Uppvuxen i Norrköping med föräldrar från Bangladesh.- Bengaliskt idag betyder att det kommer från Bangladesh, berättar Rizwan. Medan det antika Bengalen motsvarade dagens Indien, Pakistan, Bangladesh och Sri Lanka.Först blev Rizwan intresserad av fransk och italiensk mat. Men när han flyttat hemifrån saknade han den bengaliska maten hemma, och började fördjupa sig i matkulturen.Intresset blev till en kokbok med bengalisk mat: Masala mama, en introduktion till bengaliska köket.- Det är många bengaler som driver indiska restauranger, säger Rizwan. Det indiska är lite mer bekant och lättare att sälja.- Men det är stor skillnad på bengaliska och indiska rätter. Samtidigt som det finns många likheter.Som en introduktion till maten bjuder Rizwan på bengalisk fika.Kolar phita, friterade bollar gjorda på banan och rismjöl, kryddat med svartkummin.Singara, friterade degknyten med potatis.Jhal muri, puffat ris med grönsaker och stark senapsolja.Doodh cha, ett sötat och kryddat te med mjölk.- Det här är typisk fika. Sånt man bjuder på när nån kommer på besök. Bengalisk fika är både sött och salt.
