Professor Maggie Cusack is the new president of the Munster Technological University. MTU, which is the result of the merging of IT Tralee and CIT, will be officially established on January 1St. Professor Cusack has a long established career in academic leadership and research; she is currently the Dean of Faculty of Natural Sciences, Professor of Biomineralisation at the University of Stirling.

AFL sports person Ailish Considine joins me for hands down one of the most enjoyable conversations of this series. Her grounded attitude and openness to talk about her constant battle with negative self-talk and lack of confidence whilst knowing she is naturally a skillful individual.  In her teenage years she battled with self confidence linked to her weight and once she recognised that talent and skill can only bring you so far she began her fitness journey. Ailish credits improvements in confidence & mindset with getting physically fit.  IT Tralee was a turning point for Ailish on a couple of levels - Fitness & Mindset. Training provided an outlet to switch off the negative self-talk.    She tells us that over the years team sport provided her a safe space or company whether it be through deep and meaningfuls or the feeling or just being part of a tribe. She openly expresses that involvement in sport has seen her through darker days.  Sport took on a whole new meaning when she took part in Crosscoders which ended in a signed professional contract with the Adelaide Crows AFL Team. From learning a completely new sport on the other side of the World to winning a Grand Slam title to fulfilling an ambition to have her name on the wall. Need we say more.  Living and playing AFL in Australia is a dream come true for Ailish and her story is inspiring for all sports people who one day want to represent Ireland on an International level.  Over the past few months whilst in Ireland, Ailish has worked on fitness for her return to the season. Today 29 young entrepreneurs were congratulated on successfully completing the Student Inc. Accelerator Programme at Cork Institute of Technology, University College Cork and Institute of Technology Tralee. The Accelerator Programme runs from June to August and set up to encourage students to develop and grow their innovative ideas and start their own business. Students with business talent Students receive €4,000 in funding (purchase equipment and a wage to offset a summer job), expert training, mentoring, office space, and the opportunity to learn from and pitch to entrepreneurs. Speaking today at a virtual showcase event, Carole O’Leary, Programme Manager said: “This year’s programme had to be adapted in response to Covid-19 restrictions and the need to social distance. My colleagues at UCC, IT Tralee, and I worked in conjunction with the Technology Enhanced Learning Department in CIT and the E-Learning Development and Support Unit in IT Tralee to design a way to deliver the programme online and ensure students received the full benefit of the programme. As all training modules, one-to-one expert mentoring sessions, and regular review meetings were delivered virtually over the summer, the online teams put a lot of thought into new ways of maximising the daily contact between the students and the support teams in the three colleges”. “Developing a new business idea can be a lonely place, particularly during a pandemic. In normal times office space is allocated to each student in their respective incubators with access to their start-up communities, so we ensured plenty of social interaction each week, in a trusted environment, to help alleviate isolation and compensate for the lack of face-to-face contact. We are very proud that we kept Ireland’s longest-running student accelerator programme running and we now have 29 new entrepreneurs with fully-fledged business and completed business plans”. Today’s showcase event took place with all 29 students and their 3 support teams in attendance virtually, combined with an online audience of guests from all over Ireland, including guest speaker, James Whelton, co-founder of CoderDojo, coder and venture capital advisor. Mark Murphy is co owner of Dingle Cookery School in Co Kerry and a Failte Ireland Food Ambassador. He studied Sport and Leisure Management but became fascinated with cooking while travelling. He loved to eat and thought it would be useful to know “how to cook ten or twelve dishes”. He learned, and soon he was shopping in local markets and cooking 3 course meals in hostel kitchens for fellow backpackers. He decided to train as a chef. Having worked in good local restaurants and hotels, Mark found he had a passion for teaching and joined IT Tralee as a lecturer in Culinary Arts. Mark attended the inaugural Food on the Edge in 2015 and acted as a moderator at one of the sessions.
