We find ourselves recording from the media room at the GABF where we meet up with Grant Wood from BERO brewing. We sample the Noon Wheat, Kingston Golden Pils, Edgehill Hazy IPA, and Double Tasty West Coast Style IPA, while chatting about Tom Holland and Zendaya, the point of the NA beer, beer and the freedom to feel great the next day, beer for everyone, zebra drinking, pub culture, the social aspect of beer, a humble trout, getting an NA to taste like a beer, the BERO process, Employee #2, trial and error, naming a beer after your high school, the excitement of building a new brand, sustainability and regenerative agriculture, a new fangled West Coast IPA by way of Texas, bringing the heroes together, and going from zero to BERO. Seattle's Fast Fashion (https://themasonryseattle.com/fast-fashion/) has built a reputation for modern, forward-looking IPAs and hop-focused lagers, and the characterful brewery and taproom in SoDo expresses the eclectic interests and aesthetic taste of founder Matt Storm. It's a funhouse of sorts—a bit like drinking in a thrift store full of budget mid-century furniture, stocked with kitsch that spans the past six decades. It's busy and not necessarily thematically consistent—much like the beers the brewery makes—but it's different and unique. You will not confuse it with another brewery. Over the past half-decade, the beer itself has developed from quick hits of new hazy IPAs filled with the coolest names in hops, to a more diverse lineup of IPAs and lagers—still hop forward and immaculately crafted. Under head brewer Stefano Annicharico, they've found a way to make beer that keeps the baseball game-day crowd happy, while also continuing to explore the possibilities in contemporary beer styles. In this episode, Storm and Annichiarico discuss: how Anchovy hops came to have such a unique name brewing drinkable, semi-dry hazy IPA with heavy adjunct loads building acidity in the mash to promote drinkability despite later dry-hop additions that raise the pH boiling hops in hazy IPA with 20-minute additions for more longevity in package lowering whirlpool hop amounts and pushing higher loads in post-fermentation dry hops finding bits of distinct character in hops such as Nelson Sauvin, Motueka, and NZ Cascade (aka Taiheke) avoiding excessive rousing to limit hop burn using New Zealand hops in modern hoppy lager And more. It's fresh hop season and Alex sources four of the best fresh hop beers from the heart of hop country: the Pacific Northwest. Beers from Fremont Brewing, Crux Fermentation Project, Little Beast Brewing, and Gigantic Brewing Company will face off to see who's got the dankest offering this fresh hop season. Another GABF is in the books...Reports from the field say this year's Great American Beer Festival was a shell of what it once was. That's not surprising considering the overall craft landscape, but still a bummer.Seeing the beers and breweries that win, and what categories are popular is always fun. I learn about new breweries every year. Also, the West Coast IPA continues to make a comeback. There were 300 entries in the category with Hazy/Juicy edging it out for the top spot but just 1 more entry. Impressive.More news on Iron Hill that somewhat unexpectedly shuttered all their locations. Their financial are pretty shocking. It's a bit surprising they stayed open this long.On the international front, India is facing a major can shortage that could impact beer supplies and more news on pre-Incan psychedelic brews. It can be difficult to articulate how to make simple beers extraordinarily well—much comes down to ingredient quality, training and discipline, and the hundreds of small choices a brewer makes throughout the brew day and through fermentation and packaging. At Seattle's Machine House, (https://www.machinehousebrewery.com) founder Bill Arnott will tell you that he doesn't do anything special, yet the cask ales he brews are favorites of brewing peers thanks to a dogged focus on English-style beers and a dedication to serving them well. In this episode, Arnott discusses: building a more authentic and satisfying approach to cask ale in the Pacific Northwest battling the “warm and flat” caricature of English-style cask ale taking a contextual approach to yeast with different strains for different beers Timothy Taylor yeast versus the Fullers strain for different expression brewing fresh hop cask ale successful fermentation in unitanks with minimal temperature control cask and can conditioning for staying power in the beer achieving the right amount of astringency with brown malt making excellent beers with a somewhat “primitive” process And more. Denver is the closest to Heaven that we'll ever be, and we don't want to go home right now. Broadcasting amongst the Rocky