Chef Carlos Raba was born and raised in the Mexican state of Sinaloa by his mother and her four sisters. He learned to make tortillas by hand in his uncle's restaurant and picked up classic Mexican recipes like cochinita pibil and lengua from his aunts and grandmother. Raba's mother was a journalist who was critical of Mexican politicians, so fearing for their lives, she sought asylum and moved the family to the suburbs of Washington, D.C. when Raba was 17. After he graduated from high school, Raba attended business school for a year and then began working in grocery stores. He started at the Whole Foods in Kentlands, Maryland, trying his hand at different roles—butcher, fishmonger, cheesemonger, and eventually store manager. He. then moved to Giant Foods and worked at various locations for five years. Tiring of the corporate life, his business partner Lane Harlan convinced him to use his creativity and family recipes to open Clavel in Baltimore in 2015. In a Converted American grill, Raba serves the same shrimp ceviche recipe that his familky taught him when he was 6 years old, along withother Sinaloan specialties in a relaxed, communal setting. In 2017, Raba was named “Best Chef. in Baltimore” by City Paper, in 2018 Carlos Raba was name also name “Rising star chef” by Star chef publications and on 2022 Carlos Raba was a “James Beard” semifinalist. Carlos Raba also a practitioner of Brazilian jiujitsu, hold a black belt first degree under Vicente Jr team and his passion for jiujitsu lead him to Co-found Guardian Baltimore a 501(c)3 nonprofit martial arts gym in Remington, Baltimore that offer classes in Brazilian jiu jitsu. The gym is free for kids ages 6 – 18, and offers affordable sliding-scale memberships for adults. the space was founded on the belief that almost everyone wants to be a part of a tribe, and they work daily to serve as a vital space for their community.

We interview Lane Harlan and her business partner Carlos Raba of Bar Clavel. When Lane opened the speakeasy-style W.C. Harlan in 2013, and then Clavel in 2015, most Baltimoreans couldn't locate Remington on a map, and they certainly couldn't pronounce words like aguachile, lengua, ceviche, mezcal, and fundido. But thanks to her and chef Carlos, it didn't take long for Charm City's denizens to learn the lingo and develop an affinity for two of the coolest hangouts in Baltimore. We catch up with the duo to hear about the expanded cevicheria, new mezcal tasting bar, plans for a beer garden, and the experience of sharing a culture's story through food.

Today on Midday, a snapshot of the climate for small business in Baltimore from three married couples who run established and successful businesses. In the first segment, Tom is joined by Tim Hicks and Mariah Acap. The couple runs a family automotive repair business that Tim’s father, Dan, launched in 1982. It’s the Baltimore Body Shop, located at the corner of Sisson Street and 29th street in Remington. Their YouTube channel and website about building custom cars is called Street Bandito. In the middle segment, Tom's guests are Lane Harlan and Matthew Pierce, the owners of three restaurants here in Baltimore: a speakeasy called W.C Harlan, a mezcaleria called Clavel -- both in the Remington neighborhood -- and their newest venture, a wine ---- sake bar and bottle shop named Fadensonnen, located nearby in Baltimore’s Old Goucher neighborhood.In the last segment, Tom welcomes to the studio Jamyla and Pierre Bennu. They're the creative team behind Oyin Handmade, a line of natural hair- and skin-care products that are made in Baltimore and sold online, at the Oyin Handmade salon, speciality shops and in major stores like Target, CVS and Rite Aid. Jamyla began the company in 2001. Her husband, Pierre Bennu, started working with her at the company two years later. Pierre is also a filmmaker and illustrator. Lane Harlan opened her bar, W.C. Harlan, on an unassuming Remington corner in 2013, bucking convention with the confidence that people would flock to something different. It worked. Despite lacking a sign on the door, a website and a residence on a busy street, the bar drew patrons with its speakeasy-inspired interiors and craft cocktails. Lane followed W.C. Harlan with a Mexican-inspired restaurant, Clavel, that she opened down the street from the bar last year.
