The enzyme converts the precursors in barley to free thiols that smell and taste like passionfruit and grapefruit. It's super clean. No off-flavors like burnt rubber or other sulfurous notes. Just tropical aromatics. You don't have to do anything unusual either, like mash hopping. Just pitch dry Tropics and supercharge your hazy IPA.All About BeerAt All About Beer, we're honored to share the stories that define the beer community, and we couldn't do it without the generous support of our underwriting sponsors.

484: Matt Gallagher of Half Acre and Suncatcher Believes Small Can Be Sustainable

Craft Beer & Brewing Magazine Podcast

To some, Chicago's Suncatcher must appear to be a typical neighborhood brewery. The bar is classic Midwest, salvaged from a midcentury tavern. The patio is expansive and inviting, thanks to the plant nursery next door. And the beers come without clever names—just the style, often defined by color, spelled out in plastic letters pressed into the sign board. But when you consider that it was the cofounder of Half Acre who designed and built this neighborhood brewery, it takes on a different meaning. The simplicity that Matt Gallagher has infused into Suncatcher extends from the environment to the beers themselves, and while he's back on the brew deck as the sole brewer, he's chosen to intentionally limit himself. But that doesn't mean sacrificing quality or flavor—in fact, by simplifying, he's able to focus on what the brewery needs to be, and what the beers need to be, and nothing more. In this episode, Gallagher discusses: designing Daisy Cutter so you could smell it from the other end of the bar early challenges in sourcing the hops they wanted the vastly improved growing and processing conditions for today's hops testing the thesis that a small brewery can be sustainable building simple beers with beautiful and expressive ingredients focusing on hospitality and service as much as the beer itself G&D Chillers You know the pain—warm fermenters, stressed yeast, and that sinking feeling when the repair quote lands in your inbox. When you look at the top restaurants around the world, no matter what cuisine they may focus on, there's one commonality they all share, and that's deep relationships with those who grow and raise the very best ingredients. It's the same in beer—you can't be the best at what you do without the meaningful, personal, financial, and long-standing relationships that ensure the brewery has access to the very best quality ingredients. These relationships don't materialize overnight, but for Firestone Walker, they're the product of 30 years of work. In this series, we highlight a number of these crucial growers, brokers, and processors who have played a role in the world-class beer that Firestone Walker makes. Episode 4: The Science & the Art The fourth and final episode of the Source Material series features a panel discussion recorded at the 2025 Craft Beer & Brewing Brewers Retreat, with Firestone Walker Brewmaster Matthew Brynildson, Russian River Cofounder Vinnie Cilurzo, and Mike Roy of hop grower Roy Farms. Through the conversation, the two remarkable brewers and multigenerational hop farmer walk through sensory evaluation of a selection of hops to give listeners a glimpse into the way these hop savants think as they rub and evaluate both classic and contemporary hops. Along the way, these influential brewers address dynamics in the 2025 harvest, mitigating the impact of smoke on hops, new public hop varieties, and much, much more. Celebrating the English Mild

Drink Beer, Think Beer With John Holl

Mild is one of the oldest continuous beer styles in the English speaking world, it was the working class pint, the beer that fueled industrial England, pulled from cask and corner pubs, consumed in volume by people who needed something honest, drinkable and affordable at the end of a long shift. At its peak in the early 20th century, mild accounted for the majority of beer sold in Britain. It wasn't a specialty, it wasn't a conversation piece, it was just beer and then almost disappeared entirely post World War II. By the 1980s mild had been reduced to a footnote. CAMRA waged a decades long campaign just to keep it on life support. So why are we here on a stage or in the grass at Little Beer festival in 2026 treating it like it matters?  Because, the market is quietly telling us something. We're in a moment defined by low and no alcohol growth, a consumer exhaustion with extreme beers, and real hunger for what you can call intentionally simple beers that reward attention rather than demand tolerance.  Mild, a style built on nuance at low ABV, is almost perfectly positioned for this cultural moment. Whether the industry is ready to actually embrace that is another question, and that's what we're here to explore today. This episode is hosted by Blake Tyres of Creature Comforts Brewing Co. He is joined by some of the most thoughtful professionals driving success in this space right now. The episode covers hop terroir and Terroir Tuesdays, sourcing and supply-chain challenges, fresh‑hop practices, international brewing curiosities (including New Zealand harvests), and the role of education in the craft industry. Shanleigh also shares stories from regional beer scenes, festival life (CBC, World Beer Cup), and how the brewing community supports innovation and resilience. Listeners will hear Shanleigh's beer preferences (West Coast IPAs, dry‑hopped pilsners, ESB), chats about style evolution and naming, practical tips on reading ingredient sourcing, her current curiosities (hangover aids like ZBiotics, low‑ABV yeast developments), and lighthearted segments on travel, guilty pleasures, and situational beers. Key takeaways: the value of transparency in sourcing and malt/hop origins, why community and education matter in craft beer, and a rallying call to support local breweries — plus what to expect from upcoming Taproom episodes and festival appearances.

