Join Mike and Third Ward head brewer Ryan Burac as they talk about our Hibiscus Peche, the initial release from our Wild Ale program. This pale Belgian inspired ale spent over 15 months in Raumbauer Merlot barrels with a select blend of Brettanomyces cultures. A full, secondary fermentation was spurred on by the addition of yellow peaches. Then the beer was treated with Hibiscus flowers and Lemon Grass. The result is a ruby hewed, citrusy, herbal, and sweet-tart beer with more layers of complexity than an artisanal croissant.
