Diets in their usual definition, "short term plan for weight loss," are typically extremely restrictive and not sustainable for long-term use. What I promote is 80/20 eating... 80% whole clean foods, 20% treats/indulgences. How this actually plays out in "real life" is that it means sometimes I stick to the cleaner foods- chicken salads, sweet potatoes, etc. and sometimes I have seconds of the brownie sundae. "I'd never heard of Smith Island, I'd always heard of Tangier Island. And when my kids were little, my husband said let's take the kids to Smith Island. And I was like, well, where's that? So he brought me here and I fell in love with the place," said Kathey Jones, owner and baker at the Smith Island Bakery. Kathey Jones grew up in Baltimore and always had a passion for baking. She didn't think she would venture out to this tiny island located in the Chesapeake Bay but it is now her home and her bakery is the popular tourist spot as the Maryland state cake is baked their everyday. "When I moved to the island, the women of the island were the hardest working bunch of women I've ever met and they taught me how to bake these cakes. My first two attempts were complete disasters, and I always bought them from one of the women. But once they showed me all the little tips and tricks and secrets that they knew it, it kind of became very easy for me with my baking experience already," said Kathey.Prior to Kathey taking over the facility she bakes in today, another company was baking Smith Island cakes there but they decided it was easier to bake and ship cakes on the mainland. When Kristan decided she wanted to go out to Smith Island she wanted to make sure she interviewed a baker who was baking her favorite cake on the island. "I opened it in hopes that I could create more jobs so that more people can move here full time and stay living here," said Kathey.Kathey ships out tons of cakes per week and it isn't the easiest job. She delivers the cakes to the mail boat and then the mail boat takes them to the post office to get shipped. Helen also joined us on the episode to read out the countdown, which we found out as we recorded so all reactions are genuine. I started Chick Boss Cake as a hobby at first and ran it out of my tiny apartment kitchen. Eventually, word spread and I realized I loved both making and eating desserts. Part of what makes us unique ties into our slogan “it's not about the cake”. While many of our customers will say we have the best cake in town, for us it's about the community we have and the opportunity to bring people together. The cake and desserts are just the way we create experiences that bring people together. I'm not formally trained in baking or business. I dropped out of high school at 16 and have self-educated along the way. It's been a lot of trial and error. But I have always infused a lot of my personality into the brand which gives us an authenticity that I believe has helped us attract the best customers and staff. That makes it easy for me to show up every day and be myself and attract like-minded people. Technology plays a huge role in the success of our business. We automate tasks, keep things organized, and make the customer experience as seamless as possible. No matter what business you are in, you should be leveraging technology. You don't have to be a tech expert either, you just have to start somewhere and grow from there. I'm a hands-on learner so I dove in and built our website myself on Shopify and added a little popup that shows when someone buys something because social proof is so important. Our use of technology is what saved our business during COVID. We have 3 stores today in the suburbs around Toronto and we're working on our 4th location. Our overall revenue is $1.3 million which I'm proud of because that is a lot of cake. The approach we use when opening new stores is we want to create fans in that market before we even open a location. We do that through our online store and delivery model so that by the time we open a store, we have long lines – because customers in the area have already been able to order online. That approach I believe has helped us be successful once we do open a new location. While I never had a formal education, I love learning. I read a lot of books, listen to tons of podcasts, go to business conferences, watch YouTube videos, and do anything I can to put myself in a position to learn from others. I emphasized doing what I love and then I go find the information on how to do it. If I can figure it out, anyone can do it – which is why on my podcast I will call people out when they start making excuses. Excuses aren't going to get you anywhere. If you find yourself getting stuck it's probably because you're making excuses. Tavel Bristol-Joseph is the Pastry Chef and Partner at Emmer & Rye, Hestia, Kalimotxo, Henbit, TLV and Canje in Austin, Texas. He began his culinary journey as a young boy, spending every Saturday afternoon baking cookies, cakes, and pies with his aunt. After moving to the United States from Guyana when he was 17 years old, Bristol-Joseph attended the New York Restaurant School. He then worked in a variety of restaurants in New York before moving to Tucson in 2006, where he joined Fox Restaurant Concepts. He worked within the restaurant group for two years before going to Zona 78 where he met and began working with Chef Kevin Fink. Fink and Bristol-Joseph decided to move to Austin to open Emmer & Rye in November 2015. Emmer & Rye has been included in Bon Appétit's “America's Best New Restaurants 2016” list, as well as named Austin American-Statesman's“2018 Best Restaurant in Austin.” In 2020, Bristol-Joseph opened Hestia with Fink which has been named “#1 Best New Restaurant in America” by Robb Report. Bristol-Joseph also received the StarChefs Rising Star Award in 2017 and was named one of FOOD & WINE Magazine's “Best New Chefs of 2020.” Bristol-Joseph is a proud father to teenaged twins and currently resides in Austin with his wife Brittany and his dog Gus Gus.
