Cook over medium heat until sugar is dissolved. Turn off heat. Add ginger to taste. Once syrup is dissolved, remove ginger and store.In a cocktail shaker filled with ice, shake the first 5 ingredients until cold; strain into a rocks glass half-filled with lightly crushed ice.