Mountains (from our very cushy hotel room), we file our annual report on America's largest beer festival and competition: the Great American Beer Festival. We open three Colorado beers over two nights and relive our extended weekend celebrating beer and the people who make it by running through our Denver-area highlights, recapping the festival and awards results, and sharing from our long lists of favorite beers. Plus, we snagged some interviews with brewers from all over the country that share stories of crazy adjuncts, surprising medal wins, and faux-coctions. We also get into how to properly stress out hops and share a story of how we crashed a black tie concert featuring a 90s hitmaker band - but I won't tell you their name. The Brewbound team recaps the 2025 Great American Beer Festival (GABF) and the start of the National Beer Wholesalers Association's (NBWA) Annual Convention and trade show, on the latest edition of the Brewbound Podcast, recorded in Las Vegas. Jess and Zoe share their experiences at GABF, including which legacy craft brewery brought the Party Bomb; festivalgoers' reception for full-strength spirits; the return of timed special pours; mixing Pop Rocks and BeatBox; and the flamboyant embrace of costumes. The conversation shifts to NBWA convention's first day, including the key theme of wholesaler independence from supplier interference shared by outgoing NBWA president and CEO Craig Purser and board chair Rebecca Maisel. They also discuss the underlying theme of beer as a social lubricant, including untapped events and occasions that could provide a boost to a soft beer category. Then, in this week's featured interview, Maisel joins Justin to discuss her call for freedom from “undue supplier influence” and why distributors are questioning their supplier relationships. Maisel also dishes about her last ride on the NBWA board after 11 years, why drinkers are distracted and the growth of intoxicating hemp beverages.

The 2024 World Beer Cup was quite a moment for Issaquah, Washington's Formula. (http://formulabrewing.com) Head brewer Jesse Brown is no stranger to medals, but four in one year at the world's most prestigious beer competition made a statement. His career as a brewer may look like “Swiss cheese,” with stints in Wyoming, Tennessee, Oregon, and Washington, but it's hard to poke holes in any of his thoughtfully designed and thoroughly executed lagers or IPAs. In this episode, Brown discusses ingredients as well as the labor-intensive process behind his helles, touches on the hot-side versus cold-side fresh-hop controversy, shares his approach to New Zealand hops that won him a silver medal for New Zealand–style IPA at World Beer Cup 2025, and finishes with thoughts on what it takes to win when so many brewers are making such great beer. Along the way, he discusses: front-side decoction without a dedicated vessel extended saccharification rests to build malt depth gently handling lager to avoid bruising the beer the differences between 34/70 strains transferring before terminal to get a head start on clearing yeast the fresh-hop “controversy” the beauty of Dolcita and building mouthfeel with hops blending base malts for West Coast IPA selecting early-pick New Zealand hops for lower diesel character And more. Tonya Cornett thought she would end her career at 10 Barrel Brewing. She had joined the Bend, Oregon-based craft brewery in 2012, piled up competition medals for her beers and created a following at the brewery. She thrived as the brewery's R&D brewmaster before and after its 2014 sale to Anheuser-Busch InBev (A-B). But then Tilray Brands acquired 10 Barrel and seven other brands in 2023. A year later, Tilray laid off Cornett and members of her team in a move that shocked many within the industry. On this week's Brewbound Podcast, Cornett discusses her journey over the last decade-plus and her next chapter with Upp Liquids, a new venture in the rebranded Immersion Brewing space. Cornett shares her experiences at A-B, how 10 Barrel and her role changed under Tilray's ownership and her goals with Upp moving forward. As the Great American Beer Festival (GABF) kicks off in Denver, Cornett also explains how medals have served as a stamp of approval throughout her career and why they remain relevant. Cornett's beers have received numerous competition medals throughout the years, including 28 medals at the Brewers Association's (BA) GABF and World Beer Cup. That doesn't include 10 Barrel's 2024 clean sweep of the German-style Sour Ale category during the 2024 GABF competition. Before the interview, the Brewbound team runs through the latest headlines, including a big leadership shakeup at Molson Coors and Constellation Brands' struggles as its largest consumer base remains under pressure.

