ago. So we've been kind of the trailblazer, if you will, for everybody else who's come along afterward, and that's by design. We wanted to see this area become a tourist. You know, wine begin to be able to promote wine tourism. So there have been several additional vineyards planted now. And like I said, six wineries are now open in the southern Utah area. Today we have a very special guest, chef Eric Greenspan. Eric has over 20 years of experience in the culinary world, having worked with chefs such as Alain Ducasse and Rocco DiSpirito, and apprenticing at the three-Michelin-star El Bulli in Spain. He was executive chef at several successful restaurants in LA, including Patina, The Foundry, and Maré, and is a noted cookbook author and regular judge on Guy’s Grocery Games. Eric is on the show today to talk about ghost kitchens and virtual kitchens, as he’s an expert in this emerging field. In 2017, he started his own delivery-only virtual kitchen operation, Alt/Grub/Faction. He also leads the culinary team for Virtual Dining Concepts, which partners with celebrity food brands like Mariah’s Cookies, Tyga Bites, and MrBeast Burger. We sought Eric’s insight about this new ecosystem of delivery-only dining in light of CloudKitchens opening its first ghost kitchen in San Diego, the Barrio Food Hub. Eric entered this new area of the culinary world when he realized that with all of the restaurants he was running, he was spending most of his time in the car driving from one to another. His solution was to gather all his concepts together and make them available for delivery in a ghost kitchen (which rents space for prepping and cooking only) that he operated out of CloudKitchens’ LA location. He says this environment is appealing for young chefs, since renting a space in a ghost kitchen costs much less than opening a traditional restaurant, and all the money saved on rent can be used on advertising and marketing. Although his operation was successful, he could deliver food only within a four-mile radius of the ghost kitchen. That’s why Eric teamed up with Robert Earl, founder of Planet Hollywood (who was renting space right next to him)—they realized that their brands did not have a future in ghost kitchens, and they developed their own virtual kitchen company: Virtual Dining Concepts. In Hot Plates, Claudette Zepeda's new restaurant, Vaga, just opened, and Troy got the First Look. Chef William Eick is serving Japanese-style fried chicken out of his new restaurant, Naegi, in Oceanside. Matteo Cattaneo, founder of Buona Forchetta, also has a new fried chicken concept in South Park, Chicchirichì at Matteo. After being closed for two years, Storehouse Spirits finally reopened last week in East Village with their own line of gin, vodka, bourbon, and rum, as well as a restaurant on site. In Two People for Takeout / Two People for $50, Eric’s perfect night in involves MrBeast Burgers and Mariah’s Cookies, while watching Guy’s Grocery Games. Troy can’t wait to check out Weapon Ramen in Liberty Station, Phillip Esteban’s new eatery. David says once he gets back to San Diego, he’s looking forward to enjoying an Arrogant Bastard and a veggie cheeseburger at Stone Brewing at the airport. When to outsource your content production. Brad began by impressing that this is not a binary choice—either outsourcing content or not. Rather, it depends on the project. Some pieces may be better handled internally. How to outsource content production. “The problem in starting is that many don’t have it written down,” says Brad. What’s needed for a good content handoff? Brand guidelines usually have info on the logo and font type but there are no guidelines for writing.” Brad encouraged brands to consider things like how formal or informal the writing should be, the use of contractions, and references to humor and pop culture. Including examples is also helpful. He also shared a simple tip: Voice Memos. Using this app on your phone to talk as the brand can be useful background info for your outsourced team. Steve Gonzalez from Stone Brewing in Napa is our guest on Brew Ha Ha with Steve Jaxon, Mark Carpenter and Herlinda Heras. Check out the Stone Brewing blog too, here. Stone Brewing is based at Stone Brewing World Gardens & Bistro, a big facility located in Escondido, near San Diego. They also have a brewery in Richmond, Virginia and Shanghai, China. They opened their Napa location in May. It is in an 1877 stone building. It has been a warehouse and a dance hall at different times. There is a restaurant there that gets rave reviews. They have an outdoor smoker for brisket and ribs. They also have a lot of vegetarian choices on the menu. Their co-founders, Steve Wagner and and Greg Cook, met each other in Los Angeles in the music business and then they met again in a brewing class at UC Davis. They recognized each other and became friends. They are drinking a Hoppy Lager, 5.8% alcohol, that used three hops, including one that Mark had not heard about. It's Stone Tropic Thunder Lager (second from the left in the picture above). It's called Cashmere. They opened a brewery in Europe to supply their export market. Now they have sold the Berlin brewery to Brew Dogs which has had their UK distribution already for a long time. The Stone IPA is about half of their volume. Arrogant Bastard is one of their most famous brew brands too.  They also have a location in Shanghai, China. Mark notes that there are many beer brands that have opened locations like that as a way of asserting their brand. They are tasting Hoppy Beans IPA and comparing it to some Belgian chocolate that Herlinda brought in. There is coffee in this beer. The coffee comes from a local roaster who has very innovative coffee techniques, which they describe.

