Award winning author of 12 cookbooks Rose Levy Beranbaum visits Google to discuss her hugely influential cookbook “The Cake Bible, 35th Anniversary Edition.” This updated edition contains recipes for both classic and innovative cakes, plus complementary adornments of all types, instructions for making stunning decorations, and flavor variations for every craving and occasion. The original “Cake Bible” is a guiding light in the world's baking literature, with Rose Levy Beranbaum's deep knowledge and respect for craft to be found on every page. It's for home and professional bakers who want to make glorious, technically perfect cakes and understand why the ingredients in cakes work the way they do. The book was hugely influential from the moment it first came out in 1988, selling hundreds of thousands of copies and going through sixty printings. It introduced the reverse creaming method, incorporating flour and butter first instead of butter and sugar. This makes mixing faster and easier, helps cakes rise more evenly, and results in a finer and more tender cake texture. And it's among the first American cookbooks to offer measurements in weights, highlighting the superiority of the metric system, which has become the gold standard in baking books. For thirty-five years, Rose has been tweaking and reworking her methods based on reader feedback and constant conversations with other bakers and food and equipment professionals. Rose's fans, professional and amateur alike, will love this perfect distillation of her decades of experience and the pure joy of creation. Visit http://youtube.com/TalksAtGoogle/ to watch the video.

Maybe you’ve been making macarons your whole life, could temper chocolate with your eyes closed, and have enough cake pans to fill a walk-in closet. But maybe, more realistically, you’re like the rest of us who love cake, have no idea what mousseline is, and are still fuzzy on the difference between cocoa and Dutch process cocoa. No matter which of these categories you fall into, Rose Levy Beranbaum’s books are written for you. Beranbaum’s books, like The Pie and Pastry Bible, The Cake Bible, and her newest, Rose’s Baking Basics, cover classic techniques and pastries with scrupulously detailed instructions. Nothing’s dumbed down, and everything is photographed. Anna talks to Beranbaum, along with her longtime collaborator and coauthor Woody Wolston, about how baking has changed over the decades. Hint: Egg yolks are getting smaller, and people are buying more kitchen scales.Later on the episode, Matt talks to author and artist Timothy Pakron about growing up in the South and the inspiration for his new book, Mississippi Vegan.
Do you remember the first cookbook you ever loved? Caity was enthralled by Rose Levy Berenbaum’s The Cake Bible when she was little and spent hours going through her gorgeous photos and awesome recipe names: Enchanted Forest, Strawberry Maria and Chocolate Chestnut Embrace. Years later when she was a teenager, Caity's sister gave her a copy of The Best Recipes in the World by Mark Bittman, which inspired to learn about world cuisines by cooking at home and later fueled her plans to travel the world. That’s the real magic of cookbooks. They can transform your home life, or take you on a trip a million miles away. October is National Cookbook month but we couldn’t wait to talk with a couple of our favorite authors. Rose Levy Beranbaum joins us in the HRN studio, and we talk to our own Sother Teague of The Speakeasy about writing his debut book on his iPhone. Then, we take a closer look at a cookbook scandal that happened last month, and Liza Hamm stopped by the studio to discuss the latest crop of cookbooks with our resident expert, Cathy Erway, host of Eat Your Words on Heritage Radio Network.