Ben Howe's brewing career reads more like that of a chef than a typical brewer—stints in Denmark, brewing jobs on both the East and West coasts, weeks spent interning at breweries that intrigued him—but one fateful visit to the Zehender brewery in Monchsambach opened his eyes to Franconian lager and inspired a nearly decade-long quest to understand the beer and its mechanisms of flavor. More recently at Otherlands (https://www.otherlandsbeer.com), he's pushed boundaries of accepted brewing dogma, mashing with pH levels far past any sensible range in an effort to build color and flavor—and the things that shouldn't work still obviously do work. In this episode, Howe discusses both his traditional methods and modern concessions, including: learning from Will Meyers and Megan Parisi at Cambridge Brewing capturing Franconian-ness in long-boiled lager beers old-style vs. new-style German lager brewing kräusening to carbonate rather than spunding before terminal never raising the temperature for a diacetyl rest while using ALDC to control precursors finding color with only pilsner malt hardening water for lager brewing with calcium carbonate, magnesium carbonate, and gypsum mashing above 5.8 pH maintaining atmospheric pressure for yeast during fermentation boiling large amounts of low-alpha hops for a long time to build flavor and texture And more. In our seemingly endless quest to find the best long-made IPA that America has to offer, we are a little all over the map on this one with a mix of Wisconsin and Western U.S. offerings to run through the blind scoresheet wringer. It's a study in contrasts, as each clear IPA brings a little something different to the table - and then one just blatantly steals the show. Also, we imagine if GABF allowed us to curate their experience areas, we recall the days of IBU bombs, Craig is born anew yet again for this episode, and we invent cheese jibbets (and SlimJim-bets) for when you need a snack from those Crocs. This year marks the 25th birthday of Simcoe, and when Russian River (https://www.russianriverbrewing.com/) cofounder Vinnie Cilurzo suggested recording an episode of the podcast in Yakima to celebrate it, we weren't going to say no. Rather than sit around a table, we took to the experimental hop rows at Perrault Farms (https://www.perraultfarms.com/) and recorded while walking the field. The result is a wide-ranging conversation that covers history, business, agriculture, creativity, pivotal craft beers, hop evolution, and more. In this episode, Cilurzo and Perrault discuss: how Simcoe was bred by pioneering hop breeder Chuck Zimmerman its establishment on three family farms at the time—Carpenter, Perrault, and Smith how Simcoe brought the families' kids back to the farms developing the Pliny the Elder recipe around this hop the evolution of Simcoe over the past quarter century virus-free Simcoe and its flavor and yield impacts the impact of pick date on Simcoe flavor and aroma Simcoe's relationship with Mosaic selecting Simcoe and processing it into modern flowable formats how Pliny the Elder and the new Simcoe 25 beer use Simcoe in new formats And more. Our favorite time of year approaches again, but we can't set off for Denver without doing a ridiculous amount of prep work and research. So to celebrate the oncoming Great American Beer Festival for 2025, we drink four GABF-adjacent beers while sharing our picks for what to drink from local breweries, our most dependable steady hands, the ever-exciting new-to-us names, and the familiar faces that are always worth a pour. Grab a pen and paper, because this episode is chocked full of almost a hundred damn solid recommendations (if we must say so ourselves.) At Craft Coast (https://craftcoast.co) in Oceanside and San Marcos, California, Blake Masoner is happy if you show up for tacos and stay for a beer. The fairly priced tacos are scratch-made, down to the tortillas themselves, packing loads of flavor into every bite. Fellow San Diego–area brewers refer to them as “The best tacos between here and Tijuana”—but the beer they brew here is anything but an afterthought. Eight medals in four years at the World Beer Cup and Great American Beer Festical—in competitive categories such as hazy pale ale, American IPA, and international pilsener—are evidence of the brewery's ambition on the quality side, and