This week, we're excited to welcome Chef Brandon Jew and food writer Tienlon Ho to Salt + Spine, the podcast on stories behind cookbooks.Brandon Jew and co-author, Tienlon Ho, joined us to talk about their recent cookbook: Mister Jiu's in Chinatown: Recipes and Stories from the Birthplace of Chinese American Food.Mister Jiu's—the restaurant on which the book is based—sits in San Francisco's Chinatown on Waverley Place. In 2013, when the famed restaurant Four Seas closed down, Brandon decided to open his own place. But before Mister Jiu's, Brandon was cooking in some of the best kitchens in the Bay; a student of Judy Rogers at Zuni Cafe and Michael Tusk at Quince, Brandon started his cooking career with California cuisine, riffing on French and Italian classics and always, always honoring the ingredients.But when Brandon's paternal grandmother passed away from cancer, he realized that her culinary knowledge and skill could be lost, too. In the book, he describes his grandmother (his Ying-Ying) as the family cook, reminiscing on the incredible food she cooked for the family. After she passed, Brandon says he hit a turning point. He began to look away from Mediterranean cuisine, leaving Quince and flying to Shanghai where he learned more about the complex and diverse culinary history of China.His debut cookbook, written with Ho, tells both the story of Mister Jiu's the restaurant as well as the story of San Francisco's Chinatown—one full of hardships and struggle, but also joy and celebration. Brandon and Tienlon put this tradition and history at the forefront of their work, just as Brandon does in the kitchen at Mister Jiu's.The cookbook features countless recipes, with an entire section devoted to the Chinese American pantry and fermentation. But the recipes are honest and as complex as the food you'll find in Mister Jiu's. For instance, some of the recipes take multiple days to prepare, and one asks for over two dozen ingredients and specialty tools you might not have at the ready in your home kitchens. But many remain very accessible for home cooks.Stick around to hear why it is that Brandon and Tienlon were uncompromising when it came to the recipes, about growing up Chinese American, and about the Mister Jiu's kitchen that—like Zuni Cafe and Chez Panisse before it—is teaching a new generation of cooks how to carry a rich culinary tradition into the future. In Episode #47, co-hosts Bita and Beata learn about Iranian Jewish food and some of the traditional foods and customs shared on Rosh Hashanah by special guest, Tannaz Sassooni.  Tannaz works in animation technology by day while writing, teaching, and sharing about Iranian Jewish foods as her passion project.   An example of a classic Friday night Jewish Iranian meal might consist of “Chelo Abgoosht eh Ghondi” (also spelled gondi) - a chicken broth based soup with poultry and chickpea flour meatball dumplings.   Another example of a one pot Jewish Iranian recipe is “Ghondi/Gondi Kashi” - rice dish cooked with ground meat, herbs, beets, and fava beans - takes on a pinkish hue in some areas and sometimes forms a beautiful tahdig!   Rosh Hashanah traditions - as contrasting to simple apples and honey, in the Iranian Jewish custom, a whole seder is served for Rosh Hashana Beef tongue Black eyed peas Squash, fried zucchini or pumpkin Dates Apples and honey   Two main holidays, Rosh Hashanah and Yom Kippur Custom of the start of the fast/ the eve of the fast include eating a Quince, Pomegranate Stew | Khoresht eh Beh, super sweet and sour Custom of breaking the fast - break the fast with the following 3 things: Chai | hot tea Soft boiled egg Grated apple with rose water and sugar served over ice | Faloodeh Seeb - gives a boost of energy and an uplifting aroma. Bita's daughters refer to it as “apple Randy”.   A tip, also known as “Beats Cheats” - Tannaz's favorite thing: Sharbat eh Golab which is simply water, sugar, & rose water over ice   Ask the Beats! Es un impresionante informe médico. A la una de la tarde: paro cardíaco. Los médicos aplican electrochoques. A las dos de la tarde: nuevo síncope. Reviven a la persona mediante tremendos golpes eléctricos. Quince minutos después, el monitor no da ninguna señal. Los médicos trabajan frenéticamente y vuelven a salvar a la persona. Tras un respiro de cinco horas: nuevo síncope, nuevo paro y nuevo milagroso retorno a la vida. Y a las ocho de la noche, cuarenta y cinco minutos después: otro paro, otros electrochoques y otra