In this special episode, two 2023 gold-medal-winning breweries discuss their methods and approaches to making wood-aged sour beer. First up is Kyle Vetter, founder of 1840 Brewing in Milwaukee, Wisconsin, whose kriek-inspired "I Don't Want To Wait" won gold in the fruited wood- and barrel-aged sour beer category. He hits on the details behind how the beer was made, including: using oak as an ingredient not just a vessel building body with alternative brewing grains selecting barrel stock to best support fruit preparing fruit and aging over six months selecting Brettanomyces strains And more. Then, we're joined by Joel Stickrod and Spencer Longhurst of Nashville's Barrique, who talk through the methods behind their gold-winning Wet Hop Strata 2023, including: open-top fermentation in wooden barrels building a blending library with four schools of wood-aged beer using high loads of unmalted Tennessee wheat brewing with aged Cascade hops long-term aging on wet hops building compelling blends of old and young beer And more. Back in July, we were lucky enough to spend a little time with Kyle Vetter at his 1840 Brewing in Milwaukee (which you can hear on our Brew City episode), and since then we’ve been dreaming about getting five bottles to the bunker for review. Craig’s recent travels bring us a wide variety of styles from this two year-old brewery, and at least one of these beers will be written into the ABV Hall of Fame for eternity. The whole lineup offers an array of big flavors, and we are already planning our return to Milwaukee. Also, Craig ponders a sympathetic Godzilla, Ryan’s been working on some disturbing fanfiction, and we almost get the podcast taken away from us. Ponder your pastry. Beers Reviewed Kascade Kid (Unfiltered lager w/ Hull Melon hops)Rouge (Spelt and wheat saison dry-hopped with Barbe Rouge) Hype Moves (Sour vegan gluten-reduced milkshake IPA double dry-hopped w/ Sabro, super-fruited w/ mango & pineapple, and conditioned on vanilla beans and toasted coconut) Sea Foam (Fruited sour w/ pineapple, passion fruit, blue spirulina, and lactose) Bere Cioccolato (Imperial stout w/ cacao nibs, coffee, hazelnuts, and lactose aged in grape brandy and two-fill whiskey barrels)
Milwaukee’s great reputation as the home of brewers (and The Brewers) was long built on cheap adjunct lagers. But in three years time, the Brew City has been reborn as a craft beer destination. Ryan and Craig had a torrid affair with Milwaukee’s beer scene in 24 hours, gathering beers and interviews along the way to provide a whole episode that is basically beer tourism propaganda. Listen as we welcome Andy from Third Space to hazetown, and he guides us through a speed-tasting while explaining how they sold their beer to Miller Park and won three GABF medals in two years. Kyle Vetter from 1840 shares a green beer with us while talking about his sometimes unconventional methods of achieving liquid perfection and where he sees the brewery growing in the near future. We also pop open four beers to review while reliving our experiences at Vennture, Good City, Hacienda, Lakefront, and the locally infamous Wolski’s. And you learn the totally relatable ways we manage to stay so fit, and admire Leather David. Remember - there’s more to life than lactose. Interviews Featured Andy Gehl of Third Space Brewing (00:08:58 - 00:30:03) Kyle Vetter of 1840 Brewing Company (00:37:38 - 00:58:36) Beers Reviewed Third Space Brewing - Happy Place (Midwestern pale ale) 1840 Brewing Company - Rickety Elevator (Mixed culture saison) Hacienda Beer Co. - Time Is An Illusion (New England DIPA) Good City Brewing - Lord Lyon - Rye Barrel Aged (Scotch ale)

Like most brewers nowadays, Kyle Vetter got his foot in home brewing. He has been the oak manager at Aspen Brewing, where his fondness for barrel aged beer started to grow. A Milwaukee native, Kyle wanted to bring what he learned in Colorado home. He is the founder of 1840 Brewing – an urban farmhouse brewery focused on barrel aging and blending. He lives by the saying, “Drink slow beer!”
