For his Roaming St. Louis segment this week, KMOX host Scott Jagow found himself sippin' whiskey at a distillery in the shadow of the Gateway Arch. He chats with the owner of StilL 630 (the 2nd L is capitalized) David Weglarz, a self-professed "mad scientist" when it comes to crafting bourbon, gin, rum and other spirits. Years ago, Weglarz abandoned his job in finance and pursued a passion for making spirits. He eventually helped pass a state law recognizing Missouri bourbon as a unique designation. Just this week, StilL 630's Confluence Gin won a big award.

At this point, it was well on its way to becoming another standout Single Barrel of our RallyPoint Rye Whiskey. They intentionally select a barrel that has special traits and ideal flavors to compliment the finishing barrel. This special barrel they use to add delicious flavors and nuance to their RallyPoint changes from batch to batch. However, they use one of their own old bourbon barrels that was used a second time to age actual maple syrup. When it is emptied after this second fill, they fill it with a hand-picked barrel of mature RallyPoint. Time alone dictates the length of maturation in the finishing barrel. No age statement on the rye or on the finishing. For this episode, Colt and James head over to the award winning Still 630 to meet up with David Weglarz. During our conversation with David we discuss all things Still 630 including the genesis of this endeavor, the hows and whys he decided to venture into distilling spirits, and all of the special events that Still 630 has in store for lovers of fine spirits. One of these ongoing events is the Experimental Spirits Program where, on the first Friday of every month, you can visit Still 630 and try one of these experimental spirits and then give David your feedback. This is an effort to give you and me a chance to personally determine what the future of craft spirits tastes like. After the show we took a tour of the distillery, which was very awesome by the way, and we were educated on the distilling process of these fine spirits. After the tour we had the opportunity to sample several of these spirits including their flagship Rally Point Rye, the S.S. Sorghum whiskey, and Colt and my favorite, Big Jake's Breakfast Brew, as well as the Expedition Rum. Still 630 is located at 1000 S 4th St in St louis MO at the corner of 4th and Chouteau Ave, just south of Busch Stadium.