they've modified both classic and modern brewing techniques to serve their flavor and aroma goals. In this episode, Masoner discusses: abandoning a “no core beer” policy to keep customers happy brewing Mexican-style dark lager with dry yeast and vorlauf-only dark malts mitigating sulfur production with 34/70 yeast Australian-inspired XPA design without Southern Hemisphere hops using Mosaic at different times for different effects in West Coast IPA knockout hopping to find the true heart of new varieties pinpointing flavors through dry hopping building a team-wide winning mindset And more. Step into Episode 176 of On the Delo as Delo sits down with Andrew, Executive Director of the Arizona Craft Brewers Guild, to unpack what's really happening across Arizona beer—on the brewhouse floor, at the Capitol, and out in the community. From a 20-year restaurant career to head brewer roles at The Perch and Uncle Bear's, and ultimately joining the Guild in February 2022, Andrew lays out a no-spin view of the landscape and where the wins are coming from.If you care about healthy breweries, smarter laws, and stronger taprooms, this one delivers: the event engine that funds promotion, the practical policy changes (including a hard reduction in minimum production requirements), the real challenges operators face (tourism and top-line), and why non-alcoholic offerings matter for safety and inclusion—all capped with what to expect at Arizona Beer Week and the Guild's GABF presence.Chapter Guide (Timestamps): (0:18 - 3:31) Episode Intro & Origin Story — Restaurants → The Perch → Uncle Bear's → joining the Guild (Feb 2022) (3:31 - 4:41) From Brewhouse to Business — Event season (Arizona Strong Beer Fest, Beer Week, Baja) and the “promote & protect” mission (4:41 - 5:13) Naming Matters — Reframing “Arizona Strong Beer” to clarify the festival's scope (5:13 - 7:10) Guild Snapshot — Founded in 1998, ~100 breweries statewide; 67 current members and rolling sign-ups (7:10 - 10:46) Policy Wins — Minimum production cut from 5,000 → 1,000 gallons; relief for small/innovation sites (e.g., PV pilot, Bisbee example) (10:46 - 12:48) Modernizing Service — Growler rule updates and Arizona's pro–small business footing (13:51 - 16:48) Operator Reality — Hiring stabilizes, tourism dips; focus on top-line + cross-guild collaboration and “brewery-in-planning” value (23:30 - 27:12) Inclusive Options — Non-alcoholic beer is hard and capital-intensive; hop waters and elevated N/A choices (Hoplark shout-out) (27:22 - 30:45) Arizona Beer Week — Why it runs 10 days; Pink Boots arm-wrestling, Cicerone education, and festival audience trends (33:58 - 35:37) GABF Playbook — Arizona's booth with a tourism film—showcasing the state while championing AZ beer

What would be the first beers you put in the Craft Beer Hall of Fame? We've talked a good bit about the Craft Beer Hall of Fame since their early planning stages. They added their inaugural group of brewers not long ago and new they've welcome their first beers. Those had to be some tough decisions. The Great American Beer Fest is just around the corner and they've got some new things planned for 2025. There were some interesting changes last year as well. As we all know our beloved beverage is having tough times. The BA is doing amazing things to make GABF interesting to beer lovers and others. It's sure to be a good time.We learned of some crazy laws in Wisconsin that is seriously hurting the brewfest scene. Apparently, out of state brewers will now have to pay a huge fee to come in for festivals. Reports are anywhere from $1,000 - $1,300, which is a massive amount for a small brewery. At one event over 60 breweries have already canceled their participation. In other news... Fat Tire wants to give a Gen-Zer $100,000 to take a year off and chase their passions, Boston Beer Co. is closing a couple of taprooms, and a craft beer video game has a sequel coming. In Whitestown, Indiana, just outside Indianapolis, this small-town lager brewery has made big waves with multiple World Beer Cup golds for its märzen, Follow the Lederhosen—not to mention a WBC silver for its pale Skool House Bock, knockout scores (https://beerandbrewing.com/beer-reviews/?q=moontown&hPP=30&idx=dato_cbb_web_review_search&p=0) from Craft Beer & Brewing Magazine® judges, and five GABF medals for various