It's New Orleans: Louisiana Eats

Located at the opposite ends of the country, the states of Louisiana and Maine appear to share little in common at first glance. But take a closer look, and you'll see two places that share a passion for their distinct seafood culture – each home to a galaxy of culinary rockstars who elevate their local cuisine. On this week's show, Louisiana Eats takes you with us as we travel to Maine to explore the food scene in the Pine Tree State. We begin with Lady Oyster Tours and Tastings in Phippsburg, on the Casco Bay Peninsula. Owner and operator Virginia Shaffer is Maine's first "oyster sommelier," or certified oyster expert under the Oyster Master Guild. Throughout the year, Virginia and her company educate tourists on the local oyster industry, offering tastings and boat tours of oyster farming operations. She tells us about Maine's rapidly growing oyster industry, before Captain Joe Jerome steers us to get a first-hand look at an oyster farm. Then, we travel up the coast to meet Melissa Kelly, the first two-time recipient of the James Beard award for Best Chef Northeast. Melissa tells us about her Rockland farm-to-table restaurant, Primo and her remarkable life in food. We also meet farm manager Abigail Gallagher, who gives us a tour of the multi-acre farm surrounding the restaurant. Next, we visit the small town of Bath to dine in a restaurant overlooking the Kennebec River called OystHERS Raw Bar and Bubby. The seasonal raw bar is owned by sisters Sadia and Lauren Crosby, both lobstermen's daughters from nearby Georgetown Island. Sadia owns a sea farm, where the house oysters are produced. Lauren tells us the story behind OystHERS, which serves up fresh bivalves from local female-owned and family-owned farms. And who should we run into there, but Susan Spicer! The New Orleans chef tells us what she's cooking while cruising up the Atlantic coast. We end our trip at Browne Trading Market, a magical food and drink emporium in Portland. Since 1991, Browne Trading Company has been the supplier of seafood, caviar, and other delicacies to an exclusive restaurant chef customer base. Among our discoveries there were percebes – also known as gooseneck or turtle-claw barnacles – harvested on the Iberian Peninsula and exclusively available from Browne Trading. Specialty foods manager Michael Rigo explains why the job of harvesting these edible crustaceans is not for the faint of heart. Ein Tag im Zeichen von Craftbeer und Hafen - Unser Craftbeer Crawl geht weiter Im Sommer 2025 machten wir uns auf den Weg zu unserem Hamburg Hafen Craftbeer Crawl. Unsere Route führte uns entlang des Hafens zu ausgewählten Brauereien und Kneipen, wo wir frische Eindrücke direkt ins Mikrofon sprachen. Dieses Mal: Vom Überquell, einer echten Craftbeer-Brauerei mitten in Hamburg, zum Braustädtchen, der Craft Beer Location am Fischmarkt. Überquell: Mehr als nur Bier Im zweiten Teil unseres Hamburg Hafen Craftbeer Crawls landen wir im Überquell, einer lebendigen Craftbeer-Brauerei in den alten Riverkassematten direkt am Hafen. Das Überquell ist bekannt für seine grellen Farben, lauten Biernamen wie „Bambule“, „Palim Palim“ und „Super Duper“ und eine Atmosphäre, die einfach etwas „drüber“ ist – im besten Sinne. Hier trifft man auf Hamburger und Touristen, die gemeinsam die Vielfalt der Craftbeer-Szene schätzen. Besonders beliebt: die hausgemachte Pizza, die perfekt zum Bier passt. Doch Überquell ist nicht nur ein Ort für Bierliebhaber, sondern auch ein Treffpunkt für alle, die das besondere Flair des Hamburger Hafens erleben möchten. Wir lassen wir uns beraten, probieren New Zealand Hazy IPA und ein Franzbrötchen-Stout und sezieren Geschmack, Hopfen und Malz im Detail. Wir erzählen, warum das Überquell für uns nicht nur wegen des Biers, sondern auch wegen seiner Events – vom Eisstockschießen bis Afterwork – ein Fixpunkt in der Hamburger Craft-Beer-Szene ist. Franzbrötchen im Glas & auf dem Teller Das Franzbrötchen-Stout ist tatsächlich ein Höhepunkt, den wir als „Offenbarung an Malz“ feiern: vom karamelligen Schaum bis zu süßen und würzigen Malznoten. Daraus entspinnt sich ein längerer Exkurs über die Hamburger Franzbrötchen-Kultur – von „klitschigem“ Hefeteig über Zimt-Zucker-Mischungen bis hin zu Mini-Franzbrötchen am Stiel und Pflaumen-Franzbrötchen vom Kiez-Bäcker. Zwischen Bierglas und Gebäck diskutieren wir, wie sehr Kindheits-Erfahrungen, Marmeladen und Obstsorten unseren Geschmack prägen – inklusive Geständnissen, welche Früchte wir pur nicht mögen, aber als Aroma im Craft Beer