When I tell you I'm stoked for y'all to see this, is an understatement. Brenden is doing small batch Irish whiskey the right way, no shortcuts. No BS just great whiskey. But don't take my word for it , you gotta check it out. Cheers.Killowendistillery.comPatreon.com/offtopicwhiskeyBadmotivatorbarrels.com/shop/?aff=3https://www.instagram.com/zsmithwhisk...About KillowenThe most authentic of distilleries, Killowen Distillery is seated in the heart of the Mournes in County Down where horizons are framed by sweeping hills that slope gently into the sea. It is a place where old traditions and the finest natural resources have been blended to produce world class craft spirits. Our PeopleFounded by distiller Brendan Carty, Killowen's team brings together a rogues gallery of whiskey experts and enthusiasts, all driven by one thing; bringing back the character and tradition of real Irish whiskey.Brendan is active and influential in the Irish distilling world, and is obsessed with the revival of forgotten styles of native distilling. Our ProcessKillowen have selected two handmade artisan stills named Christoir (1000 litre) and Broc (800 litre). Both pot stills are flame fed and our condensers are worm tub. We believe the ancient still shape, size, flame heat and worm tub condensation help create a traditional spirit with a contemporary twist. It is our understanding that Killowen are the only Distillery to focus on purely worm tub condensers in Ireland. Our SpiritOur historically inspired, time-consuming processes allow Killowen's unique flavour profiles to echo the international whiskey of choice that where distinctively ‘Irish'. This will mean that the highly sought-after Irish product can rightfully be held in high esteem once again.Signature Rum & RaisinSINGLE MALT IRISH WHISKEYfinished in dark rum CASKS & PX SHERRY BUTTSBalancing PX Sherry & Dark Rum finishesfor the perfect flavour of the Carribean.with coconut & vanilla, figs, prunes & raisins. After aging for 5 years in Bourbon casks, this Single Malt has been divided and finished in Killowen's own dark rum casks & PX sherry butts. The County Louth malt is the perfect compliment to the marriage of PX sherry flavours of prunes, figs & raisins combined with rum's tropical Caribbean notes of coconut & vanilla.PANGURIRISH POITÍNARE YOU ON THE HUNT FOR THE PERFECT SPIRIT?Pangur Irish Poitín is a 50-50 marriage of two Irish Poitíns from two iconic distilleries, one big, one tiny, just across a lough from each other. They are masters of their art; brining you a Poitín of superior body & flavour.

The Cameron's Kick is one of the great curiosities of the cocktail canon: a split-base sour that brings Scotch and Irish whiskey together in the same glass. First published by Harry McElhone in the 1920s, it's a classic with a nutty twist thanks to orgeat. Joining us to unpack its history and execution is Liam Weitz, head bartender at Brooklyn's Deux Chats. Listen on (or read below) to discover Liam's Cameron's Kick recipe — and don't forget to leave us a review wherever you get your podcasts! Liam Weitz's Cameron's Kick Recipe - ¾ ounce fresh lemon juice - ⅓ ounce (scant ½ ounce) orgeat, such as L'Orgeat Almond Liqueur - ⅓ ounce (scant ½ ounce) simple syrup - 1 ounce Scotch, such as Johnnie Walker Black - 1 ounce Irish Whiskey, such as Bushmills Black Bush - Garnish: lemon twist Directions 1. Add all ingredients to a cocktail shaker with ice. 2. Shake until chilled. 3. Double strain into a chilled Nick & Nora glass. 4. Express a lemon twist over the top then discard.

Frustrated by the hoopla over Bourbons, with their relative scarcity and high pricing, Mike Gilmore decided to take a different tack. He started searching the world for alternatives to Bourbon, and found them in Armagnacs, Cognacs, and Rums from Barbados to Belize. For the last three years, he's been bottling them under his Roaming Road Spirits label, while also exporting Bourbons from his collection of barrels to Ireland and finishing them in Irish Whiskey barrels. We'll talk with Mike Gilmore on this week's WhiskyCast In-Depth. In the news, a receiver has been named for Uncle Nearest Tennessee Whiskey, while the Waterford Distillery receivership may not be resolved until next year.

