Steve and Mike dive into the exciting experimentation happening in cider, from exploring new spices and fruits to fire pressure in California driving many winemakers to explore the possibilities of cider. Mike and Paige talk about what it takes to get consumers interested in cider and break down how they choose the selection of ciders they offer from shelves to tasting rooms. Speaking of unique ciders, Karl and Jimmy dive into the novelty of the pommeau, from its minimum aging time of three years to the unique depth and fruitiness one can expect. Steve Selin is the proprietor of South Hill Cidery in Ithaca New York, where he farms apples organically and makes beautiful cider and music. Wendy and I stumbled upon South Hill Cider on a recent visit to the Fingerlakes region, and I was just so impressed by the quality of the ciders that I returned to get a chance to chat with the person who was responsible. After a brief 5 minute conversation with Steve, I knew I wanted to interview him, and I think you'll see why. As I was getting to know Steve via this interview, I was delightfully surprised by the many unexpected and fascinating turns that this conversation took. It's always a strange and special experience to find that someone far away living a different life is thinking about many of the same ideas that you're contemplating. One of the topics we cover is how “local” is as important as “organic” when looking at the big picture of our ecological footprint. Yes, this presents some immediate compromises to my values, but I think it is the long term way to have the greatest positive impact. At this point in American history I think one of the most important things we can do is cultivate friendships with people with whom we disagree. https://www.southhillcider.com/ Sponsor: https://www.centralaswine.com/
Fermenting with Quince Was Aphrodite’s Forbidden Fruit a quince or the apple? She's not talking, but cidermakers are in this panel discussion on “Fermenting with Quince” that was recorded for CiderCon2021. Quince a.k.a. Cydonia oblonga is the sole member of the genus Cydonia in the family Rosaceae. Quince is a ‘pomme’ fruit with the likes of apples, pears, and medlars. This golden Pomme is having a renaissance of sorts with makers partly due to it aromatic qualities and tannins. Kim Hamblin and Dan Rinke of Art + Science in Oregon, Steve Selin of South Hill Cider in New York and UK makers Martin Berkley of Pilton’s Cider and James Forbes of Little Pomona will discuss fermenting with Quince for this panel discussion that was moderated by Ria Windcaller of Cider Chat. Every Tuesday, when Steve was growing up, his Dad would be out that evening drinking cider with friends at the Cider Cellar, at the farm outside of Buffalo. That memory is his first on cider. Years later this professional musician and self taught cidermaker merged his love of the Finger Lakes and quality craftsmanship into South Hill Cider. In 2019, the brand new Tasting Room and Production facility for South Hill was opened. This new site provides a lovely setting to taste the large selection of South Hill Ciders and for Steve to manage his orchard that is just outside the door of the Tasting Room. Tonight we’re celebrating Cider Week NYC and we’ve got some great guests joining us including Steve Selin from South Hill Cider in the Finger Lakes, Maria Kennedy from The ARTS Council of the Southern Finger Lakes, and Peter Li from Brooklyn Cider House. On this episode of the Food About Town podcast, I took a trip out to South Hill Cider just south of Ithaca to talk with owner, cidermaker, apple picker, musician and community orchardist Steve Selin. Steve was nice enough to invite us to visit his orchard and record the podcast...
The next chapter in the Out Of My Depth series where I learn something I don't know. This round I talk to Cider maker Steve Selin and Cider expert/enthusiast John McCarroll to learn about this wacky wine made from apples.
In this special Cider Week NYC episode of Beer Sessions Radio, we feature Steve Selin of South Hill Cider. At South Hill Cider, the apples come from wild trees, abandoned orchards and orchards of high quality cider apples. Using traditional cider-making techniques, they create timeless well-balanced ciders. Their orchard is on a peaceful hilltop as part of a harmonious ecosystem that relies on diversity and fertility as its foundation. South Hill Cider produces ciders with individuality, quality, and elegance reflecting the terroir of the Finger Lakes region.
