Tasting NotesWhen John Teeling converted an industrial alcohol plant in County Louth into what became "Cooley" distillery in the late 80s, the seeds were planted for the revival of Irish whiskey. Kilbeggan, Tyrconnell, and Connemara all sprung forth, as well as a slew of barrels for smaller brands to grow and experiment. Post-Beam Suntory acquiring Cooley and the brands, the second generation of Teelings went to work on founding their eponymous whiskey company. Today, happily aging and bubbling away in downtown Dublin, the Teeling Whiskey Co. is still owned by John and Stephen, but with a 40% stake by Bacardi, the whiskey has grown its global presence. Presumably, the brand began life from older Cooley stocks, finished in ex-rum casks and bottled non-chill filtered at 92 proof. The nose is an explosion of fruit and malt with a rich cereal grain and sweet tropical fruit note emerging. On the palate more malt, sweet spice, and a treacly, syrupy rum-soaked spice cake. The finish is long, sweet, and simply pleasurable.
Tasting NotesSingle pot still Irish Whiskey, a style unique and legally bound to Ireland uses at least 30% unmalted barley in its grain bill and is typically triple distilled to achieve a uniquely pleasant grassiness combined with citrus. Add to that ageing in sherry casks and you get Redbreast 12, one of the most elegant and drinkable premium whiskies in the world. Spice, citrus, and fruit dominate the nose. On the palate, red fruit and citrus, then candied lemons, orange creamsicle, light earth and a perfectly spiced finish.

It's hard to imagine what the whiskey industry would look like today, if a certain excise man had succumbed to the wounds he received in Donegal in 1810. The early 19th century was a critical time for Irish whiskey. The Acts of Union had united the country with an empire and new markets were open for spirits. But growing pains were the rule of the day. Large distillers and the Parliament were crushing small distillers and becoming jealous of those who were making higher profits off of their illicit poitín. A war was brewing out west and something was going to give. Also in this episode, we'll rejoin Alfred Barnard as he travels from Galway to Limerick and I'll be stopping off at the Old Bushmills Distillery in Northern Ireland.

It was a pivital time in Irish history, when a last ditch effort was made to separate from the control of Great Britain. Its an event that would echo down through Irish history - especially in Belfast and Northern Ireland. James's childhood holidays in Donegal nurtured a love for the folk tales of the Sliabh Liag peninsula and more importantly a dream for the future possibilities of reclaiming Donegal's distilling heritage; this is the driving passion behind James and Moira Doherty's return to Donegal to establish Sliabh Liag Distillers. The Silkie range – named after the mermaids who would come ashore, shedding their seal- like coat to become beautiful dark haired maidens and steal the hearts of local fishermen – is the first product launched by the business. Founder of Sliabh Liag Distillers, James Doherty, says the inspiration for the collection of Silkie whiskeys comes from memories of those early years in Donegal: “In the mornings, I would head down to the kitchen, where beside the stove, grandad's pipe would be sitting from the night before. Grandad was a wonderful man, tall, strong, hard-working, and generous, with a mischievous twinkle in his eye. Eleven-year-old me would tug on his pipe and I can viscerally remember the sweet tobacco, smoky and ashy aroma. It seemed to compliment the smell of the stove, the peat and my gran's baking. Although it's a morning moment, the whiskey is the taste of the night before”. Once he has this taste in his mind's eye, the sense of place for James is richer than the lighter Irish whiskey style prevalent today. His aim is to create a style that harks back to a richer era in Irish whiskey, pre-prohibition, and for which Donegal's distillers were famed. James continued: “I look for balance in the structure of that taste in the whiskeys available to me. One building block of Dark Silkie is intense sweetness - Grain Whiskey virgin oak provides a rounded sweetness, caramel toffee; it feels rich, luxurious, generous, and safe, and captures the innocence of that version of me. It also brings a degree of tannin to the whiskey. Another is smoky, ashy; triple distilled peated malt provides the pipe aromas, an earthy smoky note that we can get to play off the sweetness of the grain. Accents include aromatic dryness. To balance the intense sweet grain I choose the aromatic freshness of a double distilled single malt in sherry, more estery and zesty to cut into the sweetness in the final blend, all of which creates a maritime herbal quality that is almost salty”. During the golden age of Irish Whiskey, Belfast-based Dunville's was one of the biggest brands on the market. While the brand was almost lost to history, it was revived a decade ago by the family-owned Echlinville Distillery in Northern Ireland. Using vintage sourced whiskies, the Dunville's brand has been preserved for new generations of Irish Whiskey fans. We'll talk with Echlinville's Jarlath Watson about the Dunville's heritage and building new traditions as the distillery prepares to release its own whiskies starting in 2023.