Whiskey Lore

Back in the 19th century, when Ireland ruled the whiskey world, distilleries didn't bottle their own whiskeys. Instead this was left to whiskey bonders who took barrels of aged spirit and blended, distributed, and marketed them to the world as Irish Whiskey. As the industry consolidated during the 20th century, the roll of the bonder all but disappeared. But today, this Irish legacy has come alive once again with Shane McCarthy and his fellow founders telling that story through their Two Stacks Irish Whiskeys. Join us as Shane and I chat about the history of bonding, the misconception about peated Irish whiskey, putting whiskey in a mini-can, and why single grain may be the perfect gateway for Bourbon drinkers trying to find an Irish whiskey to embrace.  We'll talk about:  The origins of Two Stacks Irish Whiskey The Art of Irish Whiskey Bonding Reviving the Bonding Tradition John Teeling's Influence on Irish Whiskey Building Relationships with Distilleries Innovative Whiskey Production Techniques Signature Blends and Experimentation The Unique Concept of Whiskey in a Can Exploring the Single Grain Category Corn whiskey vs single grain Access beyond Two Stacks signature series And for those longing for a commercial-free episode with bonus interview time, try out the 7 day free trial of the Whiskey Lore Patreon Speakeasy at patreon.com/whiskeylore

In today's episode, I got to catch up with recent AB Tech graduate Ryan Schrader, who just completed a whirlwind tour of craft distilleries and breweries in Pennsylvania, all while helping out his 93-year-old grandfather. Ryan and I tasted through a plethora of bottles he brought back—including unique rye whiskies, innovative cask-finished bourbons, and a standout unaged apple brandy. Our conversation dove deep into Pennsylvania's rye revival, the craft spirit scene, and his own whiskey-making journey at AB Tech. We also looked ahead to his upcoming sensory adventure in Ireland, where Ryan plans to tour iconic distilleries and hunt down rare single malts (with oats, of course) to expand his already impressive palate. Ryan graduated from AB Tech in May 2025 with a passion for craft distillation, whiskey, and lifelong learning. Originally from Bethlehem, Pennsylvania, he brings a family history rich in whiskey lore, a home collection of rare decanters, and a keen curiosity about historic and emerging trends in the industry. His hands-on experience at AB Tech includes producing an Irish-style whiskey aged on maple wood—using homemade kiln-dried chunks from a tree in his own backyard. Ryan is always on the lookout for innovative flavors and is dedicated to exploring the global craft spirit community. “My love and passion for distillates has led me not only to become a lifelong learner and seek the associate's degree here at AB Tech, but also to find some pretty rare—well, pretty amazing—distilleries in Pennsylvania.” ~Ryan Schrader Today on Consuming the Craft:Pennsylvania is experiencing a craft spirits renaissance, particularly with rye whiskey, and features innovative distilleries such as Hidden Still Spirits (David E.), Stoll & Wolf, and Bluebird Distilling.Ryan discovered whiskey aged in unique casks, including those made from Umburana (a South American wood) and rum barrels, which added distinct cinnamon and sweet notes.Stoll & Wolf's unaged apple brandy at 107 proof was a standout for its creamy mouthfeel, delicate sweetness, and fresh apple aroma, despite being a clear spirit.Lancaster Brewing Company, with over 30 years of brewing experience, has recently added distilling to its repertoire, including a straight bourbon whiskey finished in its own Wee Heavy ale barrels. Many Pennsylvania craft distillers also provide top-notch food service, contributing to a full sensory experience.Ryan's capstone project involved crafting a traditional Irish whiskey with an innovative maple wood finish using kiln-dried, home-charred local maple.Upcoming plans for Ryan include a distillery-focused trip to Ireland, with visits to notable locations such as Middleton, Pierce Lyons (located in a historic church), and Kilbeggan, with a focus on tracking down oat-infused single malts, including Drumshanbo. The importance of glassware in tasting spirits was discussed, as different shapes bring out subtle variations in aroma and flavor. The highlight? Racing through three days of corporate headshots in London, where the CEO arrives and my flash promptly refuses to fire—just classic timing. A reminder: knowing your kit inside-out and keeping calm is what clients are really paying for. If you fancy joining me in Oxford for a day of portraits, stories, and good company, there's still a spot on our next Location Portraits Workshop. https://masteringportraitphotography.com/resource/mastering-portrait-photography-on-location-in-oxford-9th-june-2025/ As ever: trust yourself, enjoy the process, and be kind to yourself. Cheers!   Transcript   Introduction and Setting the Scene Well, it's been a while since I've recorded a podcast quite like this, but I'm sitting in our lounge. It's late. I've got a glass of Irish whiskey for a change, which is just beautiful. All of my whiskeys have been bought by someone and I love that. I love sitting and thinking of someone, a family member or a friend. 'cause I enjoy, well, the smell and the taste. There's some, I dunno why I like whiskey so much. Um, I just do, there's something, I think it's 'cause my mom and dad liked it. And possibly because of that, I find there's something really magical about the smell and the taste and the color and just, I don't know, something that sat in a barrel for a decade or more just appeals to me, and it has been another busy week. It's Wednesday as I record this, and yet it feels like it's been the end of a week. Um, it's just, it always feels like I'm playing catch up, but I think that's just the nature of the job. When I worked at Accenture all of those years ago, I quite liked the project mentality. Although we were busy, we ramped up and up and up and up until eventually we got to the delivery date. And then of course, once it was delivered, you've got a week or two off all of that pressure built and built and built. It was to an end point. And I don't think, as a photographer, I felt like that since I left that world now it's just a constant churn of to-do lists, retouching shoots, being energized, even things like recording this podcast. You have to be really in the mood to do it, and I'm not always. There have been plenty of times when I've sat down to record something and even a large glass of 15-year-old single molt doesn't do it. However, I am here, it is late. So forgive me if I sort of tumble over some of my words, but I really wanted to get, um, an episode out. I'm Paul and this is the Mastering Portrait Photography