lieben. Erdbeere, Integration und die radikale Apfelfront Ausgehend von der biologischen Tatsache, dass die Erdbeere streng genommen eine Nuss ist, greifen wir einen Aufruf für Integration auf: „Sei wie die Erdbeere“. Sie wird akzeptiert, obwohl sie nicht ins Schema passt. Von dort aus schlagen wir den Bogen zur „radikalen Apfelfront“, rechten Symboliken, politischer Satire und zur PARTEI rund um Martin Sonneborn, der im Europaparlament mit ironischer Aufklärung zeigt, wie Europa funktioniert. Wir sprechen darüber, warum klar gekennzeichneter Bias ehrlicher ist als Pseudo-Neutralität à la „Fair and Balanced“ und wieso Satire helfen kann, komplexe politische Strukturen verständlicher zu machen. Braustädtchen am Fischmarkt: Craft-Beer-Oase mit Melancholie Danach zieht unser Crawl weiter ins Braustädtchen direkt am Fischmarkt. Dort treffen wir auf einen hervorragend sortierten Craft-Beer-Laden mit Tasting-Events, Bierführungen und einem Sortiment von Bille-Brew bis Barbarossa-Grutbier, der leider zum Zeitpunkt der Veröffentlichung schon nicht mehr existiert. Wir kosten uns durch Helles Landbier, Wiener Lager, alkoholfreies „Miami Grove“-Pale Ale und Biere von Sudden Death und Kehrwieder und reden über die Frage, was ein gutes Alltagsbier ausmacht. Touristen, Biertouren und Abschiedsstimmung am Hafen Es kommt auch eine 25-köpfige Bier-Stadtführung vom St.-Pauli-Tour-Office ins Braustädtchen, was uns Gelegenheit gibt, über Biertourismus, Touristenströme und Hamburg als Bierstadt nachzudenken. Gleichzeitig schwingt ein Schwanengesang mit: Wir verabschieden uns von einer weiteren Hamburger Craft-Beer-Adresse und erinnern uns an Tastings in anderen Läden wie „Beyond Beer“. Am Ende bleibt der Mix aus Hafengeruch, Elbe, Fischmarkt, Touristen, Craft Beer und der Erkenntnis, dass Genuss, Stadtgeschichte und Politik erstaunlich gut zusammen in ein Glas

Ralf hat aus seinem Urlaubsdomizil zwei Hopfenkaltschorlen mit ins Kellerstudio gebracht: das Svaneke Stout weiß durch seine schwarze Farbe, malzige Noten und Rauch zu überzeugen. Anders verhält sich das Rum N´Beer aus dem Hause Thisted Bryhus aus Dänemark. In jedem Fall einzigartig aber leider schwer zu genießen. Dan and Darryl. Darryl Miller is back on California Wine Country with Dan Berger and Daedalus Howell, with wines from two Sonoma County wineries, Dehlinger Winery in the west county and Peterson Winery in Dry Creek Valley. He has been on CWC a few times, the most recent is this episode on July 18, 2025. Darryl Miller is retired from the wholesale wine business. He works with the Dehlinger winery, assisting and advising them with their sales and marketing. He even used to live on that property in the 1980s. Darryl also works as an advisor to the Peterson family in Dry Creek Valley. Dan Berger and Darryl Miller met when they were judges at a wine competition about 40 years ago. They found that they appreciated the same qualities of structure and balance in wine. For Dan, there is no such thing as a great wine that does not show good balance. There are unbalanced 100 point wines that are by definition, not great. The Goldilocks Dilemma Darryl agrees. They are either too heavy or light. They are not made well. Darryl describes the Peterson's method as zero manipulation. They grow the right fruit the right way and then they don't have to intervene. The wine being tasted is a 2024 “3V” made of three Italian white grapes whose names begin with V. Vernaccia 37%, with a kind of chalkiness to it. Darryl says it's like Chablis. They also blend in some Vermentino which has some pineapple tropical fruit flavors. Then some Verdello, which has grapefruit rind flavors, similar to a Sauvignon Blanc. CWC is brought to you by Deodora Estate Vineyards. Visit Deodora to discover 72 acres in the Petaluma Gap that are producing exceptional Chardonnay, Pinot Noir and Riesling. Sip the difference!  They make the three wines separately and then blend them. There is also a red blend, of Grenache, Syrah and Mourvedre. They call it GSM or GMS, in order of appearance. Blends Are Back Blends are becoming popular again. This is because winemakers find that if they have Grenache and some other varieties, they can end up with a better wine by blending them. That is better than making single varietals  which by themselves may not be as good as the blend. Dan objects to blends that don't tell you what is in the bottle. We want to know what is in it. It is not illegal to do, but does not help. The Peterson wines are very careful about telling the percentages in blends.