lagers. However, Moontown's (https://www.moontownbeer.com) success is a story of working within the confines of their two-vessel system to find processes that produce the flavors they want. Step-mashing is a must, and their mashout decoction—while not a traditional one, by any means—gives them an extra nudge of flavor and attenuation. In this episode, director of brewing operations Cody Peczkowski talks about the deep influence of his experience brewing for the Gordon Biersch chain, and the how his approach to recipe design has developed in the ensuing years. Along the way, he touches on: focusing on premium ingredients for better beer step-mashing a hazy IPA adjusting the step-mash regimen for body or better attenuation using a mashout decoction process on their two-vessel brewhouse brewing two different märzens with different origin malts, including both German and American craft malts bunging rather than spunding tanks managing competition beers that are “too hoppy” bringing alcohol levels down in malt-forward lager taking a hop-forward approach to West Coast–style pils asking the question, “What would Gordon Biersch do?” And more. Third Eye Brewing Company, with locations in Sharonville and Hamilton on the north side of Cincinnati, have won numerous awards at the Great American Beer Festival, World Beer Cup, and many other beer competitions. Led by brewmaster Kelly Montgomery, they've medaled in styles as diverse as Scotch Ale, Pumpkin Beer, and Milk Stout, but they've had particular success with chocolate beers. As we get things going this week we find out Nate has been flexing his culinary muscles on some ice cream adventures. Naturally, we ask if he's made any with booze. He has not. He continues to be a source of disappointment.Seems like every week there's something new to blame on Gen Z. We've decided to embrace it. It's all Gen Z's fault - and they'll pay for this, one beer at a time.GABF announced some new beer styles for this year's competition and in interesting one-time category for a new hop. On the competition front there's also a new #1 in Africa, a unique and traditional style called umqombothi. Neat. We also found out Hulk Hogan's beer company is making a push to buy Hooter's, and they're apparently bidding against - Hooter's? Whatever happens it will have to get creative because, thanks to the 3-tier system, you can't own a brewery and a retailer. Strong brewing communities produce clusters of great breweries, and the Colorado brewing world, centered in Denver, is no different. Friendly competition drives innovation, exploration, and refinement as well as knowledgeable consumers with higher and higher expectations, and in this episode, we brought together three friends (each medal-winning brewers) for a conversation on their approach to West coast IPA. Brian Hutchinson of Cannonball Creek (http://www.cannonballcreekbrewing.com) has brought home a slew of medals in the pale ale space (11 total GABF and World Beer Cup medals between their pale ale and session IPA), and picked up a GABF gold medal last year for their New Zealand-style IPA. Jake Gardner of Westbound & Down (https://westboundanddown.com) has earned a handful of GABF and World Beer Cup medals for their West coast IPAs like Spirit of the West and Westbound Select. And Phil Joyce of Amalgam (https://www.amalgambrewing.com) most recently brought home gold for West coast IPA in the Colorado Brewers Cup, after placing fourth at the Alpha King Challenge last year. In this episode, the three move through a range of IPA brewing topics, including: designing IPA with clean flavors that are easy to linguistically identify decocting and step mashing WCIPA for higher attenuation, foam stability, and FAN uptake building a malt base in WCIPA with blends of Pilsner malt using flaked wheat in smaller percentages for mouthfeel fermenting with Chico yeast for dry and low-ester beers minimizing hop creep with ALDC, diacetyl-free yeast, and other yeast health tools driving faster and healthier fermentations for more vibrant hop character understand the impact of water on WCIPA integrating flavor and bitterness the impact of pH on hop expression selecting loud hops that punch hard And more. “If you're a brewer and you're not making things that you really want to make, or things you want to experiment with and learn more