There was a time when "adjunct" meant "cheap beer." One of America's largest breweries even paid millions of dollars to run television commercials during the Super Bowl accusing another of America's largest breweries of using worse adjuncts than they themselves used.Oh, what a world! But for craft breweries, an ingredient is an ingredient. What if adjuncts added flavor?  What if adjuncts actually cost more than malted barley?  What if adjuncts could tell a story of time and place?Corn and rice aren't cheap anymore.  They have a history.  They tell a story.  And good breweries know how to use ingredients to tell the story of great beer. Visit AllAboutBeer.com for more podcasts, to read original articles, and to get info on upcoming events.Click here to support independent journalism covering the beer industry. This Episode is Sponsored by:All About BeerAt All About Beer, we're honored to share the stories that define the beer community, and we couldn't do it without the generous support of our underwriting sponsors. Brent's family has been farming hops down in Motueka for five generations, and their two farms produce quite a bit of the New Zealand hops that make their way into Firestone Walker beer. Joining from Firestone Walker is Tim Miller, raw materials manager and brewer, and it's Tim's job to source the highest quality ingredients, test and analyze them, and make sure that what comes into the brewery is what they expect to come in. Finding great hops wherever they're grown, whether that's Nelson, New Zealand, or Germany's Hallertau, is a big focus for Firestone Walker, and the long-term grower relationships they've built over the past 30 years stretch far beyond North America to anywhere and everywhere that great hops are grown. The script is bad, the plot is ludicrous, and we never even get to see what the bad guy intends to do with his desired magical abilities. Despite all that, Firewalker does have its charms—most of which lie heavily on the back of Louis Gossett Jr. Predictably, in a film with Norris as its lead, emotive acting is in short supply. Let's talk about hop sensory. Last week the craft brewers conference was held in Philadelphia and brewers from around the world worked to better understand processes, ingredients, and recipe development. One thing brewers and therefore drinkers can always benefit from is hop sensory. There's no argument that hops bring great depth of flavor and aroma to beer, but aside from some top notes that many of us are able to pick out, there's not always a lot of extra layers discussed. *Episode 2: Deep Roots & Twisting Bines * One of the keys to maintaining a consistent supply of the very best hops is long term relationships and deep commitment paired with the very best analytical science and process improvement, and the purpose of this series is to explore just what that means with some of the key players in this story of ingredient quality. In this episode, Firestone Walker Head Brewer Dustin Kral and Bud Hollingbery of hops broker Hollingbery and Son talk about the way that Hollingbery has worked closely with Firestone Walker for decades now to source and process hops, how current dynamics in the brewing and hops industries are impacting hops growers, and a lot more. Over the years, Bud has seen some remarkable change in the hop industry, and he's not afraid to tell you exactly what he thinks. Intro music: VintageGroove / Pond5

472: XPA Sensei Scotty Hargrave and Medal-Winning Grasshopper Blake Masoner Go Extra Deep on Extra Pale Ale

