Hey friends! I am in such a good mood today, maybe because I get to talk about an episode that centers around Emily Gilmore! Stick around until the end because I have some fun facts about Kelly Bishop and what inspired her portrayal of the iconic Emily. I hope you enjoy this unedited/informal chat:) Love! My delicious oatmeal recipe: Boil 1 cup of water in a pot. Add 1/2 cup oats to the pot once it's boiling. After 4 minutes on medium heat, continue cooking, but add a little bit of almond milk, a dash of cinnamon, 2 tbsp of chia seeds (this will thicken the oatmeal!), and 1 tbsp of almond butter. Keep stirring until the oatmeal is at your desired thickness. Pour into a bowl and add a few chocolate chips on top. They will melt into the oatmeal and make it taste extra delicious:)! Hi friends!:) Let's discuss this lovely & light episode with TWO double dates involved. Featuring fun facts about the characters of Mrs. Kim and Lane, as well as their wonderful portrayals by Keiko Agena and Emily Kuroda! Here is the recipe I used for the Recipe of the Week. Feel free to try it out and let me know how it went! Strawberry-Blueberry Smoothie (inspired by Sookie and Jackson): Add 4 spoonfuls of frozen blueberries, 3-4 frozen strawberries, 4 spoonfuls of oats, 1 teaspoon matcha, 1 teaspoon cocoa powder, 1 teaspoon peanut butter, and 1 cup of almond milk to a blender. Blend until smooth! :) I love having this smoothie as part of my breakfast! If you do not have frozen fruit, you can use non-frozen, but just make sure to add a few ice cubes to the blender to make the smoothie cold. Feel free to add more almond milk to the blender if you want the smoothie to be less thick. You can also add a sweetener of your choice. Hey listeners!:) Let's talk about handling school gossip, behind-the-scenes fun facts about how the character of Paris was created, and what happens when your parents come to homeroom with you... Here is the recipe I used for the Recipe of the Week. Feel free to try it out and let me know how it went! Sautéed Zucchini (in honor of Jackson's genetically modified zucchini tush lol!): Slice 1 zucchini into 1/4 inch thick slices. Heat 3 tbsp of olive oil in a pan on medium-low heat. Once it's sizzling, add the slices of zucchini. Be careful as it will splatter! I used a splatter guard. After 3 minutes, flip over each slice (or when you notice it getting a golden color). Cook for another 2-3 minutes on the second side. Using tongs, put each piece onto a plate. Serve with any main course you'd like! What a very dramatic start to a new relationship! Will all be forgiven? :) Here are the recipes I used for the Recipe of the Week. Feel free to try them out and let me know how they went! Banana Bread (adapted from www.natashaskitchen.com) · In a bowl, whisk together 1 stick of room temperature butter and 1/4 cup of honey. · Add 1.5 (or 2) bananas to the bowl and mash them completely with a fork. · Add 2 eggs to the bowl and whisk together. · Add 1 1/2 cups of flour, 1 tsp of baking soda and 1/2 tsp of salt to the bowl and mix gently. · Add 1/2 tsp of vanilla extract (and some walnut pieces or chocolate chips if you want). · Pour into a loaf pan with parchment paper on the bottom. Feel free to try them out and let me know how they went! Ube-Coconut Muffins: https://theunlikelybaker.com/ube-muffins-recipe/. To make the ube jam that fills the muffins, see below. Ube Jam (Halaya) (adapted from https://keepingitrelle.com/easy-ube-halaya-recipe/): In a pot on medium heat, pour 3 cups of water and an entire packet (about 4 oz) of ube powder. Add 1 can (about 14 oz) of coconut milk to the pot. Stir together (keep stirring throughout so that it doesn't burn!). At this point, you can add some sweetener to taste, or leave it unsweetened. Keep stirring, and the mixture should boil eventually, which will release some steam and thicken the jam. Once the jam is at your desired consistency you can pour it into a jar, seal the jar, and flip upside down to preserve and cool. Linzer Cookies: https://www.kingarthurbaking.com/recipes/linzer-cookies-recipe - You can fill them with any jam you wish, I used homemade apple jam (see recipe below) Apple Jam: Peel 1 apple and dice it into small pieces. Put it in a small pot with 1 teaspoon cinnamon and 1/2 teaspoon cardamom, start cooking on medium heat, stirring constantly! Add sugar to taste, while it's cooking, so that the apple juice can come out. If you need to soften the apples more, then add a tablespoon of water and cover. It's ready when all the apple has softened and you can mush it with a fork so it becomes saucy and jammy:) I went back and polished up the audio on all my episodes and I have my friend Michael to thank for that.
