The boys are back with another wonderful edition of Proof Positive. This week they review Starlight Cart T Huber Cigar Batch. Another fantastic unique bourbon experience. In 2013, the family achieved their goal, and Starlight Distillery became one of the first artisan distilleries in the state producing bourbon. The expansion involved implementing a new 13,000-square-foot stillhouse, adjacent to their original production area. It was in this warehouse that Carl T Bourbon was born, named after the Huber family's patriarch and a lover of the spirit himself. Carl T. and his spouse, Marcella, are the reasons that the family legacy continues into the seventh generation of ownership and distilling.

What comes to mind when you think of bourbon produced in Indiana? Most would probably say MGPI. However, there are many other distillers who make great whiskey and call Indiana home. Huber's Starlight Distillery was first a family farm and winery, and now it has become a staple attraction of bourbon lovers in Indiana and beyond. This week we taste and review Carl T. Huber's Double Oaked Bourbon. This roughly four year old bourbon goes through a primary aging process and then is finished in toasted french oak. How will this whiskey stack up against some of the other toasted and double oaked expressions that we've tried? Give us 30 minutes of your time and you will find out. As you know there are a ton of new "distilleries" out there that call themselves distillers but don't actually distill anything. That's not necessarily bad, but it's basically lying. However, Starlight is not one of these. Their unique situation allowed them to ferment and age whiskey using their own grains on their own land and according to their own schedule. And what's the result of all this care and carefulness, you ask? There's no question that twice-barreled bourbons are becoming more popular.  However, a large majority these of bourbons are being finished in used barrels which previously contained wine, rum, or brandy.  Some, such as the two bourbons we are discussing today are finished in a second, virgin charred oak barrel. We discuss the ever-popular Woodford Reserve Double Oaked and compare it to a bourbon from growing, innovative craft distillery.  That is Starlight Distillery and their Carl T. Huber’s Indiana Straight Double Oaked Bourbon Whiskey.  We discuss the "double oaked" category and how it doesn't always mean "over-oaked". Sometimes, due to the secondary barrel's characteristics, more unique flavors can be developed in a relatively short period of time. Huber’s Indiana Straight Double Oaked Bourbon Whiskey Starlight Distillery’s brand new Double Oaked project begins with a fresh blending of Carl T. bourbon that is at least 4 years old which is used to fill a second, new American Oak barrel from Seguin Moreau in Napa, California. We crafted 5 barrels for the first round of this project. 2 of these 5 barrels have already been selected as private barrel picks, one for a retailer in Washington D.C. and one for a retailer in Indianapolis. Historically, the Seguin Moreau Napa Cooperage only produced wine barrels. When the company decided to start producing bourbon barrels, Starlight Distillery became one of their first clients. For our Double Oaked project, Seguin Moreau created the Vanilla Toast barrel. Our Carl T. bourbon becomes richer, more oaky, bolder, and more flavorful in these barrels. Antonio Brown is a wide receiver in the NFL. He wanted out of Pittsburgh, and got his wish when he joined the Raiders. He has self-inflicted issues with his feet....and the Raiders waited. He didn't want to change his helmet as per NFL guidelines, and fought the league about it....and the Raiders waited. Brown then called the Raiders GM a "cracker"....and coach John Gruden says Brown will play on Monday night. But a released private phone conversation between Brown and Gruden, and an Instagram post by Brown saying, "Release Me" made it clear - Brown wanted out....and the Raiders said goodbye.
