With 'Top Chef Canada' Season 11 casting currently underway until mid-April, many Canadian chefs from coast to coast to coast are crossing their fingers to end up on the popular reality competition series. On this special one-off podcast episode (co-hosted by Dan Clapson, Carmen Cheng and Phil Wilson), we chat with one of the show's judges Mijune Pak, as well as and Season 10 runner-up Dez Lo about everything from what attributes a successful TCC competitor needs to possess, tips and tricks for the application process and more. While not every chef who appears on a season of 'Top Chef Canada' achieves celebrity chef status afterwards, there are many that do. Mijune Pak dubs one chef the "Jennifer Hudson" of the TCC franchise and Dez Lo explains how she is still making the most of her time in the limelight.
Today we had the opportunity to chat with with none other than my old friend Mijune Pak. Her amazing story of carving out a career in hospitality is pretty amazing. From her humble beginnings to eating across France and Portugal at 3 Michelin starred restaurants. Her love of great food in infectious and her love of the Chefs, Managers, Waiters and Sommeliers runs very deep as well. I hope you enjoy this conversation.

When, and if, someone writes the ‘origin story' of this podcast, it'll start with a big idea. And that idea is COOKSCAMP - an annual jamboree of professional cooks and their colleagues to talk about the future of their careers. We haven't managed to get the outdoor event on its legs yet, but the Chefs' Table Society of British Columbia recently organized the first virtual edition for more than 300 campers across Canada and beyond. No woodsmoke in the air, but lots of great career advice for professional cooks, including tips on publishing a cookbook in 2021 from author Julie Van Rosendaal and publisher Robert McCullough of Appetite by Random House. Vancouver chef Angus An, also offered a great tutorial on sharpening your media skills to do better demos and other promo events. Recorded on ZOOM Wednesday September 15th, COOKSCAMP 2021 also features co-host Mijune Pak.
There was a lot to talk about this week with the Top Chef Canada season six finale. After cohosts Emma Waverman and Phil Wilson dissected the final showdown earlier this week, there wasn't much time left for interviews. So, "part two" to our latest episode of More Than Maple Syrup, offers some further conversation with Dan Clapson about the 2018 season of the show and also features an interview with judge Mijune Pak and runner-up Mark Singson at Singson's finale party in Vancouver. The two offer plenty of behind-the-scenes insight. Then Wilson hops on the phone to Top Chef Canada's first East Coast champion, Ross Larkin and Emma discusses the exciting new approach we'll be taking with the podcast now that the popular culinary competition series is wrapped for the year!

With its shortest season to date, Top Chef Canada had its eighth and final episode for the calendar year this past Sunday night where four finalists from different regions across Canada were whittled down to two, making it an official west coast versus east coast battle for the crown. Some production decisions regarding Raymonds Restaurant chef de cuisine and finalist Ross Larkin in both the finale quickfire and elimination challenge give our cohosts, Emma Waverman and Phil Wilson, fair reasons to raise their eyebrows (or at least one of them). Outside of that, the two discuss the intensity of the episode and ponder whether or not the Top Chef Canada judges take an entire season's performance into account when crowning a new top chef or whether a chef truly is "only as good as his or her last dish", as they so frequently say.Be on the look out for part two of podcast episode this week which features exclusive interviews with the season winner, Larkin, runner-up Mark Singson, judge Mijune Pak and more.
