Established in 1867, the Evans Ranch embraces a “seed-to-sip” philosophy, growing all its grains on-site. In 2022, John decided to transform his corn harvest into spirits, creating a new chapter for the family farm. The episode kicks off with their Texas Three Way Whiskey, crafted with a mash bill of 51% corn, 34% wheat, and 15% oats. This whiskey delivers a honey-butter sweetness that coats the palate, finishing with a touch of barrel spice. Next, they sample the Texas Notch Bourbon, which shares the same mash bill but uses a different yeast strain, reducing the sweetness while adding spice for a longer finish. This week on The Whiskey Trip, the journey takes us to Culpepper, Virginia, home to one of America's oldest craft distilleries—Belmont Farm Distillery. Big Chief sits down with Founder and Distiller, Chuck Miller. Known from his time on Discovery Channel's Moonshiners, Chuck helped folks like Tim Smith bring their products into the legal market. But Big Chief didn't come for the moonshine—he came to sample the whiskey Chuck has been distilling since 1989, using grain from his own farm. Chuck distills with a historic 1933, 3,000-gallon kettle still, seized from an illicit site by the state of Virginia. They begin the tasting with Belmont Farm's Virginia Bonded Whiskey, aged in used oak barrels to soften the oak influence. Next, they savor the Virginia Reserve 10-year-old whiskey, a cask strength beauty at 116 proof, made from a mash bill of 50% corn, 25% wheat, and 25% malted barley. Big Chief declares this the perfect whiskey for a desert island. Wrapping up the first half, they enjoy a smooth Virginia Bourbon at 92 proof—a testament to Chuck's incredible still. The second half kicks off with an American Single Malt, aged 4 years and bottled at 86 proof. It delivers a sharp taste and a stunning nose, underscoring why these whiskies are making waves. Then comes the Rye Whiskey, crafted from 70% rye, 25% corn, and 5% malted barley, offering that root beer candy note Big Chief loves. Adrian Lipscombe is a native Texan, a chef, an urban planner, and a civic activist, though she prefers the term catalyst. In 2016, she moved to La Crosse, Wisconsin and opened Uptowne Café, a gathering place and a space for her to explore the synergy behind her Southern upbringing, Midwest ingredients and African American culinary history. In 2020, she founded the 40 Acres Project, which seeks to preserve the legacy of Black agriculture and foodways through the purchase of Black owned land. She's also a founding member of the Muloma Heritage Center, a non-profit exploring the African Atlantic influences in American culture, she serves on the board of the Edna Lewis Foundation, she's cooking at festivals and events all around the country, and today, was featured in NY Daily News for an upcoming Juneteenth Celebration with the James Beard Foundation. This week on The Whiskey Trip Podcast, Big Chief takes a ride to Northern, Virginia to visit Rebecca Harris from Catoctin Creek Distilling Company. Becky takes the big man through the history of Catoctin Creek and their Virginia Rye Whiskies. After years of being a chemical engineer she, along with her husband, started this craft distillery in Purcellville, Virginia. Their passion is rye whiskey done their way. All her products begin with the finest local and organic grains to create the cleanest spirit possible. At the heart of the distillery is a pair of pot stills, where Becky insists on cooking the distillate for a full nine hours, more than twice as long as most other distilleries, to create the unique and award-winning flavors in her distillate. They start the show with the Roundstone Rye Distiller's Edition. Only one in every ten barrels gets selected to be in the Roundstone Rye "92 Proof" whisky. This 100% rye mash-bill is something special. They then move on to the cask proof version of our ever-popular Roundstone Rye. Released at approximately 58% ABV (it varies depending on the individual barrels), this is seriously strong whisky! Delicious, dark, complex and ridiculously smooth for the proof To start the second half Becky and Big Chief sip on Rabble Rouser Bottled in Bond Rye Whiskey. "Where Roundstone Rye is sort of restrained and elegant," says Scott Harris, founder of the distillery, "Rabble Rouser is more unruly and vivacious.". White Corn + Amish Dairy Farm = Kentucky Craft On my first trip to Kentucky in 2022, I needed one more distillery to visit before heading down to Nashville for the Tennessee portion of my trip. I could've gone to a heritage distillery - still haven't been to Jim Beam or Buffalo Trace - but instead, I took a chance on a small distillery in Christian County near the state line: MB Roland. I got to go on the first-ever Distiller's tour, led by Paul, where we got to fill our own bottles right out of the casks. From there, we went into a makeshift bar under the beautiful visitor's center and sampled many, many more products, from a rye and a single malt to Pink Lemonade Moonshine, a favorite of bachelorette parties (don't knock it - besides being a great revenue source, it does actually taste great!). What became clear was that this small distillery, founded by a husband and wife team in 2009 in the earliest days of craft distilling in the backyard of the biggest bourbon producers in the world, was trying to do something different. Spirits using local white corn, experimental mashbills, playing around with cask sizes (though most are 53 gallons), and most of all doing what they wanted. It's a great place to visit with many different whiskies and spirits to try. Take the drive off the beaten path, it's worth it. When an unexpected parcel arrived in the mail room of the Whiskey Tangent Studios, we were a little puzzled but excited. And upon opening the package, our excitement mounted as we realized that the sample we thought we were getting, was actually the most beautiful whiskey-related thing we'd ever held in our hands. The octagonal black container is incredible, and the bottle with its surprise coin-containing stopper was even better. But, then we were like, hold up, how good is the whiskey going to be? Laura and Marie take the Big Man through the name and history of this grain to glass craft distillery. From a quote of Rutherford B. Hayes, “Austin is an inconsiderable village with Large Expectations…full of discharged ‘Rangers'…costumes of every variety. … Fierce Whiskers, gaming and drinking very abounding in all quarters” came their name that speaks truth to Austin. This beautiful Texas Distillery has embraced Austin's pioneer spirit and taken the steps to do it right with a beautiful Vendome Still and a Kentucky Style Rick House right in the heart of Austin. They start the show with their standard Texas Rye Whiskey that has a mash-bill of 70% rye, 20% wheat, 10% malted barely. With hints of Earl Gray tea it's a beautiful sipper. They move on to one of their special releases, HAM CHO'I Straight Bourbon Whiskey finished in Cabernet Casks. They finish the first half with a Smoke & Mash Collaboration that was smoked at Snow's BBQ. In the second half they start with Single Barrel Rye which was released to support a local charity, which highlights the distillery's commitment to community. They finish the show with a celebration expression, Summer Heat that's 109 proof to match the Austin summer heat. She travels as a brand ambassador to conduct tasting events and brand education, and also conducts in-depth distillery tours for visitors to Lynchburg.
