With this episode, I'm going to introduce you to a company that offers products with such intriguing flavors as Rose Hip, Chrysanthemum Honey, Ginger, and Cranberry . The company is Koval Distillery, and I had a marvelous conversation with our distinguished guest, Dr. Sonat Birnecker Hart, co-founder and President. Prior to opening KOVAL Distillery, one of the largest fully independent and woman-owned craft distilleries in the US, she spent over a decade as a full professor in both the United States and Germany. In 2008, she gave up tenure in hopes of a different quality of life; one that would afford an opportunity for her to work with her husband, give up commuting, and return to the city she loved: Chicago. I hope you enjoy this episode. After you've listened, we would love to hear your thoughts and comments, which you can post at https://www.exportstoriespodcast.com/ or on our Facebook or LinkedIn pages.

IntroductionI was surprised to hear in the course of the 118th episode that there were fewer than 45 distilleries in the US just a decade and a half ago when the founders of KOVAL Distillery sought to enter into business(!). In talking with one of the co-founders, Dr. Sonat Birnecker Hart, I was impressed to hear about how they created not only the first distillery in Chicago since the 19th century, but also about getting legislation passed to make distilleries legal in Chicago and Illinois. Dr. Birnecker Hart shares not only about starting up the award-winning and kosher-certified distillery KOVAL, but also about being consulted by hundreds of people about getting their distilleries off the ground.Biography of GuestDr. Birnecker Hart co-founded the internationally award-winning distillery, KOVAL. As its president, she has spearheaded product development, distribution, and marketing. She also co-founded Kothe Distilling Technologies, a distillery start-up consulting firm. Prior to her distilling experience, she received her doctorate from University of London with her dissertation on “History through Humor: The Evocation of the Viennese Coffeehouse Society in Friedrich Torberg's ‘Tante Jolesch' Books, with particular Reference to the Problems of Assimilation and Anti-Semitism” (WorldCat link), she has spent over a decade as a full professor of Jewish Studies in both the United States and Germany, holding the Walter Benjamin Chair of German Jewish Cultural History at Humboldt University in Berlin. In 2008, she gave up tenure to co-found KOVAL. Scholar and distiller Sonat Birnecker Hart of the Koval Distillery talks with EconTalk host Russ Roberts about her career move from academia to whiskey-making. She explains that the heart is the key to great flavor--when making whiskey, and when making the right choices in life.
Vowing to make organic spirits from scratch, Sonat Birnecker Hart and her husband, Robert Birnecker, left academic careers to establish KOVAL Distillery in Chicago in 2008. Today the distillery's products are available across the nation and in 55 export markets. As president, Birnecker Hart spearheads product development, distribution and marketing. She recently joined Jeff Cioletti for a wide-ranging conversation, which includes her thoughts on the benefits of exporting spirits and how starting up the distillery during the subprime mortgage crisis helped KOVAL navigate the pandemic. They also go beyond KOVAL's whiskey and gin to discuss liqueurs and brandy.

The global pandemic hit small business owners hard, most facing tough decisions on whether they would be able to stay open and, also, how to best help their local communities. What started as a cool little Chicago darling has grown to become a global distilling presence: Koval. President and cofounder Sonat Birnecker Hart started Koval with her husband Robert, opting to buy a still instead of a house. Sonat walks the team through what it takes to grow the little guy: a lot of effort, knowledge and care. The team tastes Koval Bourbon and rye, and Koval gin and cranberry gin. Sonat covers the range, from an insider's view into distilling whiskies the brandy way, to the magic behind Koval's award winning package designs. Oh, and what happened to the spelt whiskey. Plus, in this week's Q&A segment, what bourbon would Animal drink, if he were real (and not a muppet)?