about, then what are you brewing for,” asks James Herrholz, Chief Creative Officer for Corporate Ladder Brewing (https://www.corporateladderbrewing.com) in Palmetto, Florida. While some may feel “forced” to brew crowd-pleasing adjunct-laden stouts, Herrholz signed on for the challenge, and approaches the style with zeal and a drive to make the very best. Over the past six years, he's seen incredible results from this dogged and open-minded focus—three GABF medals, including a gold in 2022, while the brewery has maintained its spot on Untappd as the highest-rated brewery in the state of Florida. In this episode, Herrholz maps out their approach to pastry stout (barrel-aged and not), and along the way he touches on: using three primary base recipes to adjust for sweetness, roast, and caramel depth building ranging malt bills with as many as 15 to 18 different malts using SRM as a proxy for bitterness when considering dark malt impact on recipes managing the impact of dextrose in adjunct ingredients splitting different malts between multiple mashes while using long boils to increase Maillard flavors promoting attenuation through oxygenation, over pitching, and staging sugar additions maximizing extraction through “spinning” while adding adjuncts in bags in brite tanks flavor and aroma variations in vanilla due to origin and crop year variations And more. In today's episode, we talk with Lucia Carrillo—founder and head brewer at Cervecería Itañeñe in Mexico City, a very small brewery that's big on flavor, often using ingredients from Mexican culinary traditions, or even endemic to the country—and her partner Rodrigo Romo, who also brews at Itañeñe and works at Tout Chocolat making craft chocolate bars and bon bons, pastries, and coffee at its cafes in the Mexico City area. Rodrigo and Lucia have worked together on beers and chocolates that use similar ingredients—including flavors and ingredients endemic to Mexican ecology or used in Mexican culinary traditions—as well as beers using chocolate or its ingredients, or chocolates using beer or its ingredients, to blur the lines between these worlds.I first tried one of Itañeñe's beers at the Great Mexican Beer Fiesta at Cervecería Colorado in Denver, several years ago. The one-day fest takes place during the Great American Beer Festival at the same time, and it's my favorite part of GABF week. Cervecería Colorado and Itañeñe had collaborated on a beer brewed with rosita de cacao, a flower unrelated to theobroma cacao, but sharing some cocoa-like flavors. This past fall I had the privilege of being a judge at Copa Cerveza Mexico, and finally got to meet Lucia and Rodrigo. Later in the trip, I walked to Tout's beautiful Hippodrome location and sat at an outdoor cafe table enjoying a flat white and several of their excellent bon bons.I had the chance to talk with Lucia and Rodrigo recently about their pursuit of unique flavors, their chocolate and beer collaborations, and what makes Mexican beer and chocolate unique and exciting. At the outset, I asked how they got involved in these worlds in the first place.Guests:Lucia Carrillo—Food engineer, beer judge, sommelier, sensory panel judge, and Itañeñe brewer with more than 50 beer medals.Rodrigo Romo—Itañeñe brewer, pastry chef, winner of the Sweet Arts competition, chocolatier, and winner of more than 30 beer medals. Over the past few years, Denver's River North Brewery (https://www.rivernorthbrewery.com) has collected accolades from top beer competitions around the world—four GABF medals, four World Beer Cup medals, four European Beer Star medals just to name a few—and beers like Father Time (https://beerandbrewing.com/review/river-north-brewery-father-time-1683141881) and Anniversary 11 (https://beerandbrewing.com/review/river-north-brewery-anniversary-11-stout-1683131307) have earned top scores from our blind panel. They most recently earned midsize brewery of the year honors at the inaugural Colorado Brewers Cup. While they brew a wide range of beers, including frequent medal winner Nightmare Fuel coffee stout, they're probably most well-known for the beers that push into the peaks of the ABV range—stouts, Belgian-style strong ales, and barleywines that regularly hit 15% and higher. In this episode, founder Matt Hess and head brewer Matt Malloy share their techniques for making beers that