 In today's episode, I sat down with Carey Harnash, the driving force behind the Western North Carolina Whiskey Festival. We explored his journey from whiskey enthusiast to founder of a festival dedicated to education, community, and of course, great whiskey. Carey opened up about his passion for bringing together local distilleries, whiskey lovers of all levels, and supporting the WNC Harvest and Heritage Foundation. We dove deep into the event's unique educational experiences, the importance of responsible tasting, and how the proceeds help food insecurity and local heritage projects. It was a lively, flavorful conversation, and not just because Carey arrived with a bag full of interesting whiskey samples! Carey Harnash is more than a collector of whiskey bottles; he's an advocate for community, hospitality, and discovery. As executive director of the WNC Harvest and Heritage Foundation, Carey works to directly support local charities focused on food insecurity and preserving North Carolina's cultural heritage. His event planning skills previously brought the hugely successful food truck showdowns to Asheville, featured on the Food Network. Located at the opposite ends of the country, the states of Louisiana and Maine appear to share little in common at first glance. But take a closer look, and you'll see two places that share a passion for their distinct seafood culture – each home to a galaxy of culinary rockstars who elevate their local cuisine. On this week's show, Louisiana Eats takes you with us as we travel to Maine to explore the food scene in the Pine Tree State. We begin with Lady Oyster Tours and Tastings in Phippsburg, on the Casco Bay Peninsula. Owner and operator Virginia Shaffer is Maine's first "oyster sommelier," or certified oyster expert under the Oyster Master Guild. Throughout the year, Virginia and her company educate tourists on the local oyster industry, offering tastings and boat tours of oyster farming operations. She tells us about Maine's rapidly growing oyster industry, before Captain Joe Jerome steers us to get a first-hand look at an oyster farm. Then, we travel up the coast to meet Melissa Kelly, the first two-time recipient of the James Beard award for Best Chef Northeast. Melissa tells us about her Rockland farm-to-table restaurant, Primo and her remarkable life in food. We also meet farm manager Abigail Gallagher, who gives us a tour of the multi-acre farm surrounding the restaurant. Next, we visit the small town of Bath to dine in a restaurant overlooking the Kennebec River called OystHERS Raw Bar and Bubby. The seasonal raw bar is owned by sisters Sadia and Lauren Crosby, both lobstermen's daughters from nearby Georgetown Island. Sadia owns a sea farm, where the house oysters are produced. Lauren tells us the story behind OystHERS, which serves up fresh bivalves from local female-owned and family-owned farms. And who should we run into there, but Susan Spicer! The New Orleans chef tells us what she's cooking while cruising up the Atlantic coast. We end our trip at Browne Trading Market, a magical food and drink emporium in Portland. Since 1991, Browne Trading Company has been the supplier of seafood, caviar, and other delicacies to an exclusive restaurant chef customer base. Among our discoveries there were percebes – also known as gooseneck or turtle-claw barnacles – harvested on the Iberian Peninsula and exclusively available from Browne Trading. Specialty foods manager Michael Rigo explains why the job of harvesting these edible crustaceans is not for the faint of heart. If you like culinary or wine travel, you need to put the Chilean Winelands on your travel bucket list. Tamara just came back from a two-week trip to Chile including the Atacama Desert and the Winelands. Episode Highlights: The wine regions are south and west of Santiago It is easy to drive through these regions but it is still recommended to get a driver for days when you are doing wine tasting Two hours south of Santiago is the Colchagua Region that is known for its red wine including Malbec, Bordeaux blends, Cabernet Sauvignon, and Carmenere. One hour west of Santiago is the Casablanca Region, which is closer to the coast, and is more known for its white wines like Sauvignon Blanc and Chardonnay. She stayed at the Vibo Wine Lodge in Colchagua. This is a small boutique property on the Viu Manent Vineyards near Santa Cruz. It has individual lofts or tiny homes spread out throughout the vineyards. Another popular place to stay in this region is Clos Apalta, which is a Relais & Chateaux luxury property. Vibo Wine Lodge includes breakfast in the coffee shop on property and they also have two other restaurants, the Rayuela Restaurant and the Vibo Wine and Food Studio. On property you can hike, borrow bikes, enjoy the pool, go wine tasting or set up horseback riding. They also did a wine tour with Colchagua Wine Tours, which was only $125 for a day with a private driver (you pay for the tasting separately.) Tamara enjoyed wine tasting at Montgras Winery and Maquis Winery. They had a nice lunch at Fuego Apalta on the Montes Winery (but she didn't like the wine at Montes.) Tastings of the "icon" wines, which are the top wines, are about $40-50 per person. Clos Apalta Residence is also an excellent place to go for lunch or dinner and you can go wine tasting at the winery. In Casablance, they stayed at La Casona, which is a hacienda which has been converted to a hotel on the grounds of the Matetic Vineyards. This was all-inclusive because there isn't a lot nearby to eat. But the menu doesn't change so it gets repetitive if you are there for any length of time. The package also includes excursions and they did a biodynamic wine tour and tasting, mountain biking, and hiking. They also offer horseback riding and excursions to towns.
