Having food options is a way to bring in new customers and to keep fans coming back. There are many ways a small brewery can approach a menu and this month we're talking with folks who have dedicated kitchens and robust food truck programs. First up, Tony Cordova of New York's Scale House Brewing. Cordova, the Head Brewer, talks about the evolution of the company, what goes into running a pizza program of note, and how the brewhouse and the kitchen work together to create a memorable customer experience. Then Jason Stengl of Colorado's Cannonball Creek shares insight into running a food truck program. When he and his partners started the brewery, they had come from a brewpub chain that did great business. They knew they wanted to focus on beer so opted against having a kitchen. Now they have a robust food truck program - at least one each day of the week they are open. He shares insight on how scheduling, managing, and working with those businesses has its own challenges. Nick Gislason, co-founder and Head Brewer at Hanabi Lager Co. is our guest on Brew Ha Ha with Herlinda Heras and Daedalus Howell. Herlinda Heras is just back from Belgium and brought back so much beer that she had to pay for overweight suitcases. Daedalus is also back from his own trip to Paris and London. He gets to reconnect with Herlinda for a few minutes before having to leave for an event later this evening. One of the beers that she brought back is from the Saint Sixtus Monastery in Westvleteren, that she visited, and Daedalus gets to taste it before he has to take off. Hanabi is Japanese for "fireworks" The labels feature drawings of the patterns that different Japanese fireworks make, up in the air. Nick explains that “hanabi” means fireworks, in Japanese. “Hana” means flower and “bi” means fire, so literally their word for fireworks means “fire flowers.” The fireworks manufacturers used these drawings in the 1800s to describe their products, before photography was available to show the patterns that they make. Nick grew up on San Juan Island in Washington, and learned brewing from an uncle who was a home brewer. In college he brewed at Boundary Bay Brewing in Bellingham, where he met his wife. They both became winemakers and launched Hanabi Lager about six years ago. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. They are tasting the Hana Pilsner, which Herlinda says has a refined taste. Nick explains that beer is made from grain, and water, and hops are like a spice. Hops is like the barrels to wine, where the grapes are the main ingredient. So Nick focusses his energy in using the most delicious grains in the world. Of course, Foster's closed and that left them without a home and without folks to drink their beer. Who bought it during that time? We've interviewed them on here, so it won't be a surprise to many of you. In fact, Mike ended up taking one of his employees and now he's the head brewer and COO of the company, Ken Warden, who we'll be talking to as well. Mike and Ken will tell us how they got into beer, the successes and failures, and Mike talks about dying. Yes, he's officially died and been brought back. Liz Chism has been an entrepreneur for over 11 years. She started out her entrepreneurial journey by starting a craft brewery with her husband and being the COO and Head Brewer. After that journey ended, she started Systems into Freedom where she is a business operations coach who strategizes with business about how to organize and streamline their operations so they can create freedom through their business. Liz seamlessly fits coaching around helping her husband in his real estate business, running the house, raising their three children, and homeschooling. “It wasn't until my husband and I decided to start a craft beer brewery that I found my passion for organizing, streamlining and strategizing–how to go from point A to Point B in the fastest way possible. “My husband and I fell in love with brewing, the science and the art mixture. And we fell in love with the community aspect that it brought, the ability to bring people together. What's interesting is that most people didn't think that I would be the brewer. They always put the male as the brewer and the female as the admin/marketing person. It turned out I had more talent for organizing and operations, repeating success and creating the recipes. In the end I was the brewer and did all the operations. My husband's talents were more of that CEO mentality, that visionary, and he handled the business side. We ran it for almost five years but ended up closing down in 2018 and filing bankruptcy in 2019. And that's actually when we pivoted. There's a lot of things about the brewery that we liked, but some aspects weren't a match for where we wanted to be and what we wanted to do with life. It was actually a moment where we could redesign our life however we wanted to. Based on what my husband and I learned while building the brewery, I started a coaching business called Systems into Freedom. It is designed to really help business owners put the systems in place so they will not get burned out. Those systems need to be incorporated into the culture of the business and leverage their employees to become leaders.

Andy Farrell is the brewmaster of Bell's Brewery, overseeing innovation and recipe development at both the Comstock Brewery. Andy has helped bring dozens of brands to life, including Hazy Hearted, Light Hearted, and Oberon Eclipse. He has represented Bell's at several conferences and numerous industry associations.Born and raised in Kalamazoo, Andy first started working at Bell's in 2000, working in brewing, cellar operations, as well as leadership roles, serving as Head Brewer, Brewing Innovation Manager, and his current role as Brewmaster. Andy leads a great team of brewers who manage specialty brewing, including new product development, barrel aged beers, portfolio optimization, and raw material assessment, as well as research and development brewing trials at both the Comstock, and Kalamazoo breweries. Andy has been influential in building the innovation brewery, which has allowed Bell's to quickly take new ideas to market.

As a drinkers, it's hard not to get excited when you hear brewers talking about ingredients. The passion, the exploration, the flavor. There is so much the main ingredients in beer bring to the glass. This week it's a trio of brewers talking about how they approach ingredients, from hop selection, to heirloom corn in lagers. She enrolled in a craft beer brewing program at a local college, found a job at a small local brewery (Fidens) and worked her way up from the taproom and can sales. Now, she brews beer every day of the week! Frank Zagami is Co-founder/Head Brewer of Deciduous Brewing Company in Newmarket, NH with his wife Maryann. Founded in 2014, he is striving to brew exceptional beer within all styles. And Spencer Longhurst is a graduate of the American Brewers Guild's Brewing Sciences and Engineering Program. Last weekend in New Hampshire, amid the revelry of the Schilling Beer Co. Oktoberfest – a festival I'll say should be on your radar for next year – I got together with some brewer owners from around the country to record this conversation. There is a lot of uncertainty in the industry these days and folks are trying to figure out the path forward in real time. Talking with and listening to smart people offers up a lot of perspective. Guests Peter Kiley is Brewmaster and Co-Owner of Monday Night Brewing, and is an award winning brewmaster, winemaker and distiller from Atlanta, Georgia. From Monday Night's inception, Kiley's creative vision, recipe development and multifaceted approach to alcohol production have set the groundwork for the brewery's worldwide notoriety. Kiley is a founding member of the MBAA Georgia chapter, a member of The Hop Quality Group, a published scientific author and has presented at both The World Brewing Congress and The Craft Brewers Conference. Tom Beckmann is the Owner and Head Brewer of Goldfinger Brewing Company in Downers Grove, Il. Upon graduating from the World Brewing Academy Master Brewer's Diploma program through Siebel Institute of Technology and Doemens Akademie in Munich, Germany, Tom became a production brewer at Lagunitas Brewing and later worked several years as a pub brewer at Emmett's Brewing Company.