Craft Beer & Brewing Magazine Podcast

Scotty Hargrave didn't invent extra-pale ale—he reinvented it, giving the style the definition it had lacked before. Tinkering away on his homebrew kit in New South Wales, he developed the recipe for what would become Balter XPA—a beer that took off and popularized what has arguably become Australia's signature beer style. It's also a beer that also has inspired certain American brewers, including Craft Coast cofounder Blake Masoner. Craft Coast XPA medaled at the 2024 and 2025 World Beer Cups and is now a core beer at their two brewpubs/taco stands in San Diego's North County. In this episode, Craft Beer & Brewing executive editor Joe Stange—interviewing them for a feature article in our upcoming issue—gathers Hargrave and Masoner for a trans-oceanic dive into the details of what makes a great XPA. With its lean malt base, full-spectrum hop character, soft mouthfeel, and addictively dry finish, it's a simple beer that may not be so simple to execute. Among the topics they discuss: why they believe in Australian base malt for XPA the importance of hot-side hop additions—from first wort to whirlpool—and “spreading out” those IBUs water chemistry and the trick of achieving both soft mouthfeel and a crisp, dry finish how brewing XPA has improved the West Coast IPAs at a medal-winning West Coast brewery the wider value and benefits of learning how to nail a challenging style And more. G&D Chillers The Craft Brewers Conference is coming up April 20 through 23, 2026—and G&D Chillers will be there. If you're heading to CBC, swing by and talk shop with the folks who know brewery operations inside and out. G&D's biggest strength isn't just the equipment—it's our deep understanding of how a brewery runs. From cellar layout to production flow, our team brings decades of hands-on experience to every install and every conversation. Whether you're running a single-stage 5H unit or scaling up with a Vertical Air Chiller, G&D builds systems that are reliable, efficient, and built to last. Because when your chiller's solid, your beer stays cold—and your operation stays on track. Plan your visit at gdchillers.com/podcast—and come see us at CBC, Booth 1518. Berkeley Yeast Berkeley Yeast just launched Dry Tropics London! Our best-selling liquid yeast strain, now with all the ease-of-use benefits of dry yeast. Dry Tropics London delivers the soft, pillowy mouthfeel and juicy character you'd expect from a top-tier London Ale strain, but with a serious upgrade: a burst of thiols that unleash vibrant, layered notes of grapefruit and passion fruit. A lot of brewers love the clean passion fruit you get from Tropics, but they don't want every IPA to be a tropical-fruit bomb. At the dry yeast price point, you can pitch and ditch without breaking the bank. Or, you can co-pitch with your house strain to adjust the intensity of the notes. And with nationwide free shipping, there's never been a better time to try Dry Tropics. Order now at berkeleyyeast.com and experience the ease and impact of Dry Tropics London Yeast. Of course, since this is a kid learns karate to better himself movie, he ultimately meets Norris, gets the girl, bests his bully, and overcomes the issues that have plagued him. Along the way, we get some good old timey 90s racism and a handful of fantasies themed around Norris' filmography.  Sidekicks isn't exactly high art, but it will remind you that Norris generally just plays himself, as he does here, and the key to life is learning how to dodge dumplings. The work starts with breeding the right hop varieties with the perfect mix of aroma and flavor compounds as well as the functional things that make them viable to grow as a commercial crop—disease resistance, robust hop-cone production, lower water and fertilizer needs, and more. Since its inception, Firestone Walker has been involved with the Hop Quality Group—an industry group of craft brewers who work cooperatively to help guide how the growers grow and process hops. Dr. Jeffrey Bland, Founder and President of the Personalized Lifestyle Medicine Institute and President of Big Bold Health, is described as the “godfather of functional medicine.” He details the origins of functional medicine as a systems-biology, root-cause approach emphasizing diet, lifestyle, and supplements alongside conventional allopathic care, especially for chronic disease. Bland contrasts medication “number needed to treat” examples (statins and TNF-alpha blockers) with personalized lifestyle interventions, noting adherence challenges. He discusses GLP-1 weight-loss drugs as a major pharmacologic advance but raises concerns about long-term effects, discontinuation rates, side effects, and inadequate nutrition if food intake drops. Bland describes research on bitter compounds and gut “taste” receptors influencing GLP-1 and related hormones, links to Blue Zone diets, and introduces Big Bold Health's Himalayan Tartary Buckwheat and minimally processed, sustainably sourced fish oil products, the Omega-3 index, and targeted formulations with lutein/astaxanthin, plus ongoing clinical trials on immune aging and gene expression.