resucitación. Al día siguiente, a las seis de la mañana, Geraldine Fletcher, de cincuenta y dos años de edad, toma tranquilamente su desayuno. Llega a ser la primera persona que muere cinco veces en un solo día, y es resucitada las cinco veces científicamente. Para todo hay récords en este mundo. Geraldine Fletcher, mujer morena, fuerte y animosa, batió el récord de muertes y resucitaciones. Cinco veces, en el lapso de pocas horas, su corazón dejó de latir, y las cinco veces, tras frenéticos esfuerzos médicos, volvió a latir. Pero ¿en realidad murió Geraldine? Los científicos dicen que no, que fue una «cuasimuerte» de la que se recuperó a tiempo, pues nadie regresa de una muerte verdadera. Hay dos logros que jamás se han podido alcanzar: uno es detener el envejecimiento; el otro es deshacerse del día de la muerte. Aunque se han logrado fantásticos logros científicos en la curación de enfermedades y en la resucitación de ciertas personas, no hemos podido deshacernos ni del envejecimiento ni de la muerte. «No hay quien tenga poder sobre el aliento de vida, como para retenerlo —dice el Libro Sagrado—, ni hay quien tenga poder sobre el día de su muerte» (Eclesiastés 8:8). Por más buena salud que tengamos, por más benéfico que sea nuestro ejercicio físico, por más acertada y eficaz que sea nuestra dieta, a la larga todos nos inclinaremos hacia el sepulcro y caeremos como roble gastado. Para ese día inevitable, y para la paz del alma mientras llega ese día, necesitamos un Salvador que nos dé salvación y vida eterna, un Salvador que sea nuestro amigo durante el resto de los años que nos queden por vivir. Ese Salvador y amigo es Jesucristo. Él desea ser nuestro Señor eterno el día en que abandonemos este cuerpo. Entreguémosle nuestra vida a Cristo hoy mismo. This book investigates the history of mothering advice in the media, from the 19th century to today, and the processes by which mothering has been defined, from getting pregnant to being pregnant to giving birth to whether "that baby" needs a hat on. Like most moms, Maggie and Bethany questioned their own parenting decisions because they understood their choices would be met with scrutiny exercised in few other arenas. They suggest that the first step to freeing ourselves from the socially prescribed perfectionism of motherhood is to realize that no matter what you decide, there will always be someone telling you "you're doing it wrong." Margaret "Maggie" Quinlan is a Professor of Communication at the University of North Carolina at Charlotte. She explores how communication creates, resists and transforms knowledges about bodies, and critiques power structures that marginalize certain people both inside and outside of healthcare systems. Bethany Johnson is a PHD candidate at the University of South Carolina. En el papel, Moi un noir puede ser clasificado como documental, pero— al permitir que sus propios protagonistas eligieran nombres y roles que los identificasen frente a las cámaras (y que tomaron de las películas que habían visto)— la cinta supera todos los límites del género para transformarse en algo que el realizador bautizó como "etnoficción": una mirada del mundo y las cosas que emerge transfigurada por el uso de elementos y estructuras provenientes de la ficción. It's hard to admit things aren't perfect. It's especially hard for moms. Psychologists Paul Hewitt and Gordon Flett described three types of perfectionism in the 1990s: self-directed (I must be a size 2), others-directed (do that piano exercise again until you get it right), and "socially mediated" perfectionism, which comes from society making unrealistic demands of a person or a group and punishes that person when she falls short. Sound familiar? Turns out the amount of socially mediated perfectionism a parent feels is directly related to her level of "parental burnout," defined as exhaustion in one's role as a parent, feelings of being fed up as a parent, and even emotional distancing from one's children. Not the place any of us want to get to. So why is it so hard to admit things aren't perfect? And how can we start? The pandemic shrunk our social circles, first literally and then metaphorically. Our time for ourselves evaporated, and with that any chance of catching up with our best friend– even if she lived two blocks away. We lost the once-a -month lunch friends, the "micro-interactions" with strangers, and even the overheard conversations that spark our curiosity and feed us more than we ever realized. But