not only turn heads for the their sky-high numbers, but also remain drinkable and as balanced as such beers could be. From controlling fusel alcohols through careful fermentation management, to building layers of flavors through malt selection, they share insights garnered from ten years of pushing the envelope. In this episode, they touch on: using very high pitch rates and over-oxygenation to maintain healthy yeast employing dehusked malts to soften roast character in big stouts pushing yeast into an additional growth phase to increase cell count keeping osmotic pressure low and feeding fermentations selecting and adding coffee into stout managing the oxidative process in barrel aging And more. At its height, Pompano Beach's Odd Breed in Pompano Beach was one of the best-regarded breweries in Florida, winning four GABF medals over a span of three years, and shipping mixed-culture beers to fans around the world. However, real-estate market forces ultimately worked against the niche brewery, and founder and brewer Matt Manthe closed up shop in the summer of 2024. That's no reason not to talk brewing, however, and Manthe learned plenty over his years shepherding his mixed cultures from homebrew to commercial scale, changing and adapting processes along the way. While he's now brewing classic lager and ale styles in the mountains of Colorado—at Dillon Dam, about 70 miles west of Denver—mixed-culture beers still hold a strong place in his heart. In this episode, he discusses: building a mixed culture through homebrewing shifting from mixed-culture to Saccharomyces fermentation to control acid production choosing primary strains, from London Ale III to 34/70, to optimize flavor, manage acidity, and more boosting hops with specific flavors and aromas for fermentation precursors challenges with fruit processing and refermentation the importance of not letting barrels sit unfilled blending very different base beers to achieve a finished product that's greater than the sum of its parts And more. What makes a cider a cider? Explore the fruits and chaos-inspired ingredients behind ERIS' biggest hits in this cider science deep dive. Michelle Foik, co-owner of ERIS Brewery and Cider House, shares her journey to opening her historic establishment before delving into the art and science of cidering. She starts by discussing how her career took her from Goose Island Brewery and Revolution Brewing to opening the first female-owned brewery and cider house in Illinois in a historic Masonic temple. She also discusses the history of cider in Chicago and in the United States, the cultural revival of cider post-Prohibition, and how cider is actually made. After the beer break, Michelle delves into how Amburana barrels impart a variety of spice flavors into beverages, why beer brewers aren't allowed to make cider, and how ERIS combines ciders and beers to make unique snakebites. She also shares the incredible story behind their GABF award-winning hazy IPA Foiken Haze, the unique characteristics of their Pepper Jam cider, and their barrel-aged Malort cider. As a trained food scientist with 20 years of experience in the field, Eric Tennant entered the brewing world with a bit more background than most. And that background has served him well, as he considers both ingredients and processes required to achieve the beer flavors he envisions. Over the past few years, he's focused Benchtop (https://benchtopbrewing.com) around foeder-aged lagers, but the constraints of the small brewery have led to a number of innovative process solutions. The techniques that he applies are making award-winning beer, too—Benchtop just recently took home a silver medal in Zwickelbier or Kellerbier at GABF, and their barrel-aged barleywine, Old Wooden Ship, was one of Craft Beer & Brewing's 20 best beers of 2023. In this episode, Tennant discusses: crafting a hybrid approach to lager that's part Czech, and part German decocting in a brewhouse not designed for it polishing beer through lagering without head pressure in oak foeders increasing IBUs in lager recipes to offset the mellowing effect of foeder aging double batching with different recipes optimized for two different mash processes checking COAs and manipulating mashes to fit the malt protecting foam potential when wood aging brewing barrel-aged English barleywine And more.
