Thug Rónán Mac Con Iomaire léargas dúinn ar scéim nua maoinithe atá fógartha ag Údarás na Gaeltachta.
Regarding food in Irish tradition, Kevin Danaher, writing in 1964, noted that "Sometimes we get the impression that Ireland, in ancient times, was a land of plenty, and again we get quite the opposite impression - that our forebears lived out their lives on the very edge of starvation. In reality both these impressions are wrong." As an expression of culture that permeates every aspect of life, food holds a central place in Irish folk tradition, and for episode 41 of Blúiríní Béaloidis, I am delighted to be joined by Máirtín Mac Con Iomaire, Senior Lecturer in the School of Culinary Arts and Food Technology at Technological University Dublin to discuss food in Irish folk tradition. Máirtín, along with Dorothy Cashman, was co-editor of the recent "Irish Food History: A Companion", published by the Royal Irish Academy in hardcopy in 2024, and available freely online via EUT+ at the following link: https://arrow.tudublin.ie/irishfoodhist/1/ For this episode of the podcast we discuss Máirtín's background, exploring the way in which he came to take such an interest in Ireland's food history, as well as examining the themes of continuity and change in the context of the Irish diet. Join us as we explore Irish food traditions in the context of calendar observances, the life cycle and ritual observances, as well as considering regional foodways, the importance of hospitality and the impact of the Irish language on our understanding of both food and place in Irish tradition. From milk, butter and the Brehon Laws, to spice bags and purple Snack bars, join us as we explore changing attitudes to food in Ireland. This is also the first episode of the podcast which we have been able to record on video, and I would like to extend my sincere thanks to Andrew Fogarty, Veronica Aguilar Olmos and Dominic Martella for their support for the series to date, and for organising the shoot. I hope listeners and viewers will please forgive my excessive humming-and-hawing in this episode - I felt quite nervous in front of the new setup! We talk a lot about the future of food on this podcast, but what about the past? Máirtín Mac Con Iomaire is on a mission to uncover and celebrate Ireland's deep-rooted food history. From the earliest evidence of dairy farming over 5,000 years ago to trade networks that shaped our cuisine, he explores how food connects us to our past. An award-winning chef, educator, food historian, and broadcaster, Máirtín is also the co-editor of ‘Irish Food History: A Companion', a book that traces Ireland's food journey from early hunter-gatherers right up to modern Irish cuisine. In this episode of Food Matters, Máirtín talks to Mick Kelly of GIY about some of Ireland's most fascinating food traditions, the influence of figures like Myrtle Allen, the resurgence of food storytelling, and the challenges facing Irish vegetable growers today.

Is corned beef Irish? Many people will tell you that it isn't – and that was the story I had heard as well. What makes Irish food special? It's not fancy techniques or luxury preparations, but the high quality of simple ingredients—hiding in plain sight all along. In an age where we can import nearly anything from anywhere, it's a powerful statement to recognize that what makes Irish food unique is its ingredients, from produce, to foraged greens and berries, to seafood, and of course dairy (especially butter). This week's guest is chef and food historian, Máirtín Mac Con Iomaire, who explains that using what's on your doorstep is the real zeitgeist when it comes to Irish food today. Can you imagine being able to tell which farm your butter is from just by tasting it? On today's episode, Max speaks with Máirtín about working with quality ingredients, the evolution of Irish food in restaurants, using stories to promote food tourism, and more!Dyed Green is a project of Bog & Thunder, whose mission is to highlight the best of Irish food and culture, through food tours, events, and media. You've probably eaten eggs as long as you can remember, right?. Did you know 544 million eggs are produced annually in Ireland. But what makes a good one?In a new podcast by the NeighbourFood team, Jack and Joleen find out what the craic with eggs is and speak to one of Ireland's most loved food personalities and founder of the Ballymaloe Cookery School, Darina Allen about her love for hens, her favourite way of eating eggs, how to recognise the freshest of eggs and how to source the best ones. Spoiler alert; Befriend your farmer is the key advice here! But which came first, the chicken or the egg? We pick the brains of food historian Dr. Máirtín Mac Con Iomaire, lecturer in Culinary Arts in the Technological University Dublin for this age-old question who explains how eggs first came to Ireland, the recognition of their nutrition in Irish folklore (seems we've been eating them a long time indeed!) and how eggs were sold to pay the rent instead of feeding the poor during famine times. A lovely listen with some surprises that might crack you up along the way.If you'd like some more info on the history of eggs in Irish cuisine and culture, this is a fascinating read by Dr. Máirtín Mac Con Iomaire Finally, did you know that the number of pleats in a chef's hat was meant to represent all the different ways you can cook an egg? We've made a printable chef's hat for a fun activity you can do with the kids at home. Máirtín Mac Con Iomaire is a lecturer in TU Dublin and a well-travelled chef and TV presenter. He's the world's leading expert in Irish food history, so why he agreed to appear on our podcast, we'll never know. Gearóidín and Peadar chat with Máirtín about the history of Irish ingredients, ancient cooking methods, and an absolute heap of cheese. Why is Irish food not held in the same regard as French, Spanish or even Danish grub? What did we eat before the noble spud arrived on our shores? Why do we eat so little seafood for an island nation? Why does Darach hate coddle? Is it because he's weird? It is, isn't it? Find out all this and more, as Máirtín takes us on a culinary journey a thousand years or more in the making. --- Contact the show at https://twitter.com/motherfocloir or email us at motherfocloir@headstuff.org.
