Martin and Stefan remember when Cascade Brewing released beers into the European webshops. It was a huge moment for EU beer nerds. 10 years later, Cascade has ceased production sadly. They lament the demise of the sour powerhouse that helped bring sour beers to the mainstream. Cascade Blueberry Ale 2015 is from that first release and after 10 years, it's got a lot of life in it. It could probably go another 10 years. They follow it up with another sour powerhouse beer brewery, The Bruery Terreux. Sans Pagaie 2017 is a sour blonde ale with cherries. Their version of a Belgian Kriek.  #beer #craftbeer #drinks #sourbeer #kriek #wildale

Fruktrocket Frukinger Plum is a 6% fruited sour beer that gives us a kiss of plum. Collective Arts Mango, Lime and Jalapeno gose sounds like it might a spicy little number. It's full of mango with a bit of lime and just a jalapeno heat to keep things interesting. Let's bring the heat! #beer #craftbeer #drinks #fruitbeer #sourbeer #gose

At its height, Pompano Beach's Odd Breed in Pompano Beach was one of the best-regarded breweries in Florida, winning four GABF medals over a span of three years, and shipping mixed-culture beers to fans around the world. However, real-estate market forces ultimately worked against the niche brewery, and founder and brewer Matt Manthe closed up shop in the summer of 2024. That's no reason not to talk brewing, however, and Manthe learned plenty over his years shepherding his mixed cultures from homebrew to commercial scale, changing and adapting processes along the way. While he's now brewing classic lager and ale styles in the mountains of Colorado—at Dillon Dam, about 70 miles west of Denver—mixed-culture beers still hold a strong place in his heart. In this episode, he discusses: building a mixed culture through homebrewing shifting from mixed-culture to Saccharomyces fermentation to control acid production choosing primary strains, from London Ale III to 34/70, to optimize flavor, manage acidity, and more boosting hops with specific flavors and aromas for fermentation precursors challenges with fruit processing and refermentation the importance of not letting barrels sit unfilled blending very different base beers to achieve a finished product that's greater than the sum of its parts And more. Derek and Courtney joined Cee to chat about their lengthy and rocky journey to opening the brewery, the impact their time in Germany had on their approach to their beer, the scene in Indiana, how they leveraged the full real estate of their property to get open sooner, why they turned their old brewery into a cafe, how they opened their second location, the Indy 500 and the impact on the city, their recent equipment upgrade, and why they don't really do much distro. They got into four fantastic Guggman Haus beers - Wilburs Prize Pils American Pilsner, The Riverside New England IPA, Guggenweizen Hefeweizen, and Into The Wild Sour (Strawberry, Raspberry and Blueberry). Horse Thief Hollow Brewing Co's Jake Nelson (Head Brewer) and Adrian Morrison (Brewer and Sales Manager) discuss the fascinating legacy of Horse Thief Hollow Brewing in Chicago's historic Beverly neighborhood, exploring the origins of the brewery's name, its cultural significance, and why the Illinois militia had to run off horse thieves in the very early days of Chicago. They also share their humble beer origin stories, including Andrian's rising through the ranks in order to get to where he is at Horse Thief Hollow. They also talk about what “cellar work” actually means when working in beer before they discuss how Horse Thief Hollow Brewing Co. has become the most award-winning brewery on Chicago's south side, including a deep dive into how they overcame the challenge of brewing high-quality Pilsners consistently in order to come up with their award-winning Little Wing Pilsner.  After the beer break, they discuss Annexation, a West Coast IPA, including an explanation of what makes an IPA a West Coast IPA specifically and why West Coast IPAs are making a comeback. Jake also talks about when a beer is “done” and he doesn't feel like he needs to keep changing a recipe. We got a fun couple of cans to review this episode. Sometimes you don't buy a beer because you want to drink the beer. Sometimes you get a beer because the art work is so much fun. Which brings us to today's beers. Omnipollo PIM is a 5.6% ABV hazy pale ale with citra hops. Light smooth and fun drink while staring into to the trippy label on the can. This pairs nicely with  DankHouse OOOzie Jacuzzi. This is the total opposite of PIM, like the label it's a trip. Strawberry, pineapple, raspberry and marshmallow are blened into a fruit smoothie of a beer. We've kind of fallen into a love/hate relationship with The Bruery and Brew Dog. They make some really great beers and some not so great beers. The problem is you never know which you'll get anymore. The Bruery's Peaches en Ruegalia is a Black Tuesday variant. They took their flagship stout Black Tuesday and added caramelized peaches, vanilla beans, cinnamon, brown sugar and graham crackers. There's a reason more peach stouts aren't on the market. Overworks is the sour beer label from Brew Dog. They have been putting out interesting sour beers for a few years now. Krampus Nicht promises a sour red beer aged in cognac barrels for half a year and then blended with "winter spices" (cinnamon, cloves, orange zest, star anise). Despite the strong flavor profile, it feels like Krampus pulled a mean joke on us.  #beer #craftbeer #drinks #thebruery #brewdog #blacktuesday #sourale #sourbeer #imperialstout #stouts

