Erin Parker has been blogging since May of 2011. Being in the kitchen makes her so happy that she turns to it whenever she finds herself stressed. Erin believes that from-scratch recipes are the best kind of recipes and strives to develop dishes that are friendly to folks who don’t have all day to spend in the kitchen but who also don’t mind taking the time to make a delicious, homemade meal. A few of Erin's favorite things: Fresh, seasonal ingredients because they simply taste better. Not only that, but they’re more affordable! Simple entertaining. Hosting friends to watch a game or to hang out over dinner totally counts as entertaining and should be done more often. Enjoying good food. Her blog strives to strike a balance between the sweet and savory, decadent and healthy, and a little bit of everything in between. Spinning classic recipes into something a little more interesting. No offense to the classics—they’re classics for a reason, obviously, but Erin loves to make them new and exciting, while still reminding us why we adore that recipe. Cooking and baking, her language of love. Erin has no qualms about inviting friends over for dinner on a random Tuesday two hours before the food hits the table. In fact, it makes her exceedingly happy. Developing and finding recipes that everyone, including friends with dietary restrictions, can enjoy without worry. The Speckled Palate is named after the family dog, Lucy, and her actual speckled palate.
