“I think making a good cocktail is actually quite easy. Guests don't come primarily for the drinks, but for the atmosphere, hospitality, and the people,” says Adam Eddy Bursik, a Slovak bartender currently working at the Origin Bar in Singapore. In an interview for VisitChef, he speaks openly about burnout in Asian bar culture, the behind-the-scenes reality of the World's 50 Best Bars list, and why bartenders often create menus mainly for themselves.
I met Aarón in Europe when he was visiting, and I've wanted to sit down with him for ages. “One of the biggest misconceptions is that The World's 50 Best Bars is based more on popularity than on experience. In reality, at its core, it's very much an experience-driven list. It's important to understand that guest shifts and pop-ups are not eligible for voting. We always say you should deliver the best possible experience to every guest who walks through your door. Try to see the award as a by-product of that hard work, rather than the end goal itself,” says Emma Sleight, Head of Content and Creative at the prestigious The World's 50 Best Bars ranking.Líbí se Vám tento díl? The MAFFEO DRINKS Podcast is a leading drinks business podcast, listened to in 120 countries worldwide with 125+ episodes. Honest conversations about how the industry actually works, from the bar and what it means for the boardroom. This Episode is hosted by Chris Maffeo and brought to you by MAFFEO DRINKS.Robert Simonson, author of seven cocktail books including “A Proper Drink,” and "Modern Classic Cocktails", has spent twenty-five years documenting the modern cocktail era as it happened. Not reconstructed afterwards. Not filtered through brand mythology or oral history passed between generations of sales managers. He was in the room. He talked to the people making the decisions while the bars were still open and the drinks were still new. Seven books. His Substack newsletter The Mix. A primary source in an industry where almost everything gets retold until it resembles something useful to whoever is telling it.In this episode, we go back to the question that most people in commercial roles cannot answer precisely: why did the canon close, and what replaced it. We examine the intimidation factor preventing cocktail culture from scaling to mass audiences, the missing middle between 50 Best Bars theatrical experiences and basic dive bars, and why guest shifts evolved from knowledge-sharing mechanisms into publicity machines. The answer is mechanical. It has been running inside the industry for over a decade. And if your brand is not scaling at the pace you want, despite the distribution, the accounts, and the activations, it is likely the same dynamic is producing the same result at a different scale.Timestamps:00:00 Introduction and Welcome00:09 The Birth of Modern Cocktails00:41 Modern Classics and Their Impact03:06 Challenges in Creating New Cocktails08:30 The Role of Brands in Cocktail Evolution16:37 The Missing Middle in Cocktail Culture25:10 The Future of Cocktail Journalism30:54 Conclusion and Final Thoughts Wanna know what the conversation above means for your team? Recently, I sat down with my good friend James Iranzad (Gooseneck Hospitality) for a long-overdue catch-up, beginning with a piece that caught both our attention: Substance Abuse, a column by Ed Elson in the Simply Put newsletter. Elson's provocative thesis suggests that the dramatic decline in alcohol sales isn't primarily about health consciousness, GLP-1 drugs, or cannabis legalization — it's about screen addiction. Together, we broke down his argument, and discussed what it means for the hospitality industry.Next up: North America's 50 Best Bars returned to Vancouver last month, turning a spotlight on the city's growing international reputation as a beverage destination. What did the event mean for the local scene? Who showed up? And what does this continued investment in our city signal about where the global industry thinks we sit on the map? Then, we run through the results of the latest editions of Canada's 100Best Restaurants and the Vancouver MagazineAwards to talk about who made it, who moved up, and who got overlooked; as well as which patterns we're seeing across the lists — regionally, stylistically, and in terms of what the judges seem to be rewarding. Finally: Earlier this month, a temporary pop-up plaza was constructed next to Bells & Whistles in what appeared to be an accelerated timeline, prompting a report by CTV News. Iranzad gives his account of how the application came together, what the original vision was, and where the project actually landed.Midway through our discussion, James Langford-Smith (Pamplemousse Jus, June) calls in to fill us in about what's happening at the winery, and what consumers can look forward to from his latest vintage. This is a fun one as always. I met Eric in Amsterdam in 2019 just before he moved to Mexico City to open his first bar there, and our paths have crossed a good bit since then, most recently at the Maybe Cocktail Festival in Sydney, where we got to hang out for almost a week. Eric started off in the world of basketball, training and playing in the US, switched to hospitality after returning to the Netherlands, and rapidly learned his craft, winning the global finals of Bacardi Legacy in 2018 and moving to Mexico City in 2019 to open a bar there. His second bar in CDMX, speakeasy Handshake, opened in 2021 and within just six months was on the 50 Best Bars list, winding up as #1 in 2024 and maintaining the top spot for 50 Best Americas in both 2024 and 2025. In late 2025 he finally opened the European cafe-style Shakerato in his native Amsterdam. This is a great episode, as Eric speaks with typical Dutch honesty on some of the tougher challenges he had on the road to opening a W50BB #1 bar. Our first trip of the year took us to Milan for the launch of Coqtail magazine's winter edition (grazie mille for the invite Penelope and Chiara). Which gave us just enough time to soak up the atmosphere and revel in that famous Italian hospitality in four very distinct bars.First up, Camparino in Galleria, not only a symbol of the aperitivo but also the history of art and culture in Milan; then we headed to 1930, once a speakeasy, now open to discerning drinkers with an appetite for creative culinary cocktails; on the hotel bar front, we were thrilled to experience the magic of the Maestro Salvatore Calabrese at his latest collaboration with the Rocco Forte group at The Carlton hotel and lastly, we headed to Moebius Milano to find out why, not only was it the highest climber in this year's 50 Best Bars list at No. 7, but also the proud owner of a coveted Pin from The Pinnacle Guide as well as Michelin Star. But as well as visiting the bars, we talk to the people behind them, so this is a longer episode than usual but with inspiring chat from Salvatore Calabrese, Benjamin Cavagna, Lorenzo Querci & Tommaso Cecca, we hope you won't mind. What we're mixing:Negroni Sbagliato30ml Campari30ml sweet vermouth60ml dry proseccoMethod:Chill glasses and fill with ice. They discuss the joys of small business growth, vital entrepreneurial habits, and strategies for team building, encompassing wins, blunders, and invaluable advice. And a snapshot of the final five Grow A Small Business Questions: 1. What do you think is the hardest thing in growing a small business? According to James France, the hardest thing is feeding the cash flow furnace, as managing growth and funding operations is always a major challenge. 2. What's your favorite business book that has helped you the most? James France shared that his favorite book is “10 Truths for Raising a Healthy, Bouncy Business” by his former coach Roland Hanekroot, which offers practical stories, case studies, and clear next steps. 3. Are there any great podcasts or online learning resources you'd recommend to help grow a small business? According to James France, industry podcasts like James Atkinson's Drinks Adventures and Sam Bygrave's Boothby have been particularly valuable for learning, especially about the on-premise drinks industry. 4. What tool or resource would you recommend to grow a small business? James France shared that the most important tool or resource to grow a small business is having a good advisor or sounding board — whether it's a mentor, coach, or accountant—someone who can provide objective, pragmatic advice and not just handle the numbers. 5. What advice would you give yourself on day one of starting out in business? According to James France, the advice he would give himself on day one of starting out in business is that it will be much harder and more expensive than expected—like having children—so be prepared, keep your promises, and always treat people with respect. Since hitting the top, Jack has redefined excellence through the lens of bar ownership and has spent the last several years working to become the best owner he can be.