In Anzegem, Belgium, about 20 miles southwest of Ghent, Brouwerij 't Verzet (https://brouwerijtverzet.be) is no cover band. Sure, they could make some local waves by brewing up Citra-Mosaic hazy IPAs, but what would that mean to the strong brewing traditions in their corner of Flanders? Rather than play someone else's tunes, could they instead take the familiar, culturally significant notes that everyone around them knows, and play them with a swagger and attitude that helps people see them in a new light? Or, as cofounder Alex Lippens muses, could they drink these innovative hazy IPAs from the United States, learn from them, and inject that knowledge back into classic Belgian styles, to help move those traditions forward? Couldn't they develop their own take on a classic Flemish style such as oud bruin—but instead of making it taste like Rodenbach, make it feel cool and relevant for a younger generation of drinkers? These are among the questions that Lippens asks throughout this episode. While the answers are still in progress—check back with the Verzet team in 40 years, maybe, when their brewing careers are complete—he also touches on: pushing the borders of drinkability and excitement rethinking Michael Jackson's categorization of oud bruin and Flemish red ale brewing with a heavy caramel-malt load and 20 percent unmalted barley using techniques such as cereal mashes and extremely long boils to build flavor and texture blending parts of seven different barrel-aged base beers into Verzet Oud Bruin maintaining and using a wild-caught mixed culture promoting quicker Lactobacillus action by restricting hops and pitching on fully fermented wort building an impression of fruit flavor without using actual fruit blending to a total acidity goal And more. When people ask what Cincy Brewcast is all about - what 'The Voice of Cincy Craft' really means - I tell them that it's about the brewers, the owners, and the drinkers of Cincinnati craft beer. It's those voices that tell the story of Cincy Craft. This is definitely one of those episodes that illustrates that well. Elijah Moreland is a great craft beer fan, and it's always a pleasure to chat with him. I've been trying to get him on the show for a while, and we finally made it work out (even if we had to commandeer the table at Higher Gravity where Truth, Beer, and Podsequences usually record their show... with them in tow.) We discussed how Elijah got into craft beer and homebrewing and his love for Urban Artifact. It was an absolute blast, and no one got tied to railroad tracks, which is always good. Opopoppa is an oddly named pizza place in Malmö. Not only do they have great pizzas and calzones but also an exciting selection of beers. We managed to get two interesting ones. To Ol Svos is an easy drinking American IPA. It's straight up the middle to style IPA pairs well with pizza.  Shapes & Objects Beer Co is a new brewery here in Sweden. They've 15 releases in just a few months. They mostly do fruit beers or fruited sours. Piano Keys Raspberry Cream Blackberry Sour is a 6% ABV fruit beer. This collaboration with Ten Hands Brewing and Forager Brewery is a tart, intense fruit beer. If you have tried the PB&J Mixtape sour by Xul Beer Company, consider yourself lucky. This beer doesn't last long in kegs around town and has led to long lines of people waiting outside the brewery just to get their hands on a four pack.  Perhaps, it's the fact this beer taste exactly like a PB&J sandwich, crust and all. Maybe the funky labels and lack of gluten have something to do with it. Regardless, it's rare to see a single beverage take over a city to this level. Host Ryan Wilusz is joined this week by Bentley Blackshear, co-owner and director of brewing operations at Xul, to discuss what makes the PB&J Mixtape so special and to let listeners know how they can get their hands on the beer this holiday season.  "The Scruffy Stuff" is presented by Knox News. It's a limited edition that was released in 2018. According to their notes, it's best appreciated between 6 months and 1 year. This is a bit outside that range. Cascade Blackcap Raspberry is one of their standard beers. It's a sour blond ale aged for 28 months then Black Cap raspberries were added and aged for another 2 months. It's not the only thing that they brew, but it's part of the soul of the brewery and a founding pillar that they've continued to develop (and improve) over the past eight years. Over those years, they've been recognized a number of times for the beers from this program—gold and bronze World Beer Cup medals in 2016 and 2018, silver and gold GABF medals in 2020 and 2022—but if you ask White, he'll tell you that they're still figuring it out. They haven't settled, and they're still learning. In this episode, White discusses how they brew these compelling beers, from timing ingredient additions to parameters around their spontaneous beer program. Along the way, he discusses: maintaining multiple cultures via solera and brink minimizing beer waste to promote sustainability by reducing failure balancing acidity in award-winning beers neutralizing aged hops to manage funky flavor components sourcing and processing local fruit fruiting in the barrel bottle conditioning with an acid shock starter to reduce yeast stress topping up barrels to prevent the development of off flavors not drinking beer for the past eight months, while still brewing it And more. 2022 has been rough on craft beer. From the macroeconomic forces hitting the entire economy—rising rents, rampant inflation in raw materials and logistics costs, shortages, rising labor costs—to the industry-specific challenges like changing consumer interest in packaging formats, shifting beer styles, distributor focuses, changing draft beer landscape, and more, it's become increasingly difficult to operate brewing businesses successfully. For Port Brewing and The Lost Abbey cofounder Tomme Arthur, the solution is to "grow down," or get comfortable being smaller. For so many breweries, planning for future growth has always informed every decision, from branding to brewhouse, but after 17 years of constant reinvestment into future growth that now looks like an unreachable horizon, Arthur is having second thoughts. In this episode, recorded initially for a written Q&A in the latest issue of our Brewing Industry Guide, Arthur shares his perspective on topics like: dealing with brewery square footage that isn't generating revenue challenges in shallow and wide distribution distributor consolidation and changing priorities the hidden cost increases in triple net commercial leases rising raw materials costs the shift in consumer interest in sour beer revamping the existing brewhouse to be more attuned to proper inventory levels the hidden costs of operating more taproom locations And more. We survived Thanksgiving and are back in the studio this week with our friends from Printer's Ale Manufacturing Co.  Printer's is located in Carrollton, GA, about 50 miles west of Atlanta.  Not a bad trip for ATLiens on a weekend but far enough they don't get as much hype as some of the in town breweries.  That's too bad, because they are making some great beers and doing a lot of other cool things in Carrollton. On this visit we introduced their Woodcut Wild series of beers in Kriek, Framboise, and Peche.  After brewing, the mash for these heads to Printer's coolship but does get a little punch up with some commercial strains when going into barrels.  Oh yeah, they also brew with aged hops grown right at the brewery, and future beers will use fruit from their orchard.  Neat. We chat with Specialty Brewer Josh Watterson and owner Greg Smith about the importance of terroir in brewing, something that was previously (mostly) ignored by American brewers.  We discuss the Qatar/FIFA World Cup kerfuffle with Budweiser, mall Santas, what's in the pipeline at Printer's, and the size of Batman's mouth. What do you get when Michael Tonsmiere, aka The Mad Fermentationist, and author of the book American Sour Beers joins forces with Scott Janish, author of The New IPA, to start a brewery in a Maryland suburb somewhere between Baltimore and Washington DC? Pretty much what you'd expect—a brewery that tends to focus on creative expressions in the pale ale and IPA space, as well as progressive approaches to wood-aged wild, funky, and sour beers. But Sapwood Cellars (https://sapwoodcellars.com) has done much more than just meet expectations over their first four years of existence—they've also honed approaches to both of these focuses, while creatively blending the two with smart mash-ups in the liminal space between them. In this episode, the founders of Sapwood discuss: the evolutionary “royal rumble” process behind their wild and sour beer program building intensity of flavor and points of difference for more broad experiences controlling acidity through processes like co-pitching sacch when adding fruit, dry-hopping finished sour beer multi-step fermentations with wine yeasts employing more potent hops to hold flavor at lower pH levels avoiding oxidized hop flavors in sour beer through careful barrel preparation aggressive rousing despite cold dry hop temperatures in hoppy beers using hops with high survivables on the hot side maximizing thiols with new yeasts finding synergies in hops that produce more than just “generic” tropical flavors the problem with Galaxy hops And more. Come and share a brew with Our Mutual Friend I once heard a story that when a mobster introduces someone to another mobster they're introduced as "a friend of ours" if that person is also in the mob.  