Are You In The Muff Market? Are You A Muff Liquor Man?  Ok folks, we're going to have fun on this one.  When I started the research for this episode, I wasn't sure whether the "Muff Liquor Company" name was a tongue-in-somewhere thing or a hard lean-in. Turns out it's the latter with a healthy dose of the former. It is a company based in Muff, Ireland that makes liquor, and yes they know what the name means.  If you doubt it, check out their April Fool's Day post from this year...just delightfully dirty.  Once you're past the name, though, you've got to have a good product for me to care, and boy do they. I'm joined by Laura Bonner, founder of Muff Liquor Company and probably the closest connection I'll ever have to Jimmy Carr and Ed Sheeran. She's made Muff Liquors of these men, joining Russell Crowe and other notable celebs as spokespeople and investors.  The journey was long and hard, and nothing came easy (ok, last puns, I promise). COVID nearly put them under before they could begin. Now, they're thriving, and the US market awaits.  Muff Liquor's Irish Whiskey is a delicious pour, smoked apples and gentle, sweet peat, at a ridiculously affordable price point (all of their products are $34.99 MSRP, give or take). Inside you there are two wolves…and both of them are drunk. That would be due to the Writers' Tears Copper Pot Irish Whiskey which we've paired with this week's topic of conversation—The Witcher: The Ballad of Two Wolves, the Brothers Grimm-inspired graphic novel that features a young woman named Red, three sisters named Hogge and one big, bad, booze-fueled wolf. (And no, we're not actually talking about Geralt here, though he's in the story as well.) As ballads go, this proves to be a lively one, as we debate the blast radius of evil curses, delight in Dandelion's delirious behavior and reveal why gathering a bunch of people who hate each other in a locked room while you accuse them of crimes is usually a dumb idea. Oh, and Geralt hooks up with a sorceress. Because of course he does. Hold music: "Local Forecast - Slower" by Kevin MacLeod

Was it born from the rolling hills of County Tipperary or marched out of the Irish ranks in World War I? Join us as we stir and stumble through conflicting cocktail recipes. This cocktail represents the final days of the Golden Era of cocktails, where every bartender had a different story and every recipe was a potential act of liquid rebellion.