[Photo by Matthew Curtis] Few breweries can represent the past, present, and future of American craft beer the way Stone Brewing can. And it’s co-founder, today’s guest, Greg Koch, has been known to speak authoritatively about the entire timeline of craft beer at times. And with good reason—he’s seen and participated in most of it himself. For some, though, his voice can sometimes seem anachronistic. It hearkens back to old, perhaps out-of-date realities of the business that can be jarring against new challenges and priorities for small, independent American brewers—and increasingly those inspired by American brewers overseas. How Stone has navigated the shifting priorities of craft beer has been varied over the years. Sometimes they seem to double down on their initial ethos. Other times, they seem to abandon it altogether. But looks can be deceiving. So this conversation—my first interview with Koch—was an opportunity to hear what some of those decisions have meant to him and Stone over the years. And why they may or may not be in conflict as he and the brand trek back and forth across the ocean in what might hopefully turn out to be a straight line toward some long-term goal. But as can so often happen in this business, it might eventually reveal itself to be a lost-at sea scenario just as easily. It’s almost impossible to tell when the waves are constantly crashing and the winds are constantly shifting and so many people want a hand on that wheel. In this interview, we talk about Stone’s place in the world then and now—growth and layoffs and private equity, breaking off brands like Arrogant Bastard, social media, sabbaticals, and finding the yin and yang with a co-founder. Today's guest is Jay Brooks, the well-known beer writer who is also one of the organizers of SF Beer Week. Jay Brooks has been writing about beer for nearly 30 years, based in the Bay Area. He is a co-founder of SF Beer Week and writes a syndicated newspaper column. Wade and Sean from Olver’s Market are also coming in today. Jay talks about his new initiative called Flagship February, to shine a light on “the beers that got us here.” With all the new beers around, it’s a chance to pause and consider the classics, like Anchor Beer. By flagship beer he means the beer that defines a brewery like Sierra Nevada’s Pale Ale, Stone’s Arrogant Bastard, Firestone DBA and others. Anchor Steam Beer is one of those. Every day there are well-known writers, including Tara Nurin, who will write an article about their first experience with one of those flagship beers. Today is the 5th anniversary of Brew Ha Ha on the radio and the first anniversary of this podcast. Herlinda wanted to pair some cheeses with beer so she invited Wade and Sean from Oliver's Market.  They have Oliver's first private label beer. They have begun with one and will add a stout and a lager in the next few months. They also produce their own wine, so they wanted to have a local brew too.  Their goal was to appeal to all tastes. They brought four cheeses for the four beers. One classic Basque-style from France, a goat's milk Gouda, a locally produced washed-rind, which is Red Hawk from Cowgirl Creamery, and a blue cheese. They are also serving their spicy bar nuts that they serve in their tavern. "We take our cheese very very seriously!" This is SF Beer Week and reports are that crowds are large. It has exceeded Jay's wildest expectations. They struggled to get 100 events the first year and this year there are 800 or 900, all over the Bay Area. Next week Herlinda Heras will be in Bologna, Italy, as a judge in the Italian "Beer of the Year" competition (called "Birra dell'anno" in Italian).

In this episode, the hosts sample three beers from one of the most (in)famous breweries: Stone Brewing Co. They drink Stone’s flagship Pale Ale 2.0, the aptly descriptive Arrogant Bastard, and the newer NXS. On topic, the hosts discuss Stone’s new German brewery and it’s effectively acerbic marketing (especially the beautiful arrogantbastard.com). Off topic, they discuss shower beers and Dan tries to make Alex feel bad, but fails because Alex is too comfortable in his beerulinity. They also spend an odd amount of time talking about last beers and apocalypses, discussing which Buffalo brewery they’d claim and fortify during a zombie apocalypse. Also, Dan is suspiciously silent about a late night, Alex has a brain-stall, and Chris tries to find a loophole to the end of all things.

This week's Beer Sessions Radio features a great pair of guests - BBD's and Beer Menus! Ralph Perrazzo & Tim Irvin, BBD Eats, Rocky Point, Long Island Ralph is the owners of BBD Eats on Long Island. Tim is his sous chef. Perrazzo attended the Culinary Institute of America in Hyde Park earning a Culinary Degree. During school, Perrazzo packed his knife kit for weekend excursions to volunteer in some of the city’s top kitchens, including Jean Georges underthen chef de cuisine Gabriel Kreuther. Perrazzo donated his time to this esteemed kitchen to hone his skills and learn all he could from some of the best around. Ralph worked hard and earned a job offer after graduation in the pastry department. Perrazzo then met and worked with Chef Eric Hubert, who fostered Perrazzo’s creativity over the next three years. He was encouraged to use his mind as vigorously as his hands. After leaving Jean George, Ralph came back to Long Island and worked at the East Hampton's beloved, Nick and Toni’s with Chef Joe Realmuto. This is where he fell in love with the east end of Long Island with all of its amazing produce and agriculture. An interest was sparked soon after to learn more about high volume catering. Perrazzo then distorted his experience to land a cook position at East Winds Hotel so he could learn a new side of the business. He achieved his aim and gained valuable knowledge during his stint back on Long Island. Will Stephens, Beer Menus In late 2008, Brothers Will and Eric were drinking beers and debating their favorites before heading out for the night. Eric backed Arrogant Bastard and Will was pushing Dogfish Head 90 Minute. They searched for a bar serving their favorite beers on google. They came up empty handed, but their disappointment faded when they saw their destiny. As avid beer lovers who started homebrewing at ages 4 and 7, they had to create a website where people could browse and search beer menus. Today BeerMenus.com has 20427 Beer Menus, including 94846 Beers.

