Before Irish whiskey as we know it today, there was a different spirit, the precursor to whiskey, the spirit that every house in Ireland had a drop of or participated in the making of. I’m talking of course about Poitín (pronounced pot-cheen). With a history that goes back hundreds of years, this once illegal spirit has always been seen as the drink of the people. To understand the spirit better, its history and future, we talked to Dave Mulligan from Bán Poitín about craft distilling, the potency of poitín, and of course the cocktails you can make with it.
