In this episode Gary Mansfield speaks to Edgar Arts (@edgar._.arts) Edgar Arts is a collaborative group of three (Luke Edgar, Matthew Huggett and Jay Goodwin), who are all both tattoo artists and fine artists, all of which is created under the same roof in north Essex. LUKE EDGARTATTOO AND FINE ARTIST Luke works freehand to create undeniably creative tattoos. This is only bolstered by his impressive work on metal. Never content to plateau, you can expect fresh perspectives when working with him on your tattoo or fine art project. MATTHEW HUGGETTTATTOO AND FINE ARTIST Heavily inspired by his print methods of working, Matt freely juggles tattooing and art in one hand whilst savouring his morning coffee in the other. His work explores rugged, worn textures contrasting with smooth or negative space. JAY GOODWINTATTOO APPRENTICE AND FINE ARTIST Jay, despite being the least experienced tattoo artist in the studio, is an immense talent with oil and canvas. His photo realism painting technique renders his surreal concepts with great expertise. This confidence with the brush allows him to easily hone his tattoo art. This is a special episode of the podcast, made possible by the underwriting of New Belgium Brewing and our collaborative series, Into the Wild. Last week, New Belgium kicked off their Sour Saison blending tour, starting in California, pulling this rad vintage trailer behind a pickup truck and parking it at bars and breweries across the country. I joined them for that leg of the journey, and again recently here in my hometown of Chicago. Right now, it’s headed back to Denver and then L.A., so you still have time to link up with the tour. One of the reasons this collaboration is so special for us is because it’s helping us devote a portion of our editorial, this podcast, and our design team to a category of beers we love—wild fermentation, sour, wood-aged, mixed-ferm. Those beers that are keeping alive an ancient tradition for a new generation of drinkers. In addition to the articles we’re writing, we also published a print mag, which we’re handing out for free at the events. And we’ve been able to put together some one-off podcast episodes, like this one, featuring Jay Goodwin of The Rare Barrel, and Dick Cantwell, formerly of Elysian, and now the owner of Magnolia brewing, not to mention the author of numerous books on brewing. So while the taproom at The Rare Barrel was full of people sampling and blending Sour Saison, and Dick was demonstrating how to take apart and re-build an oak barrel, we got together on the stage and struck up a conversation about the state of the category.
Our buddy and former Bruer Jay Goodwin, Co-Founder of The Rare Barrel comes in to chat about the good old days, what he's up to at TRB, and a bit of perspective on the world of sour beer these days.
Jay Goodwin, Co-founder/Director of Blending and Brewing at The Rare Barrel and co-host of The Sour Hour podcast, calls in to the show to talk barrel-aged sour beers, bugs, off-flavors and hot sauce. We delve into yeast and bacteria selection, kettle sours, good, great and terrible practices and much more.

Back in Episode 1 we walked you through a triangle test, now it's time to use it! In this episode, we'll describe the experiment and a few episodes down the line, we'll bring you the results of the IGORs testing and take your results as well! Then we're off to the Bay Area, where if you read our blog, you'll know we talked to a bunch of brewers - this week, we bring you our interview with Jay Goodwin of the Rare Barrel in Berkeley as he drops a bunch of sour beer knowledge on our puny little heads.