Greg Koch doesn’t care if you don’t like Stone Brewing’s Co.’s beer. Case in point, the label on a bottle of Arrogant Ale:   This is an aggressive beer. You probably won’t like it. It is quite doubtful that you have the taste or sophistication to be able to appreciate an ale of this quality and depth. We would suggest that you stick to safer and more familiar territory…   Koch, Stone’s CEO and cofounder, insists that when he wrote that caption back in 1997 when they first released the beer, it wasn’t a marketing gimmick. He really didn’t want people who prefer “fizzy yellow beer” to buy this hoppy, high-alcohol monster without fair warning. Of course, he did have some fun with it, reveling in the mocking tone of the Arrogant Bastard.   “That’s a tone of voice that I attribute to the beer and not to myself. Although maybe there is a little bit of me in there,” says Koch, who with partner Steve Wagner started in 1996 what would become one of the largest and most beloved craft breweries in the United States.   That little bit of arrogance — although you might swap that descriptor out with optimism, passion, or persistence — is in large part what has made Stone the giant success it is today.   Stone Brewing started early in the craft beer revolution, when the market had little interest in bitter, heavy brews, but Koch and Wagner had strong and unwavering opinions about good beer. Season 2, Episode 3 - Four Brewers is on the road! Our first stop in this three episode series devoted to Los Angeles beer is Smog City Brewing Co., in Torrance, California. This week, we’re trying our hand at remote shows, and exploring the LA beer scene. The first stop on the tour is at Smog City Brewing Co., located in Torrance, California. Jonathan Porter and Chris Walowski sat down with us three hours before the release of their bourbon barrel-aged imperial stout named Infinite Wishes, to talk about the brewery and share some tasty brews and interesting stories. Sabre-Toothed Squirrel Labels The first beer, which was served up at a bright and early nine o’clock in the morning, was their “hoppy amber” ale named Sabre-Toothed Squirrel. This beer is made with Falconer’s Flight hops, and could almost be described as “Arrogant Bastard light” in terms of the way the hops and amber malt qualities interact with each another. This sabre-toothed squirrel definitely has some bite… (See what I did there?) Next up is Smog City’s outstanding imperial stout called The Nothing. This beer was originally brewed by Porter at his former brewing home, Tustin Brewing Company, as Double Chocolate Imperial Stout. Coming in at 10% ABV, it contains two types of TCHO cocoa nibs and two types of chocolate malt, and is meant to have a mouthfeel similar to that of a chocolate milk shake. It’s also made with malted oats, which of course, gives John a beer boner. Infinite Wishes Infinite Wishes is the next beer on deck. It’s the bourbon barrel-aged version of The Nothing, and is in the neighborhood of 12% ABV. It was aged in bourbon barrels for precisely 364 days, and it is truly spectacular. It’s quite smooth and hides its alcohol quite well. The barrel character really shines and isn’t too overwhelming or woody. Fans of Smog City were lined up outside of the brewery when we finished recording this episode at 10:00 am, and it sold out in a matter of hours. Here’s to hoping the’ll make this beer again next year… We wrap up the show with a nice, palate cleansing Smog City saison named Saison Contraire. This beer was fermented with Smog City’s house brettanomyces yeast, and then refermanted with two other types of brett yeast. It’s then dry-hoppped and packaged with another dose of brettanomyces to condition the beer in the bottle. That’s a lot of brett, yo. Needless to say, it’s pretty friggin’ great. Smog City Brewing Co. have been at their current location since 2013, but were brewing beers at Tustin Brewing Company under the name Smog City since 2011. They’ve come a long way in the last four years, and we can’t wait to see what 2015 has in store for them. Big, big thanks to the staff at Smog City for having us, and hosting our debut on-location show! Thanks, Smog City! Side note: About halfway through the episode, there is a faint, consistent white noise that can be heard in the background. That was the sound of their CO2 tank being refilled by an outside vendor. Tom talks about his fried salad and the award he received from the governor for getting kids to eat salad. Salad Salad - iceberg, croutons, bacos, and ranch doesn't go well big beers. Taco salad from taco bell is 850 calories and bowl you can eat. Goes well with Modelo or Hamm's beer. All meat salad was made from steak, ham, sausage, turkey, bacon and chicken. RockStar Salad! Make a reduction using RockStar, sugar, lemons and pepper. Don't use the diet version. Add to pine nuts, salad shootered cucumber, and shredded carrots.