picking something back up, after you've put it down for a long time, can make it seem surprisingly heavy. As the restrictions end, and we can see all of the people all of the time, we've been surprised by our own conflicting emotions about it all. Dr. Marlee Bower, a loneliness researcher at the University of Sydney, explains that "an extended period of loneliness can make social interaction feel more challenging in the longer term." In this episode we talk about how we're alternating periods of social-butterfly celebration with days we still want to hide under the covers. It's a process, and we're all feeling it. Multi-talented theatre creators Ellpetha Tsivicos and Camilo Quiroz-Vazquez will present the world premiere of “Persou,” an experiential festival celebrating Spring at Nancy Manocherian's the cell Theatre in Manhattan Wednesdays through Saturdays through June 5. “Persou” is directed by Ellpetha Tsivicos and written by Camilo Quiroz-Vazquez, who previously collaborated in August of last year on the immersive, socially-distanced outdoor play Quince - which marked the first live theatre event in NYC during the Covid-19 pandemic. Ellpetha Tsivicos and Camilo Quiroz-Vazques joined Sarah LaDuke on WAMC’s Instagram “A Face for Radio Video Series” to talk about “Quince” and they’re back to speak their new piece. "Persou" is a participatory experience where audiences will be transported to an ancient ceremony worshipping the Goddess Persefoni at the Temple of Aphrodite in Paphos, Cyprus.

Cydonia oblonga is the sole member of the genus Cydonia in the family Rosaceae. Quince is a ‘pomme’ fruit with the likes of apples, pears, and medlars. Vermont Quince Hosts the New England Quince Taste Test of 2020 Perhaps before you listen to this episode 266 you might like to go to episode 248 to hear the initial blind tasting to compare the notes with this episode. The Inspiration Behind Vermont Quince A mother and son trip to Spain, inspired Nan Stefanik to incorporate Vermont Quince Company was in 2012. Since that time her one person company has not only wowed the foodie market with her many quince marmalades and pastes, but she also secured a Specialty Crop Grant for the #GrowQuince Initiative. Nan notes that she is "Still amazed that even at her age, she knew so little about quince" which had first been introduce to New England in 1629. At the time quince became a staple as it is a great resource for pectin used in the making of jams. From New England, the quince traveled to Texas in 1850 and then California. The Golden State became a top producer of 90% of the commercial quince on the market. In the mid 20th century the producing artificial pectin led to the demise of quince production. Market Research and Vermont Quince Nan credits her son for encouraging her to do a bit of market research on Quince. She found that US chefs were sourcing their quince from overseas from Spain, Italy, Australia and New Zealand. The thought of importing this once beloved pomme fruit (in the same family as apples and pears) inspired her to start her business Vermont Quince which produces a lovely assortment of quince condiments and preserves....and she even plays at home with infusing quince to make a delightful liquor. The quince is listed below in the order that they were presented in this blind tasting. Aromatnaya A Russian variety that bears a very large, bright yellow, aromatic fruit with a delicious, lemony flavor. Aromatnaya fruit can be eaten fresh, when thinly sliced and used to make marmalade and jellies. ID: This variety is typically squat and with ridges like a pumpkin Kuganskaya Known to be from the region of the southern Caucasus, north of Turkey and Armenia.  ID: This variety has very smooth skin and doesn't tend to split Smyrna Extremely large fruit with light yellow flesh, bright yellow skin. Attractive tree (or multi-stemmed shrub) has dark green foliage & very showy bloom. Tolerates wet soil. ID: Described by Nan as being a "big honking' fruit that can appear bulbous van Deman - this quince variety was developed by Luther Burbank, (March 7, 1849 – April 11, 1926) who was an American botanist and horticulturist based in California. Van Deman bears good crops of large and delicious, bright yellow fruit. Expect a spicy flavored from this quince.  Orange Expect ripening to occur October through December and to also extend through February in some colder areas. The Orange Quince is a self fertile tree and requires 300 chill hours.
