Advent 2023 Day 06 is from another defunct brewery. Also a wild ale brewery, Iris Wild Ales existed for a moment and only released four beers.  They were well received but just ahead of the market. Christel is from 2017 and is a barrel aged farmhouse ale. This might be one of the last bottles left in the world. Look around beer today and it's easy to find lots … beyond it. Breweries are making hard seltzer, canned cocktails, wine, or opening up restaurant extensions. Whether it's over the counter at a taproom or in a store, the challenges to sell beer have never been more unique and plentiful as people can now choose to drink just about whatever they want in a variety of formats, flavors, and experiences. Which is part of the reason why the growth of New York City's Grimm Artisanal Ales shouldn't come as a surprise. The company was started a decade ago focused on beer, but the curiosity of its founders, Lauren and Joe Grimm, has helped it expand beyond it. Just over a year ago they launched Physica Wines, a wine-making spinoff focused on low-tech, spontaneous fermentations with regionally-sourced grapes and other fruit. Then more recently, it was Lala's, a New Haven-style pizzeria. All three businesses and their products share a similar passion and purpose and represent what Lauren and Joe see as natural extensions of their past decade of work. If you're a beer fan, you may know Grimm as a once-nomadic brewery making beers beloved by enthusiasts, whether IPAs for Wild Ales. But in this conversation, we'll get into what drives Lauren and Joe's interest in doing more beyond beer and how they go from experimenting with food and beverage at home to serving their creations for customers.

We survived Thanksgiving and are back in the studio this week with our friends from Printer's Ale Manufacturing Co.  Printer's is located in Carrollton, GA, about 50 miles west of Atlanta.  Not a bad trip for ATLiens on a weekend but far enough they don't get as much hype as some of the in town breweries.  That's too bad, because they are making some great beers and doing a lot of other cool things in Carrollton. On this visit we introduced their Woodcut Wild series of beers in Kriek, Framboise, and Peche.  After brewing, the mash for these heads to Printer's coolship but does get a little punch up with some commercial strains when going into barrels.  Oh yeah, they also brew with aged hops grown right at the brewery, and future beers will use fruit from their orchard.  Neat. We chat with Specialty Brewer Josh Watterson and owner Greg Smith about the importance of terroir in brewing, something that was previously (mostly) ignored by American brewers.  We discuss the Qatar/FIFA World Cup kerfuffle with Budweiser, mall Santas, what's in the pipeline at Printer's, and the size of Batman's mouth. We continue with our Wild Ales & Fermentations segment, where I chat with brewery owners that are pushing the envelope in regarding to the unique types of beers they are producing and offering to the craft beer market.In part 2, I chat with Husband-and-Wife duo Alex & Yvonne Jarman from Botany based brewery, Slow Lane Brewing. Less common than pork roll but more common than The Jersey Devil are wild ale breweries or blenderies in The Garden State.   In this episode we talk with Tom, owner of Muckraker Brewery in Sussex County, NJ.  Tom is quietly churning out super clean and super delicious beers in the Northwestern most part of this state.  Not only does Tom brew the beer but he also bottles it, cans it, pours it and delivers it to 12 NJ counties.  Tom turned out to be a super interesting guest with some great stories about his brewery and his time spent at other breweries...think Pajottenland.  If you don't recognize that word listen in and learn a bit about what makes Muckraker Brewery so different and so special!  We hope you all enjoy!

We then took 120 gallons of that beer and racked it onto another 200 pounds of peaches for an additional 2 months. The result is an explosion of fuzzy peach flavor.500ml | 16.9oz | 5% ABV Mead Berry with Vanilla:Made with berries from Lost Cause Meadery, this Wild Ale Collaboration contains hundreds of pounds of blackberries and raspberries that previously rested in finished mead.Exploding with bright raspberry and a blackberry-jam finish, the tart berries and golden ale is perfectly balanced by a beautiful sweetness from the honey. We took a portion of the mead berries and rested it on Bourbon-Soaked Madagascar Vanilla Beans. Adding the vanilla created a sweet berry pie flavor and is one of our best pastry sours to date.500ml | 16.9oz | 5% ABV Darth Citrius:Darth Citrius is made with the best Bearss Limes, Meyer Lemons, and Satsuma Mandarines we could get our hands-on. All this citrus was picked fresh off the trees at our friends Summer's place in Escondido, CA.500ml | 16.9oz | 4.7% ABV Black is Beautiful:The Black is Beautiful initiative, created by Weathered Souls Brewing Co., is a collaborative effort amongst the brewing community and its customers, in an attempt to bring awareness to the injustices that many people of color face daily.One hundred percent of this beer's proceeds will go to support Color of Change. Color of Change leads campaigns that build real power for Black communities. They challenge injustice, hold corporate and political leaders accountable, commission game-changing research on systems of inequality, and advance solutions for racial justice that can transform our world. Made in collaboration with our friend Samantha Olsen, we chose a grain bill extremely reminiscent of an Imperial Stout. Coming in around 9% abv, it has a light pleasant roasted character with deep notes of plum and a malty sweetness to compliment the acidity for an extremely well balanced sour stout/dark sour. In this episode we sit down (virtually) with Sean White, co-owner and head brewer at Little Fish Brewing in Athens, Ohio, for an expansive discussion of sour beers and wild ale brewing. With two World Beer Cup medals for their barrel-aged sours (a bronze for Petit Poisson in 2018 and a gold for Barrel Aged Woodthrush in 2016) Sean and the team at Little Fish are one of Ohio’s leading practitioners of this artistic form of brewing. The discussion covered so many topics we had to split it into two separate episodes. In Part 1 we discuss the meaning of terms like sour beer and wild ale, capturing yeasts from the wild, Brett beers, sabering bottles, mixed fermentation saisons, alternative grains, Little Fish’s takes on oud bruins and Flemish reds, and what might be an entirely new style, farmhouse malt liquors.  Look for Part 2 to be released in mid-May.

On today’s epsiode, I sit down with Matt from Odd Breed Wild Ales and talk about his journey in to brewing and what he has going on at his brewery in Pompano Beach, FL. Let me start this off by saying  I loved every beer I tried at his place.  Odd Breed is the definition of a labor of love.  His beers aren’t gimmicky nor trendy, as he says, and they take literally months to craft.  His shortest production beer takes almost 7 months to craft.  I found that they patience and labor that Matt puts in to his experimental and wild beers results in some absolutely delicious brews. If you’re a fan of well-crafted beers, this episode is for you.

In the tradition of American Wild Ales, a name like American Solera might sound fundamental—but it’s a relative newcomer for brewer/founder Chase Healey. In Tulsa, Oklahoma, far from the hotspots and critical masses of drinkers for such delicacies, Healey has carved out a life and a living that's far different than the way he entered brewing. His first venture, Prairie Artisan Ales, in which he still plays a small supporting role, is quickly growing from one state to the next. And it was his come-to-Jesus moment with the vast potential for Prairie that helped him understand his more personal goals as a brewer. Through that shift in focus, and his curiosity surrounding Wild Ales, an entirely new, unproven chapter of his life opened. But for all the anxiety of venturing into unknown territory, it's his obsession with simplicity that seems to keep him keeled.  I caught up with Healey at RateBeer Best in Santa Rosa this year, fresh off his second place win for best new brewery in the world with American Solera, in addition to his legacy wins for top beer and top brewer in Oklahoma for Prairie in 2017.