I was excited to think that Our Mutual Friend Brewery had some mob ties but, unfortunately, the name simply refers to beer being something everyone can enjoy, a mutual friend. Despite my extreme disappointment we still had an amazing conversation with Head Brewer Jan Chodkowski.  He's pretty laid back and he likes beer.  I can appreciate that.  Jan was even a good sport as we bantered about Cold IPA and my argument that it's not a real thing.  He defended talking something about the brewing methods and all that making it unique.  I'll admit he had a strong case, and he's a fan of the style. With the Great American Beer Festival coming to Denver soon Our Mutual Friend has a little party of their own planned.  Gratitude 9 is a thank you to the community and a special beer release.  Sounds like a great way to pre-game for the madness of GABF. Jan is also a fan of saisons and mixed fermentations and Brett and foeders.  He's quickly becoming our favorite person.  OMF (we can call them that now 'cause we're tight like that) used to do some spontaneous brewing but they like the results they get better with a bit more control. If you find yourself in Denver stop on by and see Our Mutual Friend.  Tell 'em we sent ya.See omnystudio.com/listener for privacy information.

Tonya Cornett marks her brewing experience in decades, but the head of R&D for Bend, Oregon's 10 Barrel (https://10barrel.com) isn't resting on any laurels. She's earned every right to cruise, with many GABF and World Beer Cup medals under her belt (including three at the World Beer Cup earlier this year), but she continues to challenge herself and her team to find new and better ways to express flavor in beer. One of her favorite styles, and one she's earned wide acclaim for, is quick-soured fruit beer. 10 Barrel now sells these beers across the country under their “Crush” brand, and Cornett's small brewery and R&D team are constantly working ahead, creating new iterations with different fruits and ingredients for 10 Barrel's pubs in Bend. In this episode, she discusses the ways she's made this “simple” style much more difficult to make, from varying grain bills based on the fruit, to using different yeasts, and including one fruit in multiple forms to capture all of its flavor. Along the way, she covers: the change over time in their lacto culture brewing quick-soured beers in two stages as blender batches using wheat, oats, and dextrin malt to build mouthfeel and keep the beers from drying out varying pitch rate based on the current state of the culture and production calendar carefully measuring total acidity rather than just pH using hops that complement fruit and acidity managing sulfur production and controlling diacetyl layering purée, freeze-dried fruit, juice, concentrate, extracts, and more to build a whole fruit picture using adjacent fruits as well as spices to amplify the expression of a primary fruit And more. Once a week just isn't enough! Enjoy new Tuesday episodes of the Craft Beer & Brewing podcast every other week, with different formats like this round table discussion as well as episodes where you get to ask the questions of our brewer guests! This round table discussion with Russian River, Cantillon, and Allagash kicks off the new series. Recorded in the coolship room at Russian River the morning of their Wild Friendship Blend event, the conversation between Rob Tod and Jason Perkins of Allagash, Jean and Florian Van Roy of Cantillon, and Natalie and Vinnie Cilurzo of Russian River explores both bigger picture questions about spontaneous brewing, and particular implementations and adaptations employed by the American breweries in making compelling beers using the traditional process. Topics include: - Stories from the earliest days of American spontaneous brewing - Sensory differences between spontaneous beer made at Allagash, Russian River, and Cantillon - The challenging in building a blend with "characterful" base beers - Creating environments that support better spontaneous brewing results - Tuning coolship rooms for more consistent and reliable production - The dynamics of spontaneous fermentation through a season - Reducing opportunities for failure - The various (and very different) ways each brewery ages and uses hops - Connecting spontaneous beer to consumers through experience And more.
